MINI BBQ CHEDDAR MEATLOAVES
Mini BBQ Cheddar Meatloaves are flavored with melty cheddar cheese and sweet BBQ sauce. This tasty twist on classic meatloaf is a hit with my family!

Steps:
- Cut onion in half then each half into thin slices. Melt butter in a large skillet or pot over medium heat then add onion and a dash of salt. Cook, stirring every couple of minutes, until onions are golden brown and caramelized, about 20 minutes. Turn heat down if onions start to burn. Set aside to cool slightly - can be made ahead of time.
- Preheat oven to 425 degrees. In a large bowl combine ground beef, egg, Worcestershire sauce, 2 Tablespoons BBQ sauce, bread crumbs, salt, pepper, cheese cubes, and caramelized onions, then mix until just combined. Divide mixture into 4 equal-sized portions then form into loaves and place on a foil-lined, non-stick-sprayed baking sheet. Spread 1 Tablespoon BBQ sauce over each loaf then bake for 20 minutes, or until no longer pink in the center, and then serve.
MINI BARBECUE BACON-CHEDDAR MEATLOAVES
Steps:
- Preheat the oven to 425°F. Spray a large baking pan with cooking spray, set aside.
- In a medium-size mixing bowl, mix together the beef, bacon, 1/2 bottle chili sauce, buttermilk, Worcestershire sauce, onion, cheese, breadcrumbs, eggs, BBQ seasoning, mustard, seasoned salt and garlic. Mix until the ingredients are fully combined.
- Divide the mixture into 8 equal portions and form into oval loaves.
- In a separate bowl, mix together the remaining chili sauce with brown sugar, vinegar, mustard and BBQ seasoning to make the glaze.
- Spread 1/2 of the glaze onto the loaves before baking. (Reserved glaze to be used at the end of baking)
- Bake for 23-25 minutes. Drizzle with the remaining glaze in the last 5 minutes of baking.
- Rest for 5 minutes before serving.

- In a large bowl, whisk egg and milk. Stir in the cheese, oats, onion and salt. Crumble beef over mixture and mix well. Shape into 8 loaves; place in a greased 13x9-in. baking dish. - Whisk eggs and milk in large bowl until blended. Add all remaining ingredients except bacon; mix lightly. Shape into 6 (1-inch-thick) patties; wrap bacon slice around edge of each patty.
- Wrap individually in plastic wrap; place in freezer-weight resealable plastic bag. Seal bag. Freeze up to 3 months.
- Heat oven to 375ºF. Unwrap frozen patties; place on rimmed baking sheet sprayed with cooking spray. Bake 40 to 45 min. or until done (160ºF).

- Heat oven to 450°F. Spray 12 regular-size muffin cups with cooking spray.

GRILLED CHEESE AND BACON MINI MEATLOAVES

- Heat gas or charcoal grill for indirect cooking as directed by manufacturer.
- Meanwhile, in large bowl, mix all ingredients except bacon. On work surface, pat mixture into 7-inch square. Cut into 4 (3 1/2-inch) squares. Top each square with 2 half-slices bacon; attach with toothpicks.
- Carefully spray grill rack with cooking spray. Place patties on unheated side of two-burner gas grill or over drip pan on charcoal grill (medium heat). (If using one-burner gas grill, cook over low heat.) Cover grill; cook 20 to 25 minutes or until slightly pink in center.
- Using spatula, turn patties over. Cover grill; cook 5 to 8 minutes longer or until meat thermometer inserted in center of patties reads 160°F and bacon is crisp. Remove toothpicks before serving.
