1-1/2 cups chopped peeled tart apples
2 tablespoons plus 2 teaspoons sugar
2 tablespoons chopped walnuts
1 tablespoon all-purpose flour
1/4 teaspoon ground cinnamon
6 sheets phyllo dough (14 inches x 9 inches)
Butter-flavored cooking spray
Confectioners' sugar, optional

Steps:

  • In a small bowl, combine the apples, sugar, walnuts, flour and cinnamon. Set aside., Place one sheet of phyllo dough on a work surface (keep remaining dough covered with plastic wrap and a damp towel to prevent it from drying out). Spray with butter-flavored spray., Fold in half widthwise; spray again with butter-flavored spray. Spoon a scant 1/3 cup filling onto phyllo about 2 in. from a short side. Fold side and edges over filling and roll up. Place seam side down on a baking sheet coated with cooking spray. Repeat., With a sharp knife, cut diagonal slits in tops of strudels. Spray strudels with butter-flavored spray. Bake at 350° for 20-22 minutes or until golden brown. Sprinkle with confectioners' sugar if desired.

15 mini phyllo shells (1.9-ounce box)
1 tablespoon unsalted butter
2 sweet, crisp apples, such as Honeycrisp, Pink Lady or Jonagold, peeled and cut into 1/2-inch dice
1/2 teaspoon ground cinnamon
Pinch of nutmeg
Pinch of kosher salt
1 teaspoon lemon juice
2 tablespoons light brown sugar
2 teaspoons cornstarch
1 teaspoon vanilla extract
1/2 cup rolled oats
1/2 cup whole-wheat flour
1 tablespoon light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1/4 cup unsalted butter, melted
1 tablespoon honey
1/4 cup sliced almonds

Steps:

  • Preheat the oven to 350 degrees F. Place the phyllo shells on a baking sheet and bake until crisp, about 5 minutes. Remove from the oven (keep the oven on) and let cool.
  • For the filling: Meanwhile, melt the butter in a large skillet over medium heat. Add the apples, cinnamon, nutmeg, salt and lemon juice. Cook, stirring often, until the apples start to soften and release some juices, about 4 minutes. Add the sugar and continue to cook, stirring often, until the sugar has dissolved, about 2 minutes more.
  • Stir together the cornstarch and 2 tablespoons of water in a small bowl. Stir into the apple mixture and cook, stirring often, until the liquid is very thick, about 2 minutes more. Stir in the vanilla, remove from the heat and set aside.
  • For the granola crisp topping: Line a baking sheet with parchment paper. Stir together the oats, flour, sugar, cinnamon, salt, butter and honey and spread the mixture on the baking sheet, using your hands to form some small clumps. Bake until browned and crisp, about 10 minutes. Remove from the oven, stir in the almonds and let cool.
  • To assemble, add a heaping tablespoon of the filling to each phyllo shell, followed by a tablespoon of the topping. Serve warm or at room temperature.

2 large granny smith apples
1 tablespoon(s) light brown sugar
1/4 teaspoon(s) nutmeg
1/2 teaspoon(s) cinnamon
1 teaspoon(s) lemon zest
1 tablespoon(s) lemon juice
1/4 cup(s) chopped walnuts
4 - sheets phyllo dough, thawed

Steps:

  • Heat oven to 375. Place parchment paper on lg baking sheet. Melt butter in small saucepan over medium heat until golden. Pour butter into small bowl.
  • Peel and core apples. Chop into small cubes. In medium bowl, combine apples, brown sugar, nutmeg, cinnamon, lemon zest and lemon juice. Stir to mix. Spray a lg skillet w/ cooking spray. Place skillet over medium heat. Add apple mix to skillet and cook, stirring, for 5 mins.
  • Add walnuts and cook 1 min more. Place 1 sheet of phyllo dough on cutting board. Coat lightly w/ cooking spray. Spoon 1/2 cup of apple mix onto bottom edge of dough, leaving a 1"-border on all sides. Fold dough over twice to form a packet. Roll edges under to secure. Place on baking sheet and brush w/ browned butter. Repeat w/ remaining dough. Bake 6-8 mins, or until golden brown.
