CHEESY CHICKEN MINCE FRITTERS WITH BROCCOLI



Cheesy Chicken Mince Fritters with Broccoli image

Recipe video above. It's hard to believe these fritters made with chicken mince are BAKED not FRIED! With almost an entire head of broccoli in them, these are juicy, cheesy and so irresistible. This makes 15 fritters about 6 cm / 2.25" wide, 1cm / 2/5" thick. Trying making burgers or meatballs!

500 g / 1 lb chicken mince (ground chicken) (, or turkey or pork (Note 1))
1 garlic clove, (minced)
1 egg
¾ cup panko breadcrumbs
2 packed cups broccoli (, soft cooked & finely chopped (1 head)(Note 2))
¾ cup finely chopped shallots
1 1/2 - 2 cups shredded mozzarella ((or other cheese of choice))
3/4 tsp salt ((reduce to 1/2 tsp if using a flavoured cheese)(Note 3))
Black pepper
Oil spray
2/3 cup plain yoghurt
1/8 tsp EACH dried dill, parsley and chives
¼ tsp onion powder
½ garlic clove, minced
1 - 2 tsp extra virgin olive oil
Squeeze of lemon juice, (optional)

Steps:

  • Preheat oven to 200C/390F. Line a baking tray with baking paper (or spray with oil).
  • Place Fritter ingredients in a bowl, mix to combine.
  • Measure out about ¼ cup of mixture and pat into fritter shapes about 6 cm / 2.25" wide, 1cm / 2/5" thick (they shrink a bit and become thicker).
  • Place on tray. Spray the top (generously) with oil.
  • Bake for 15 minutes, flip, spray with oil again then bake for a further 8 - 10 minutes until golden on top. Serve immediately with Sauce.
  • Sauce: Mix ingredients together. Add salt and pepper to taste. Set aside for 20+ minutes.

3 tablespoons oil
5 Thai chiles, chopped
2 cloves garlic, chopped
1 cup ground chicken
2 tablespoons oyster sauce
1 teaspoon fish sauce
1 teaspoon light soy sauce
1 teaspoon dark mushroom soy sauce
1 teaspoon sugar
3 serrano chiles, sliced
Pinch ground black pepper
2 cups Thai holy basil leaves (can substitute Thai sweet basil or Italian basil)
Cooked rice, for serving
1 cup mixed thinly sliced green and red bell peppers

Steps:

  • Pour oil into a pan over medium heat. Stir-fry Thai chiles and garlic together in the oil until you smell the fragrance. Add the ground chicken and stir-fry until well done. Add the oyster sauce, fish sauce and soy sauces. Mix well, then add the sugar and a little water. Continue to stir-fry and lastly add serrano chiles, black pepper and the Thai basil. Plate the chicken on the side of cooked rice or over rice. Garnish with the bell peppers.

I made up this recipe in my diet days when I tried to eat healthy. It is quick, tasty and low fat. You can either serve on top of rice or wrap in a soft tortilla for a great low fat and filling meal.

1 lb ground chicken (you can use sliced boneless breasts, but I always use ground, DO NOT use ground chicken in the tube) or 1 lb ground turkey (you can use sliced boneless breasts, but I always use ground, DO NOT use ground chicken in the tube)
1 zucchini, sliced
1 green pepper, sliced
1 red pepper, sliced
1 onion, chopped
1 cup mushroom, sliced
1 tablespoon minced garlic
2 -3 cups chunky salsa (I use hot)
4 soft flour tortillas (optional)
1 teaspoon olive oil (optional)

Steps:

  • Slice all veggies.
  • Spray a non-stick skillet with cooking spray or optional olive oil.
  • Cook ground chicken until completely done, about 10 minutes.
  • Remove from pan and set aside.
  • Add onions and garlic to pan and sauté until translucent.
  • Add zucchini, mushrooms, red and green peppers.
  • Cover, stirring often until cooked.
  • Don't drain liquid.
  • Add cooked ground chicken and salsa to veggies.
  • Mix well.
  • Simmer about 10 minutes.
  • Serve wrapped in a soft flour tortilla or over rice.
  • DO NOT use ground chicken in the tube as it is dry and ruins the dish.
