Marc Murphy's shortbread cookies are made even more decadent with a layer of cookie butter and a dark chocolate topping. Finish each square with a sprinkle of salt.

1/2 teaspoon fine salt
1 1/2 cups sweetened condensed milk
1/2 cup light brown sugar (not packed)
3 tablespoons cookie butter, such as Biscoff or Speculoos
1 teaspoon fine salt
4 ounces dark chocolate, chopped
2 teaspoons vegetable oil
Flaky salt, such as fleur de sel
12 tablespoons unsalted butter, cut into 1/2-inch cubes, plus extra melted for coating the pan
2 cups all-purpose flour, plus extra for coating the pan
1/3 cup granulated sugar

Steps:

  • For the shortbread layer: Preheat the oven to 350 degrees F. Using a pastry brush, butter a 9-by-13-inch baking dish and coat with flour, tapping off excess.
  • Put the flour, sugar and salt in a food processor and pulse. Add the butter and pulse until the dough just comes together. Press the shortbread mixture into the prepared pan and bake until golden brown around the edges, about 20 minutes. Remove from the oven and let cool completely.
  • For the cookie butter layer: In a 5-quart saucepan over moderately-low heat, combine the sweetened condensed milk, brown sugar, cookie butter and salt. Slowly bring the mixture to a boil, stirring continuously. Continue stirring over the heat until the mixture becomes thick and amber in color, about 15 minutes. Pour the mixture over the cooked shortbread and spread evenly using an offset spatula. Cool to room temperature.
  • For the chocolate topping: In a bowl set over a saucepan of simmering water, melt the chocolate with the oil. Once the chocolate has melted, pour it over the cooled caramel layer. Cool at room temperature for about 10 minutes, and then put in the refrigerator to cool completely, allowing the chocolate to slightly harden but not too hard. Cut into 2-inch pieces. Garnish with flaky salt before serving.

1 cup butter
1 cup brown sugar
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
4 ounces hershey milk chocolate candy bars, melted
1 cup sugar
2 eggs
2 1/2 cups Quaker Oats (powdered in blender)
1/2 teaspoon salt
12 ounces chocolate chips
1 1/2 cups chopped nuts

Steps:

  • Cream together, butter, both sugars, eggs and vanilla.
  • In separate bowl, mix flour, powdered oats, salt, and baking powder.
  • Mix creamed, and dry ingredients, adding chocolate chips, melted chocolate bar, and nuts; mix well.
  • Scoop out small (golf ball size or smaller) amounts of dough on an ungreased cookie sheet, and bake at 350 degrees for 8 minutes or until browned.

1 cup butter
1/2 cup sugar
2 1/4 cups flour
1 teaspoon almond extract or 1 teaspoon cinnamon
1 (12 ounce) package chipits, semisweet minis divided
raspberry jam
2 tablespoons butter
2 tablespoons water

Steps:

  • Cream butter with sugar until light.
  • Blend flour almond extract and 1 cup Chipits, add to creamed butter mixture, blend well. Roll into 1-inch balls. Place on ungreased baking sheet. Make an indentation of a wooden spoon or thumb.
  • Bake at350F for 15-18 minutes or until golden brown on bottoms. Spoon jam into center of each cookie.
  • Combine remaining Chipits with butter and water. Melt over low heat, stirring constantly. Blend until smooth. Spoon over jam on each cookie.

Steps:

  • Preheat the oven to 180C/160C fan/gas 4.
  • Cream the butter and both sugars together. Add the eggs and vanilla essence, and beat well. Add the flour, oats, salt, baking powder and bicarbonate of soda and mix well. Finally, add the chocolate chips, grated chocolate and nuts and blend.
  • Roll the mixture into small balls. Place 10cm apart onto a baking tray. and cook for 10 minutes.
