Sweet Cornbread without Milk image

This dairy free sweet cornbread is made without milk, without butter, and without buttermilk. Still, it has a wonderful flavor and a subtle sweetness.

1 cup cornmeal (150 grams)
1 cup all-purpose flour (128 grams)
2/3 cup white sugar (150 grams)
1 tablespoon baking powder
1/2 teaspoon salt
1 cup water (235 milliliters)
2 egg, beaten
1/3 cup oil (80 milliliters)

Steps:

  • Preheat the oven to 400°F or 205°C.
  • Whisk together the cornmeal, flour, sugar, baking powder, and salt in a mixing bowl.
  • Add water, egg, and oil. Mix until well incorporated.
  • Using a baking spatula, pour into an 8x8 baking pan lined with parchment paper.
  • Bake for 15 to 20 minutes or until a toothpick inserted into the center comes out clean. Let cool before cutting.

1 cup all-purpose flour
1 cup cornmeal
1/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg
1 cup rice drink
2 tablespoons canola oil
2 tablespoons unsweetened applesauce

Steps:

  • In a small bowl, combine the first five ingredients. In another bowl, whisk the egg, rice drink, oil and applesauce. Stir into dry ingredients just until moistened. Transfer to a 9-in. square baking pan coated with cooking spray., Bake at 425° for 15-20 minutes or until a toothpick inserted in the center comes out clean. Serve warm.

This is my own variation of a great healthy recipe published by Dr. Dean Ornish. I love this with bean soups. The 7x9 pan fits perfectly in the toaster oven. A jar of applesauce goes bad quickly in my home, so I started buying the 6 packed individuals.

1 cup unbleached all-purpose flour
1 cup whole grain yellow cornmeal
2 teaspoons baking powder
1 cup vanilla soymilk
1/2 cup unsweetened applesauce
2 egg whites

Steps:

  • Preheat oven to 425 degrees.
  • Spray a 7 x 9 nonstick pan lightly with nonstick spray.
  • In a medium bowl, stir flour, cornmeal and baking powder together.
  • In a large bowl, whisk together milk, applesauce and egg whites.
  • Preheat the pan 1 minute, not to burn the spray.
  • Lightly stir all ingredients to a lumpy blend in the large bowl and pour into preheated pan.
  • Bake 20 minutes or until top is lightly browned.

1 cup milk
1 large egg
1 1/4 cups yellow, white or blue cornmeal
1 cup Gold Medal™ all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt

Steps:

  • Heat the oven to 400°F. Spray the bottom and sides of an 8-inch square pan or 9-inch round cake pan with the cooking spray.
  • In a 1-quart saucepan, heat the butter over low heat until melted.
  • In a large bowl, beat the melted butter, milk and egg with a fork or wire whisk until well mixed. Add the cornmeal, flour, sugar, baking powder and salt all at once; stir just until the flour is moistened (batter will be lumpy). Pour batter into the pan; use a rubber spatula to scrape batter from bowl. Spread batter evenly in pan and smooth top of batter.
  • Bake 20 to 25 minutes or until golden brown and a toothpick inserted in the center comes out clean. Serve warm.
