I've never been a big meatloaf fan but I like this recipe. My family raves about it! I think the onion, mushroom, cheese and bacon combination really makes it stand out from your ordinary meatloaf!

1 pound ground beef
1 (12 ounce) package bulk pork breakfast sausage
6 fresh mushrooms, chopped
1 red onion, chopped
2 tablespoons barbecue sauce
2 teaspoons Worcestershire sauce
1 egg
½ cup instant oatmeal
1 teaspoon garlic powder
¼ teaspoon ground black pepper
1 cup shredded Cheddar cheese
4 strips bacon

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Mix the ground beef, sausage, mushrooms, onion, barbecue sauce, Worcestershire sauce, egg, oatmeal, garlic powder, pepper, and Cheddar cheese together in a large bowl until evenly mixed. Form into a loaf and place in a 9x13-inch baking dish. Lie the bacon strips across the top of the meatloaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Number Of Ingredients 12

3 cups soft white bread cubes
1 large egg
2/3 cup milk
1 tablespoon mustard
1 1/2 teaspoons salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon dried basil leaves, crumbled
1/4 teaspoon dried thyme leaves, crumbles
1 onion, chopped
1/2 cup chopped celery, including leaves
1/4 cup chopped fresh parsley leaves
2 pounds ground beef

Steps:

  • Pre-heat oven to 350 degrees. Place bread cubes in a large bowl. Beat egg and milk together in a small bowl, then pour over bread cubes. Let stand until bread absorbs milk, about 15 minutes. Mash and stir mixture until bread is in very small chunks. Add mustard, salt, pepper, basil, thyme, onion, celery and parsley. Mix well. Add ground beef and mix well. Turn mixture into an 8 x 5-inch loaf pan. Place in oven and bake for 55 minutes. Let stand 5 minutes before slicing.;

3/4 cup uncooked oatmeal
1/2 cup reduced-sodium chicken broth
1/2 cup carrot, shredded
1/4 cup onion, diced
1 egg, beaten
3 tablespoons fresh parsley, minced
2 garlic cloves, minced
2 teaspoons Dijon mustard, musard
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
3/4 lb ground turkey breast
3/4 lb extra lean ground beef

Steps:

  • Combine everything except meat in large mixing bowl; mix to combine.
  • Add meat; mix lightly until vegetables are evenly distributed.
  • Spoon into lightly greased loaf pan; bake at 350 for 60-70 minute.
  • Let stand five minutes before cutting.

It is rare for me to come up with a recipe that is just too good not to write down. Usually, when I cook, I like to play around with the ingredients and so I rarely make something the same way twice. But this meatloaf was as close to perfect as I could imagine. I tried to be specific in my directions but there is no way to determine ahead of time how wet the mixture will be after adding the vegetables. How wet is too wet is hard to describe, but it is better to err on the side of moisture, I'd think.

2 tablespoons butter
¾ cup diced yellow onion
2 cloves garlic, minced
¾ cup diced green bell pepper
2 ½ pounds ground sirloin
1 cup seasoned bread crumbs
½ teaspoon salt
½ teaspoon freshly ground black pepper
1 egg, well beaten
½ cup oats
⅓ cup ketchup
1 tablespoon white sugar
1 tablespoon honey
⅛ teaspoon hot pepper sauce (such as Tabasco®)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 9x13-inch baking pan.
  • Melt butter in a saucepan over medium heat; saute onion and garlic until onion is translucent, 5 to 10 minutes. Add green bell pepper to onion mixture and saute until bell pepper is softened, about 3 more minutes.
  • Mix sirloin, bread crumbs, salt, and black pepper together in a large bowl with your hands; add vegetable mixture and loosely mix. Mix egg into sirloin mixture; add oats if mixture is too wet. Transfer sirloin mixture to the prepared baking pan and form into a loaf.
  • Bake in the preheated oven for 20 minutes. Whisk ketchup, sugar, honey, and hot sauce together in a bowl; brush over meat loaf. Continue baking until no longer pink in the center, about 40 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let stand for 10 minutes before slicing.

This is a recipe I made from scatch. I needed to use the ground Italian sausage I had in the ref. so I put my mind to work and this was the results. Hope you enjoy it as much as DH and I did.

1 lb ground Italian sausage
1 lb ground extra lean ground beef
8 ounces tomato sauce
1 1/2 teaspoons kosher salt
1/2 cup heavy whipping cream
2 tablespoons mccormick teriyaki sauce
1 cup breadcrumbs (made from sourdough bread)
1/4 cup durkee French fried onion rings, crumbled
1 egg, slightly beaten
1/4 cup onion, diced
1/4 cup green pepper, diced
1 teaspoon minced garlic
2 teaspoons butter
1 teaspoon Worcestershire sauce
1 teaspoon italian seasoning
1/2 teaspoon basil
1 teaspoon Accent seasoning
1 teaspoon ground black pepper

Steps:

  • Preheat oven 350'.
  • In a large bowl combine Italian sausage and hamburger.
  • In a small skillet add butter and saute garlic,onion and green pepper together til lightly brown.Add worcestershire sauce and simmer another minute.Add mixture to the bowl that the meat is inches.
  • Add kosher salt,tomato sauce,whipping cream,egg mix well.
  • Add breadcrumbs and crumbled durkee french fried onion rings,Italian seasoning,basil,Accent and black pepper.
  • Combine all together and place in a lightly greased casserole dish.
  • Bake for 1 hour.
  • NOTE: You may need to add more milk if its to dry while mixing together. Also more or less breadcrumbs, onion and peppers depending on your taste.
