QUICK MICROWAVE MEAT LOAF

- In a small bowl, combine the tomato sauce, brown sugar and mustard; set aside. In a large bowl, combine the egg, onion, cracker crumbs, salt, pepper and 3/4 cup of the sauce mixture. Crumble beef over mixture and mix well., Shape into a uniform round loaf in a greased microwave-safe 9-in. pie plate. Cover with waxed paper. Microwave on high for 15-17 minutes or until meat is no longer pink and a thermometer reads 160°, turning dish a quarter turn every 5 minutes. Drain; top with remaining sauce mixture. Let stand for 5 minutes before slicing.

- In a large bowl, combine the first five ingredients. Add seasonings; mix well. Crumble beef over mixture and mix well. Pat into a 9x5-in. microwave-safe dish. Combine the soy sauce and honey; spread over loaf. Cover and microwave on high for 18-1/2 minutes or until meat is no longer pink and a thermometer reads 160°, turning dish a quarter turn every 10 minutes; drain. Let stand 5 minutes before slicing.

- In a large mixing bowl, mix the eggs, minced onion and green pepper, garlic powder, cracker crumbs, salt, and black pepper; mix in the ground beef and half the tomato sauce mixture, stirring until the meat loaf is thoroughly combined. Place the meat mixture into a 2-quart microwave-safe baking dish. Spread the remaining tomato sauce mixture over the meat loaf.

This is a delicious recipe for meat loaf. Cooking it in a microwave cuts the cooking time in almost half as compared to baking it in an oven. It's delicious and juicy. The bacon at the bottom does a great job in absorbing the juices from the meat.

- Combine ketchup, oyster sauce, salt, and pepper in a small bowl and mix well.
- Combine beef, pork, panko, egg, onion, and minced garlic in a large bowl. Add the ketchup mixture and mix well.
- Cut carrot into quarters along its length, then into pieces the same length as the garlic scapes.
- Cover the bottom of a microwave-safe rectangular dish with bacon slices, overlapping as needed. Spread 1/2 of the meat mixture over the bacon. Arrange carrot and garlic scapes on top; spread remaining meat mixture over vegetables.
