Sweet and Spicy Garlic Kielbasa with Sauteed Herb Spaetzle image

This sweet and spicy garlic kielbasa is rich and smooth with a spicy pop for the tongue! The sauteed herb spaetzle balances the spice just perfectly!

3 cups all-purpose flour
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
1 ½ tablespoons garlic salt
1 tablespoon ground black pepper
4 eggs
5 cups water, divided
1 teaspoon salt
½ cup butter
¾ cup brown sugar
2 cloves garlic, minced, or more to taste
1 tablespoon cayenne pepper
2 (13 ounce) packages kielbasa sausage, sliced into bite-size pieces

Steps:

  • Mix flour, basil, parsley, garlic salt, and pepper together in a large bowl, and make a well in the center of the mixture.
  • Whisk eggs and 1 cup water together in a medium bowl. Pour into the well in the flour. Stir until well combined; spaetzle dough will be thick and sticky.
  • Bring remaining 4 cups water to a boil in a pot over high heat; add salt.
  • Meanwhile, place spaetzle dough onto a cutting board. Slice off tiny dollops of dough, about the size of a pretzel stick, using a sharp knife. Drop into boiling water and cook until they float to the top of the pot, 1 to 2 minutes. Transfer dollops to a bowl using a slotted spoon. Set aside.
  • Melt butter in a large frying pan over medium-high heat. Add brown sugar, garlic, and cayenne and stir until sugar is melted, about 1 minute. Add kielbasa and cooked spaetzle to butter mixture; stir over medium-high heat until kielbasa is warmed, 4 to 5 minutes.

2 tablespoons butter
1 onion, sliced
2 cloves garlic, minced
1 cup water
2 potatoes, sliced
1 cup sliced carrots
2 tablespoons beef bouillon granules
1 teaspoon white sugar
½ teaspoon caraway seeds
1 (14.5 ounce) can sauerkraut, drained
1 pound kielbasa sausage
2 teaspoons all-purpose flour
1 cup sour cream
salt and black pepper to taste

Steps:

  • Heat the butter in a large skillet with a lid over medium heat; cook and stir the onion and garlic until the onion is translucent, about 5 minutes. Stir in the water, potatoes, carrots, beef bouillon granules, sugar, and caraway seeds; bring to a boil. Reduce the heat to a simmer, and cook until the potatoes and carrots are tender, stirring occasionally, about 15 minutes.
  • Place the sauerkraut on top of the vegetables in a layer, and place the sausages onto the sauerkraut. Cover, and cook until the sausages are heated through, about 15 minutes.
  • Whisk the flour into the sour cream in a bowl, and stir into the sauerkraut mixture. Bring to a simmer to thicken the sour cream, sprinkle with salt and pepper, and serve hot.

1 (12 fluid ounce) can cola-flavored carbonated beverage
1 ½ cups apple juice
½ cup brown sugar, or to taste

Steps:

  • Place the apples, sauerkraut with juice, and smoked sausages into a slow cooker.
  • In a bowl, stir together the cola, apple juice, and brown sugar until the sugar dissolves. Pour the cola mixture into the slow cooker. Stir to combine, cook on High for 2 hours, then on Low for 6 to 8 hours.

¾ cup diced carrot
¾ cup brown sugar
⅔ cup chopped apple

1 pound fully cooked kielbasa, cut into 1-inch pieces

Steps:
