This easy Mexican Ground Turkey Meatloaf recipe needs just a few common ingredients. It's naturally low carb and gluten-free, and the whole family will love it!

2 pounds Ground turkey
3/4 cup Grated Parmesan cheese
1 4- ounce can Green chiles (drained)
3/4 cup of your favorite salsa Salsa
3 tablespoons taco seasoning
2 eggs
3 slices Pepper jack cheese

Steps:

  • Preheat the oven to 350 degrees F. Line a 9x5-inch loaf pan with foil.
  • Mix all the ingredients in a bowl, except the pepperjack. Do not overmix. (*use your hands for optimal mixing).
  • Transfer the mixture to the lined pan and round the top.
  • Bake for 45 minutes.
  • Top the meatloaf with pepperjack cheese slices.
  • Increase the oven temperature to 400 degrees F. Bake for 20 more minutes, or until internal temperature reaches 155 degrees F.
  • Tent the meatloaf with foil and rest on the counter for 10 minutes before slicing. (The internal temperature will continue to rise from residual heat.)

This is a great combination of Mexican flavors with light ingredients. This is a great make-ahead meal. The meatloaf can be assembled the night before and topped with half of the enchilada sauce, then covered and refrigerated overnight. Throw it in the oven the next day for a quick and easy meal.

1 pound lean ground turkey
1 pound ground chicken
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can whole kernel corn, drained and rinsed
½ (4 ounce) can fire-roasted diced green chiles
1 cup mild chunky salsa
1 (1 ounce) package dry taco seasoning mix
¾ cup plain dried breadcrumbs
3 egg whites
1 (28 ounce) can enchilada sauce, divided

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • In a large bowl, mix together the ground turkey, ground chicken, black beans, corn, green chiles, salsa, taco seasoning, bread crumbs, and egg whites until thoroughly combined.
  • Form the mixture into a loaf shape and place into the prepared baking dish.
  • Pour half the enchilada sauce over the meatloaf.
  • Bake in the preheated oven for 45 minutes.
  • Remove from oven and pour the remaining sauce over the loaf. Return to oven and cook until the meatloaf is no longer pink inside and the juices run clear, another 10 to 15 minutes. An instant-read meat thermometer inserted into the center of the meat loaf should read at least 160 degrees F (70 degrees C).
  • Slice and serve with pan sauce spooned over the slices.

2 slices white bread, torn into small pieces
1/3 cup 2% milk
1 pound lean ground turkey
1/2 pound fresh chorizo
1 medium sweet red pepper, finely chopped
1 small onion, finely chopped
1 jalapeno pepper, seeded and finely chopped
2 large eggs, lightly beaten
2 tablespoons minced fresh cilantro
2 garlic cloves, minced
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
2/3 cup salsa, divided
Additional minced fresh cilantro
Hot cooked Spanish rice

Steps:

  • Combine bread and milk in a large bowl; let stand until liquid is absorbed. Add next 14 ingredients and 1/3 cup salsa; mix lightly but thoroughly., On an 18x7-in. piece of heavy-duty foil, shape meat mixture into a 10x6-in. oval loaf. Lifting with foil, transfer to a 6-qt. oval slow cooker. Press ends of foil up sides of slow cooker., Cook, covered, on low 3-4 hours or until a thermometer reads 165°. Lifting with foil, drain fat into slow cooker before removing meat loaf to a platter; top with remaining salsa and sprinkle with cilantro. Let stand 10 minutes before slicing. Serve with rice.

1 pkg (20 oz each) lean ground turkey (93% lean)4
1/4 cup Egg Beaters® Original
1/3 cup dry unseasoned bread crumbs
1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained, liquid reserved
2 tablespoons (1/2 of 1.25-oz pkg) 30% less sodium taco seasoning mix
1/4 cup finely shredded Mexican blend cheese

Steps:
