3/4 cup milk
2 eggs, lightly beaten
1/2 cup dry bread crumbs
1/4 cup finely chopped onion
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon chili powder
1-1/2 pounds lean ground beef
1 jar (16 ounces) picante sauce

Steps:

  • In a large bowl, combine the first seven ingredients. Add beef and mix well. Pat into a greased 8x4-in. loaf pan. , Bake, uncovered, at 350° for 1 hour or a thermometer reaches 160°. Top with warm picante sauce.

2 tablespoons Worcestershire sauce
12 saltines, crushed
1 medium onion, finely chopped
6 garlic cloves, minced
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon cayenne pepper
2 pounds lean ground beef (90% lean)

Steps:

  • Cut three 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 3-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine 2 tablespoons ketchup, Worcestershire sauce, saltines, onion, garlic, paprika, salt, pepper and cayenne. Crumble beef over mixture and mix well. , Shape into a round loaf. Place in the center of the strips. 2 slices white bread, torn into small pieces
1/3 cup 2% milk
1 pound lean ground turkey
1/2 pound fresh chorizo
1 medium sweet red pepper, finely chopped
1 small onion, finely chopped
1 jalapeno pepper, seeded and finely chopped
2 large eggs, lightly beaten
2 tablespoons minced fresh cilantro
2 garlic cloves, minced
2 teaspoons chili powder
1 teaspoon salt

1/2 teaspoon dried oregano
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
2/3 cup salsa, divided

Steps:

  • Combine bread and milk in a large bowl; let stand until liquid is absorbed. Add next 14 ingredients and 1/3 cup salsa; mix lightly but thoroughly., On an 18x7-in. piece of heavy-duty foil, shape meat mixture into a 10x6-in. oval loaf. Lifting with foil, transfer to a 6-qt. oval slow cooker. Press ends of foil up sides of slow cooker., Cook, covered, on low 3-4 hours or until a thermometer reads 165°. Lifting with foil, drain fat into slow cooker before removing meat loaf to a platter; top with remaining salsa and sprinkle with cilantro. Let stand 10 minutes before slicing. Serve with rice.

1 tablespoon Worcestershire sauce

1 cup finely crushed tortilla chips or corn chips see savings
1 envelope onion soup mix (1/2 of a 2-oz. pkg.) see savings
3/4 cup bottled taco sauce see savings
2 eggs, lightly beaten (divided) see savings
1 8.8 ounce pouch cooked Spanish-style rice (such as Uncle Ben's Ready Rice) see savings
1 15 1/2 ounce can golden hominy, rinsed and drained see savings
1 14 1/2 ounce can diced tomatoes and green chiles, drained see savings
1 cup shredded pepper jack cheese (4 oz.) see savings
1 medium fresh Anaheim pepper, seeded and chopped (1/2 cup) see savings
1/4 cup chopped fresh cilantro
Tortilla or corn chips, sliced jalapeno pepper*, and/or fresh cilantro sprigs

Steps:

  • Preheat oven to 350 degrees F. Combine beef, crushed chips, soup mix, 1/2 cup of the taco sauce, one lightly beaten egg, and 1/2 tsp. black pepper. Press mixture into the bottom and up the sides of a 10-inch deep-dish pie plate.

2 eggs, beaten
1 Tbsp worcestershire sauce
1 tsp pepper
8 oz cream cheese, softened
4 oz can green chiles, chopped, drained
3/4 c salsa

Steps:

  • 1. Combine meat, oats, eggs, worcestershire sauce and pepper; mix well.
  • 2. On wax paper, press meat mixture into 20x10 1/2-inch rectangle.
  • 3. Combine cream cheese and chiles; mix well.
  • 4. Spread cream cheese mixture over meat mixture to within 1 inch of outer edge.
  • 5. Roll, jelly roll fashion, starting at narrow end.
  • 6. Place in 12x8 inch baking dish.

1 cup corn chips, crushed (I use low-salt)
1/3 cup taco sauce
2 tablespoons taco seasoning mix (I use low-salt)
1 egg, beaten
1/2 cup Mexican blend cheese, grated

Steps:

  • Mix all the ingredients together and place mixture in a loaf pan with a rack (to remove the excess of grease).
  • Cook in a pre-heated oven at 350ºF. for about 40-45 minutes until meat is well cooked from inside.
  • Serve with light sour cream and salsa on top, if you like.

1 red bell pepper, chopped
1 medium shallots, minced or 3 small
1/2 onions, vidalia, peeled, chopped
3 clove garlic, minced
1 Tbsp vegetable oil
1 lb ground beef (kobe beef)
1 lb italian sausage, hot
1 c blue corn tortillas, finely chopped
1 c mexican cheese blend, divided or lots of cheese
1 c green salsa
2 large egg
1 pkg taco seasoning mix
2 1/4 tsp pepper
16 dash(es) hot pepper sauce

Steps:

  • 1. Heat oven to 350°F. Cook bell pepper, shallots and garlic in oil in medium skillet over medium heat 6 minutes or until tender. Cool.
  • 2. Brake up Blue corn chips by placing a plastic bag then have your kids have fun
  • 3. Gently combine onion & bell pepper mixture, eggs and all remaining ingredients half of the cheese in large bowl. mix well
  • 4. cut bacon in half and add to bottom of pans
  • 5. Place in 8x4-inch loaf pan or use the 1 pound trays ; bake 55 to 60 minutes or until internal temperature reaches 160°F.
  • 6. Sprinkle with remaining 1/2 cup cheese during last 5 minutes. Let stand 10 minutes before slicing.
  • 7. Can also top with sour cream and avocado or a Guacamole just be creative. Server with re-fried beans.
