Steps:
- Preheat the oven to 350 degrees F.
- Add the butter, corn, onions, red peppers, garlic and 1 teaspoon of salt to a medium saucepot set over medium-high heat. Saute until the onions are translucent, 6 to 8 minutes. Add the cumin, chile powder, cayenne pepper and flour and cook, stirring frequently with a wooden spoon, to make a roux, 3 to 4 minutes. Pour in the cold milk in a steady stream, stirring vigorously until the mixture is smooth. Cook over medium heat, stirring often, until starting to thicken, 8 to 10 minutes. Reduce the heat to medium-low and stir in the cheddar and Monterey Jack. Cook until the sauce is smooth and creamy, 4 to 5 minutes. Add the scallions, pepper and rigatoni and mix well to combine.
- Pour the into a 9-by-13-inch glass baking dish. Sprinkle the panko evenly over the top and cover with foil. Bake for 20 minutes, then uncover and bake for another 10 to 15 minutes, or until the crust is golden brown and the cheese is bubbling. Remove to a cooling rack and let rest for 8 to 10 minutes.
- Garnish with the cotija, jalapeno and cilantro. Serve immediately.

- SPRAY crockpot with cooking spray.
- DUMP pasta, then all other ingredients (except garnishes) in your crockpot.
- COOK ON HIGH for at least 45 minutes without disturbing; from that point on, stir every half hour or so, checking to see if the pasta is done (based on the reviews it can take anywhere between 45 minutes and two hours). When your pasta is cooked, proceed to Step #4.
- SERVE -- topped generously with green onions and crushed tortilla chips! Be sure to turn off the crockpot or switch to the warm setting, so the pasta doesn't get mushy.

Add celery seeds and cayenne pepper. Season sauce with salt and pepper. Beat yolks in large bowl to blend. Gradually whisk in sauce. Add macaroni and stir to blend. Butter 4 quart baking dish. - Preheat the oven to 400ºF.
- Bring a large pot of salted water to a boil. Add the pasta and cook until it is al dente.
- In butter, saute the peppers, onion and garlic and cook until veggies are softened and fragrant.
- Add chicken to pan.

- 1. Boil rotini pasta til aldente and set aside.
- 2. Melt butter in pan. Add milk to pan then diced velvetta and philly cream cheese and yogurt to pan. Stir constantly til melted and blended. Mix this with the pasta you have set aside then set this aside.
- 3. For the meat mixture. You want to put the olive oil in the pan and add the jalapenos, garlic and plum tomatoes and cook til tender. Then add all of the seasoning and deboned meat. Cook down for about 15 min to blend flavors.
- 4. When the meat mixture is finished put it in the bottom of a 9 x 13 dish to layer the bottom. Top with mac n' cheese mixture. Then spread the shredded cheese on top and stick in oven til cheese is melted on top. About 15-20 minutes

- 1. Bring a large pot of salted water to a boil and add noodles. Cook according to pkg. instructions until just al dente. Remove and drain noodles - then set aside.
- 2. Heat a 10-inch cast iron skillet over medium heat until hot. Add the butter, onion, garlic, cumin and coriander and cook over medium-low heat stirring frequently until the onion is softened.
- 3. Preheat oven to 350 degrees F. Add flour to onions and stir continuously for 3 minutes. Whisk in the milk and bring to a boil. Reduce heat and simmer for 2 minutes. Add the chipotle and the drained tomatoes and cool mixture slightly. Add the cheeses (cheddar and jack) and stir until melted. Stir in the noodles.
- 4. In a bowl, combine crushed tortilla chips with the cotija cheese and sprinkle on top of the macaroni mixture. Bake until the dish is hot and top is golden brown, 25-30 minutes. Remove from oven and let stand 10 minutes before serving.

- Preheat oven to 350 degrees F. Lightly grease 3-quart rectangular baking dish; set aside. Cook pasta according to package directions. Drain; set aside. Meanwhile, in large skillet cook sausage and onion until meat is browned and onion is tender. Drain fat, Return sausage and onion to skillet. Stir in green salsa. In prepared baking dish layer half of the cooked pasta, half the sausage mixture, and half the cheese. Repeat layers. Bake, uncovered, for 35 minutes or until bubbly. Let stand 10 minutes. Top with tomato, jalapeno, and cilantro. If desired, serve with additional salsa. Makes 12 servings.
