MEXICAN PORK CHILI (CHILE VERDE)

1 ½ pounds fresh tomatillos, or more to taste, husks removed
3 serrano peppers
4 cloves garlic, peeled
1 tablespoon olive oil
3 tablespoons lard
3 pounds pork shoulder, or more to taste, trimmed and cut into 1 1/2-inch cubes
2 teaspoons garlic salt
½ teaspoon ground black pepper
1 medium yellow onion, coarsely chopped
1 green bell pepper, coarsely chopped
½ cup red wine
1 cup low-sodium chicken stock
⅓ cup chopped fresh cilantro
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine tomatillos, serrano peppers, and garlic in a bowl. Drizzle with olive oil and toss to coat. Transfer to a baking sheet.
  • Place in the preheated oven and roast until tender, about 30 minutes. Remove vegetables from oven, cool slightly, and transfer to the bowl of a food processor. Puree until smooth. Reduce oven temperature to 275 degrees F (135 degrees C).
  • While vegetables are roasting, heat lard in a Dutch oven or heavy oven-safe pot over medium-high heat. Sprinkle pork with garlic salt and pepper and add to the pot in batches. Cook each batch until browned, about 7 minutes, removing to a plate with a slotted spoon. Drain and discard all but 2 tablespoons pan drippings.
  • Add onion and bell pepper to the pot. Saute, stirring occasionally, until onion has softened and turned translucent, about 5 minutes. Pour wine into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Stir in browned pork, tomatillo puree, chicken stock, cilantro, oregano, cumin, and salt.
  • Cover and cook in the oven until pork is tender, 3 1/2 to 4 hours. Allow to stand for 15 minutes, covered, before serving.

1 tablespoon canola oil
1 medium yellow onion, chopped
3 cloves garlic, minced
2 pounds lean ground beef, preferably organic
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried Mexican oregano
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper
1 tablespoon Mexican chile paste (homemade or store-bought)
Two 15-ounce cans diced tomatoes, in juice
One 15-ounce can no-salt-added kidney beans, rinsed and drained
One 15-ounce can no-salt-added pinto beans, rinsed and drained
1/2 cup enchilada sauce
3 tablespoons unsweetened chopped chocolate
Crema
Cotija cheese, crumbled
Tortilla strips
Chopped cilantro
Lime wedges

Steps:

  • Heat the oil in a large pot over medium heat. Add the onions and cook, stirring occasionally, until translucent, about 5 minutes. Stir in the garlic and cook, stirring occasionally, until slightly golden, 2 to 3 minutes. Add the beef, breaking it up with a wooden spoon, and cook for about 5 minutes. Add the chili powder, cumin, oregano, salt, cayenne and chile paste and stir until the beef is coated with the seasonings. Add the tomatoes with their juices, beans, enchilada sauce and chocolate and stir. Reduce the heat, cover and simmer until thickened, stirring occasionally, about 30 minutes.
  • Garnish the chili with your desired toppings and serve.

I started with a copycat recipe, added more of my favorite (garlic salt) ingredient, and then made this for my son, as well as for my co-worker, who had just had a baby. Everyone's comment: "Wow! That was really tender, tasty chicken!" (I didn't tell them how incredibly easy it was!) I served it with my Mexican rice (another favorite)and black beans.

4 boneless skinless chicken breasts
1 cup margarita mix
1/4 cup tequila
1 tablespoon minced garlic
garlic salt, to taste
pepper, to taste
1 cup white rice
2 cups chicken broth
1/4 cup salsa
cumin, to taste
garlic salt, to taste
1 tablespoon vegetable oil

Steps:

  • Marinate chicken in margarita mix, tequila, and garlic in refrigerator for several hours, or overnight. (I soaked it overnight, and it was really flavorful.).
  • Remove chicken from marinade, and sprinkle with garlic salt and pepper.
  • Preheat George Foreman or gas grill. Cook chicken just until cooked through (just until juices run clear-don't overcook, or it won't be as juicy).
  • Serve with Mexican rice and black beans.
  • Mexican Rice:.
  • Cook rice in 1 tablespoon oil, until lightly browned.
  • Add chicken broth, salsa, cumin, and garlic salt; cover pan and simmer for about 25 minutes, or until rice is tender.

1 pound cooked, diced turkey breast

Chili-flavored tortilla chips or Fritos, for topping

Steps:

  • Heat the oil in a Dutch oven over medium-high heat. Brown the chorizo, crumbling the meat as it cooks. Add the garlic, onions and peppers and cook until softened, 5 minutes. Stir in the coriander, cumin and tomatoes, followed by the turkey, stock, chipotles, cornmeal and honey. Simmer over low heat to thicken, 45 minutes. 1 tablespoon olive oil
10 cups water
2 cups chicken stock
1/2 cup tomato sauce
1 potato, peeled & chopped
1 small onion, diced
1 cup frozen corn
1/2 carrot, sliced
1 stalk celery, diced
1 cup canned diced tomato
1 (15 ounce) can red kidney beans, plus liquid
1/4 cup diced canned pimiento
1 jalapeno, diced
1/4 cup chopped Italian parsley
1 garlic clove, minced
1 1/2 teaspoons chili powder
1 teaspoon cumin
1/4 teaspoon salt
1 dash cayenne pepper
1 dash basil
1 dash oregano
sour cream
1 pinch chopped Italian parsley
grated cheddar cheese (optional)

Steps:

  • Sauté the chicken breasts in the olive oil in a large pot over medium/high heat.
  • Cook the chicken on both side until done-- about 7-10 minutes per side.
  • Cool the chicken until it can be handled.
  • Do not rinse the pot.
  • Shred the chicken by hand into bite-sizes pieces and place the pieces back into the pot.
  • Add the remaining ingredients to the pot and turn heat to high.
  • Bring mixture to a boil, then reduce heat and simmer for 4-5 hours.
  • Stir mixture often so that many of the chicken pieces shred into much smaller bits.
  • Chili should reduce substantially to thicken and darken (less orange, more brown) when done.
  • Combine some chopped Italian parsley with sour cream and serve it on the side for topping the chili, if desired.

1 Tbsp dried lime zest, finely chopped
2 tsp chili powder, hot or mild, your choice
1 tsp smoked paprika
1/2 tsp dehydrated onions finely ground
1 Tbsp ground cumin
1/4 tsp garlic powder
1/4 tsp ground coriander
1/4 tsp salt, kosher variety
1/4 tsp coconut sugar
1/8 tsp cayenne pepper

Steps:

  • 1. PREP/PREPARE
  • 2. To increase the heat use a hotter chili powder, and more cayenne. To decrease the heat reduce the chili powder and cayenne, and increase the paprika.
  • 3. Save those spice bottles. I make a lot of my own spice combinations, but I buy a lot of individual spices. When a bottle goes empty, I remove the label, and toss it into the dish washer. Then, when I make my "special" spice mixtures, I slap my own label on, and stick in in the cupboard.
  • 4. Gather your ingredients (mise en place).
  • 5. Add all the ingredients together in a jar, and keep in a cool, dry place, away from sunlight.
  • 6. PLATE/PRESENT
  • 7. I sprinkle it on beef, pork, and fish, before grilling, or cooking. It is awesome sprinkled on a good juicy burger, or even sprinkled over fresh fruit. Enjoy.

2 medium onions, chopped
8 garlic cloves
3 tablespoons vegetable oil
4 1/2 pounds boneless pork shoulder, trimmed of excess fat and cut into 1-inch pieces
5 pounds frozen roasted New Mexican green chilies*, thawed, peeled if necessary, seeded, and chopped (wear rubber gloves)
7 cups water
2 teaspoons salt
1 1/2 pounds boiling potatoes

Steps:

  • In a large heavy kettle cook the onions and 6 of the garlic cloves, minced, in the oil over moderate heat, stirring, until the onions are softened, add the pork, the chilies, the water, and the salt, and simmer the mixture, uncovered, adding more water if necessary to keep the pork barely covered, for 1 1/2 hours. Stir in the potatoes, peeled and cut into 1-inch pieces, making sure they are covered by the cooking liquid, and simmer the mixture, stirring occasionally, for 30 minutes, or until the pork and the potatoes are tender. Stir in the remaining 2 garlic cloves, minced, and salt to taste and simmer the stew for 5 minutes. The stew may be frozen or made 3 days in advance, cooled, uncovered, and kept covered and chilled.

MEXICAN CHILI CHEESE DIP (TEX-MEX)

This delicious, yet very easy dip has been a hit at every party I've prepared it for. It's so good, we'll make a batch and have it for dinner every so often. People have told me it's addictive. I rarely have to bring any home after a party. I've been making this dip for many years, so I'm not sure where it came from. When making it for my family, I use refried beans with jalapenos, hot McCormick Taco Seasoning mix, and velveta cheese with peppers. This combines for quite a kick. For guests or a party, I use reqular refried beans and velveta, but the hot taco seasoning is a must. For Christmas parties, I use the red and green tortilla chips.

1 (15 ounce) can hot hormel chili with beans
1 (16 ounce) can refried beans
1 lb ground beef
16 ounces Velveeta cheese
10 ounces extra-sharp cheddar cheese
1 (1 ounce) package taco seasoning mix
2 (16 ounce) bags corn tortilla chips

Steps:

  • In a deep pan, brown ground beef, drain and return to the pan. Add Taco seasoning and prepare according to seasoning instructions.
  • Add Hormel Chili and refried beans.
  • When hot, add the velveta. It helps to cut it up into chunks. Once melted, add the grated cheese. Once all hot and melted together, transfer to a crock pot. Serve with chips and stand back. I write the recipe on recipe cards and take them to the party with me, because I know I'm going to be asked for the recipe.

This is my version of chili Mac. I haven't made this dish in a long long time. I had all of the ingredients in my home to make this. I thought I would make it, and share with you all. I hope you all enjoy it.

1 - 1 1/2 lb of cooked hamburger
1 large sweet onion or other
1 red bell pepper
1 green bell pepper
28 oz can of chopped tomatoes
7 oz mild salsa like chi chi's or tostito's
1 c uncooked macaroni
1 15 ounce can of black beans rinsed and drained
1 can(s) 11 ounce can crisp sweet corn such as green giant or dellmonte
4 oz can of green chilies
2 tsp chili powder
1 tsp dried cilantro leaves optional
1 tsp parsley
1- 1 1/2 tsp garlic salt ( salt according to your taste )
1/2 tsp cayenne pepper
1/2 tsp ground cumin
1/2 tsp ground black pepper
2 Tbsp corn starch
8-16 oz shredded mexican cheese

Steps:

  • 1. Fry the hamburger drain and pour into large stock pot. In the same fry pan add 1 to 2 tablespoons of oil of your choice. Fry the peppers and onions together. Add the peppers and onions to pot.
  • 2. Add the rest of the ingredients except for the cornstarch, macaroni and cheese.
  • 3. Bring ingredients to a boil on stove while stirring well. Remove from heat. Mix in Uncooked macaroni. sprinkle with cornstarch and stir to combine well.
  • 4. Pour into a 2 1/2 quarts or larger casserole dish. you may also use a 9 x 13" baking pan and cover with foil. Bake about 20-30 minutes, or until macaroni is tender. Bake at 350° covered. Uncover casserole. Sprinkle with Mexican cheese. Bake casserole in oven until cheese melts. Remove from oven and serve. This taste even better the second day after it sits. If you wish you can bake this ahead of time and reheat. If you are planning on reheating this. Do not top with cheese until you reheated and let cheese melt.

I modified a bean soup recipe and came up with this wonderful chili. I make it mild, as that's how my family likes it, then I just add Tabasco sauce to mine. A fun alternative to traditional chili!

1 lb ground chuck
1 lb ground pork
1/2 cup minced flat leaf parsley
1 large white onion, grated
3 garlic cloves, minced
1 teaspoon dried Mexican oregano (or to taste)
1/2 teaspoon ground cumin (or to taste)
3 eggs, beaten
3 slices coarse white bread, crust removed and soaked in 1/3 cup milk
salt & freshly ground black pepper, to taste
6 large ripe tomatoes or 1 (28 ounce) can fire roasted whole tomatoes, drained
4 garlic cloves, peeled
1 medium onion, peeled, quartered
2 1/2 cups chicken broth
1 -3 canned chipotle chillies in adobo seasoning, to taste
1 teaspoon ground cinnamon (or 2-3-inch piece Mexican cinnamon bark)
2 teaspoons coarse salt (kosher, or to taste)
1 teaspoon fresh ground black pepper (or to taste)
1/2 cup olive oil or 1/2 cup vegetable oil
1 sprig mint or 1 pinch ground dried mint

Steps:

  • For the meatballs, combine all meatball ingredients in a large bowl, mix with hands. Refrigerate and cover for 1 hour.
  • Meanwhile for the sauce, if using fresh tomatoes, place on a cooking sheet and broil, turning once or twice until the skins bister and blacken, about 10 minutes. Peel the skin off tomatoes and place the peeled (or canned tomatoes) in to a blender or food processor.
  • Put the garlic and onion into a hot, dry skillet and cook, turning occasionally, over medium heat, until the garlic is lightly browned and the onion is lightly scorched,.
  • Add to the blender along with 1/2 cup broth, chipotles to taste (start with 1), cinnamon, salt and pepper. Blend until smooth, Taste, and add more chipotles if desired.
  • Heat oil in a large , heavy and deep skillet over medium heat until quite hot but not smoking. Add the tomato mixture and "fry" until it thikckens (it will splatter), about 10 minutes.
  • Stir in the remaning 2 cups broth and heat to a boil. Stir in mint. Taste again, adjust salt and pepper, and add some adobo from the canned chilies if not spicy enough.

I was fooling around with basic staples that I have in the house and on a whim, threw this together. It was a HIT! Not quite sure what to name it, but it reminds me of a chili of sort, so I named it Mexican Chicken Chili.

5 boneless skinless chicken breasts (can be frozen)
1 (1 1/4 ounce) packet chicken taco seasoning mix
1 (32 ounce) can petite diced tomatoes
1 (15 ounce) can dark red kidney beans, undrained
1 (15 ounce) can garbanzo beans, undrained
1 (15 ounce) can corn (or use frozen)
1/4 cup butter (sliced)
1 tablespoon salt
diced raw white onion (optional)
1 lime, juice of
sour cream (optional)
tortilla chips (optional)

Steps:

  • Place chicken breasts in bottom of crock pot.
  • Top with Seasoning Mix, Diced Tomatoes, Kidney Beans, Garbanzo beans and Corn.
  • Slice butter and arrange on top of mixture. Sprinkle salt on top.
  • Cook on High 6 hours.
  • When done, use two forks and shred the chicken in the crock pot.
  • While your shredding, put on a pot of white rice. I usually cook 2 cups of rice to go with mixture. Or, you can serve in warm tortillas, eat like a soup or use tortilla "scoop" chips to eat.
  • Put rice in bowl and serve chicken mixture on top of the rice. Optional and VERY YUMMY toppings would be chopped white onion, sour cream, crumbled tortilla chips and then a nice squeeze of fresh lime juice. Fantastic when served with everything!

3 pounds boneless pork shoulder
Kosher salt and freshly ground black pepper
1 tablespoon toasted fennel seeds, ground
3 tablespoons ground cumin
Extra-virgin olive oil
15 whole tomatillos, husked
3 poblanos
2 white onions, quartered
4 garlic cloves, peeled
1 bay leaf
2 limes, halved
1 big bunch fresh cilantro
1 quart low-sodium chicken stock
1 cup masa harina, to tighten it up
Crispy fried tortilla strips, fresh corn tortillas cut into strips and deep fried in vegetable oil
Mexican crema, store-bought with lime zest
Shaved radishes, radishes shaved vertically on a mandoline
Crumbled queso fresco
2 limes, each cut into 8 wedges

Steps:

  • Preheat oven to 325 degrees F.
  • Season the pork shoulder with salt, pepper, fennel and cumin. Take a large roasting dish and place over medium-high heat. Add a 3-count of olive oil and sear pork shoulder all over until golden brown on the outside, 3 to 4 minutes per side. Add vegetables, spreading out tomatillos, poblanos, onion, garlic and bay leaf around the seared pork shoulder. Drizzle with olive oil, squeeze lime juice all over and season with salt and pepper. Cover the whole tray with aluminum foil and roast in the oven for 2 to 2 1/2 hours until the pork is falling apart. Remove from oven, set the pork aside and pull apart. Rake all the other ingredients into a blender (a bit at a time) with the bunch of fresh cilantro and process until smooth. Pour into a large Dutch oven. Set over medium heat and add chicken stock. Bring to a simmer and whisk in masa harina to thicken the sauce up. Fold in shredded pork shoulder and season with salt and pepper to finish. Serve with Chili bar toppings.

1 vanilla bean (or 1 teaspoon vanilla extract)
3/4 cup sugar
1 teaspoon ground cinnamon
1 heaping tablespoon instant espresso
Pinch salt
2 1/2 ounces bittersweet chocolate, the best quality possible, grated
2 cups whole milk
Vanilla ice cream
Chili powder

Steps:

  • Bring water to a boil in a saucepan. Split the vanilla bean and add to the boiling water. Add sugar, cinnamon, espresso, and a pinch of salt. Simmer for 1 minute and add the bittersweet chocolate. Whisk until it gets thick. Add milk and simmer 1 minute. Serve immediately with a dollop of vanilla ice cream and a sprinkling of chili powder on top.
  • You may make this ahead and reheat. Make sure to either whisk it or blend it in a blender to make it light and foamy before serving. (The classic Mexican chocolate was whisked with a special wooden tool called a 'molinillo'.)

4 cloves minced garlic
1 (4 ounce) can diced green chili peppers
1 1/2 teaspoons cumin
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper (use less if you think it might be too spicy)
2 (18 1/8 ounce) cans chicken broth
3 cups chopped cooked chicken breasts
3 (15 ounce) cans white beans
1 (11 ounce) can corn
1 (15 ounce) can diced tomatoes
shredded monterey jack cheese, garnish

Steps:

  • Heat the oil in a large saucepan over medium-low heat.
  • Slowly cook and stir the onion until tender.
  • Mix in the garlic, green chili peppers, oregano, cumin, and cayenne.
  • Continue to cook and stir the mixture until tender, about 3 minutes.
  • Mix in the chicken broth, chicken, beans, corn, and tomatoes.
  • Bring to a boil then reduce heat and let simmer 20 minutes.
  • Sprinkle cheese on each serving and enjoy!
