CHICKEN AND BOW TIE PASTA
Easy and delicious chicken and bow-tie pasta with a white cream sauce.

Steps:
- Place chicken in a saucepan, and add water to cover. Boil 20 minutes. Allow to cool, then pull meat into shreds.
- Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain.
- In a large skillet over medium-high heat, combine chicken broth, red pepper, garlic, broccoli, salt and pepper. Cover, and simmer for 8 to 10 minutes, until broccoli is crisp-tender. Stir in cream cheese until smooth. Mix in chicken and pasta until evenly coated. Garnish with Parmesan cheese.

- In a large deep skillet or dutch oven, add oil & chicken and onions. Cook until chicken is cooked through and onion is soft and translucent. Add black beans, tomatoes (and juice), corn, salsa & taco seasoning. Mix well. Add pasta and chicken broth. Mix well and bring to a boil. Once at a boil, cover, lower to simmer and cook for 15 minutes. After 15 minutes, the pasta should be cooked and most of the liquid absorbed. Add 1 cup cheese & mix well. Add sour cream & mix well. Serve immediately and top with remaining cheese.

- Heat oven to 425 degrees.
- Cook pasta in a large pot according to package directions.
- Drain.
- Put pasta into a casserole dish.
- Add chicken, peas, soup, milk, rosemary, and pepper.
- Mix thoroughly but gently.
- Sprinkle with parmesan.
- Bake for 10 minutes, or until heated through and cheese is lightly browned.

This is good, and I like the unusual mix of ingredients, but I will stop short of saying this is the best recipe I have; however, I like it enough that I want to post it here so I can remember to cook it. Incidentally, I cooked the catfish with the basil cream sauce recently, YUM.

- Cut chicken into 1-inch cubes. Sprinkle evenly with salt and pepper. Sauté chicken in hot oil in a large skillet over medium-high heat 5 minutes or until done. Remove from skillet; drain on paper towels.
- Add sun-dried tomatoes and next 6 ingredients to skillet; bring to a boil over medium heat. Stir in broccoli, and cook 5 minutes or until broccoli is tender. Stir in cooked chicken and warm cooked pasta. Serve immediately.

- Cook pasta in boiling, salted water according to package directions. Drain and set aside. Meanwhile, cut chicken into bite size pieces. Melt butter in a large skillet over medium heat. Add chicken and cook, stirring, 4 to 5 minutes. Add garlic and continue to cook until chicken is just cooked through. Stir in flour; slowly pour in milk and broth, stirring constantly. Add salsa and cream cheese and stir until sauce is hot and bubbling and cream cheese is melted and smooth. Add drained pasta to skillet; stir until pasta is coated with sauce and everything is well combined. Sprinkle fresh or dried parsley over the top and serve immediately.
