Traditional Cranberry Relish image

For the Holidays, we serve up several different cranberry sides. This is more of a relish dish and absolutely satisfying. The combination of orange juice & pulp, apple, cranberries, fresh ginger just dance on your palate. It even makes a great pie filling as well. :) A recipe I will share soon. Number Of Ingredients 9

12 oz fresh or frozen cranberries
large juice and pulp of one large orange (about 1/2 cup)
the zest of one large orange
1/4 c water
1 medium granny smith apple, cored, peeled, and diced
1/2 c brown sugar, firmly packed
1/4 tsp nutmeg
1/2 Tbsp fresh grated ginger
1 cinnamon stick (optional)

Steps:

  • 1. In a large bowl, add fresh orange juice, pulp, and grated orange zest. Add water, fresh grated ginger, nutmeg, & cinnamon stick. Allow to infuse for about 5 minutes.
  • 2. In a medium size saucepan, add cranberries, brown sugar, and apples. Add orange juice mixture with cinnamon stick. Cook over medium low heat, stirring constantly. Cook until cranberries pop... Reduce heat to low and cook until mixture thickens up. You want chunks of fruit to make a relish. :)
  • 3. Serve warm or allow to cool and serve with thanksgiving dinner. Garnish with fresh zest of orange and fresh grated ginger prior to serving.
