1 pound polish Kielbasa, sliced into 1/4 inch circles
1 (12-ounce) jar sauerkraut
1 large sweet onion, sliced in thin rounds
4 tablespoons whole grain Dijon mustard
4 tablespoons spicy jalapeno jelly
4 slices Gruyere cheese
4 small crusty rolls

Steps:

  • Mix together your mustard and jelly until well combine. Your condiment is now ready. In a cast iron skillet, brown up the kielbasa. Once slightly darkened around edges, remove from the pan and set aside. Preheat broiler. In the same pan, add your sweet onions and grill up until just beginning to brown and soften. Add sauerkraut to the pan with the onions and cook together about 8 minutes, until most juices evaporate. Slice your rolls and scoop out a bit of the inside bread if desired. Next, assemble the sandwiches (in a pan preferably with sides if making many). First, spread some of the mustard/jelly condiment on the bottom. Next, pile on some kielbasa rounds (about 8 Don't Skimp!) then the onion/sauerkraut mixture and then top with a good slice of Gruyere Cheese. Place the pan under the broiler - along with the top of the rolls (facing inside up) to slightly crisp its edges Once cheese has melted, remove from the oven. PAY ATTENTION WHEN IN BROILER. Spread some more mustard/jelly condiment on the inside top of the roll and close the sandwich.

Sweet Potato Hash With Bacon and Melted Onions image

In his home-cooking book "Ad Hoc at Home," the surgically precise chef Thomas Keller gives instructions for cooking onions ideally for hash: melted but not mush, sweet but not stringy. His meat of choice is bacon, a nice shortcut for home cooks who may not have a haunch of beef around. This is an adaptation of his recipe. True to Keller form, this is not a weekday breakfast dish (it will take you a good 20 minutes to cook down the onions, and you'll dirty a few pots), but it is well worth an hour or so of your Sunday morning.

8 cups sliced onions (3 large ones)
Kosher salt
1 bay leaf
4 sprigs thyme
10 black peppercorns
1 garlic clove, smashed and peeled
1 stick unsalted butter, in 8 pieces
12 ounces best-quality bacon, sliced about 1/2-inch thick
3 pounds sweet potatoes, peeled, cooked (boiled, roasted or microwaved) and diced
1 tablespoon minced chives
Poached or sunny-side-up eggs, for serving optional

Steps:

  • Put onions in a large skillet, place over medium-low heat, and sprinkle with 1/4 teaspoon salt. Cook, uncovered, reducing the heat to maintain a low simmer, about 20 minutes, until onions are soft and swimming in liquid.
  • Tie the bay leaf, 3 sprigs thyme, peppercorns and garlic in a piece of cheesecloth. Add to onions along with butter, stir and cover (not too tightly, some steam should be allowed to escape). Cook slowly 30 to 35 minutes, until onions are meltingly tender and coated in butter. The mixture should look creamy at all times: if butter separates or if pan looks dry, stir in cold water 1 teaspoon at a time. Season to taste with salt. (Onions can be made up to 3 days in advance and refrigerated.)
  • Cut bacon crosswise into thick matchsticks. Pour 2 tablespoons water into a medium saucepan and set over medium heat. Add bacon, reduce heat to low, and cook for 30 minutes. Bacon will render its fat and become golden, but not completely crisp. Using a slotted spoon, transfer bacon to paper towels. Pour off excess fat from pan, leaving a thick film on bottom to cook hash; reserve the extra fat.
  • Heat oven to 200 degrees. Spread half of potatoes in pan, sprinkle with salt and add half the leaves of the remaining sprig of thyme. Cook undisturbed, over medium-low heat, until crisp, about 5 minutes. Add 1/2 cup melted onions and a quarter of the bacon and gently fold together until heated through. Transfer to an ovenproof serving bowl and keep warm. Repeat with remaining potatoes, a quarter of the bacon, another 1/2 cup onions (refrigerate leftover onions; they make a great sauce for fish) and remaining thyme leaves. Sprinkle hash with chives (if using) and remaining bacon. Serve hot, topped with eggs if desired.

"My books speak to harried everyday cooks like me." This fabulous roast of beef with melted tomatoes and onions serves as an excellent example of her appeal - and the leftovers make incredible sandwiches the next day.

1 silver tip roast, 5 pounds, or rib roast, 7 pounds
Fine sea salt
Freshly ground black pepper
4 tablespoons olive oil
2 onions, coarsely chopped
4 cloves garlic, cut into slivers
3 large or 4 medium ripe tomatoes
6 sprigs thyme, woody stems discarded

Steps:

  • Preheat oven to 450 degrees. Season roast with salt and pepper. In a large heavy pot or Dutch oven, heat oil to very hot. Sear roast on all sides until crusty dark brown, at least 3 to 4 minutes a side. Do not move roast around while searing, as this will prevent crust from forming.
  • Add onions, garlic, tomatoes and thyme to pot. Stir and cook vegetables 3 to 4 minutes. Add water to come a third of the way up the roast. Place pot in oven, uncovered.
  • Braise about 1 to 2 hours depending on size, until meat thermometer inserted into center registers about 135 degrees (medium rare). Do not overcook. Remove from oven, tent with aluminum foil, and let rest 10 minutes. Transfer to carving board or platter and serve with tomatoes, onions and pan juices.

This surprisingly elegant pasta dish is also seriously easy. All you need are pantry ingredients and some patience for slowly cooking down the onions until they turn into a fragrant purée. Add a squeeze of tomato paste and a slosh of heavy cream, taste and done. This recipe comes from a book by two excellent home cooks: "The Good Food: A Cookbook of Soups, Pastas and Stews" by Julie Strand and Daniel Halpern, first published in 1985 and reissued in 2018.

4 tablespoons unsalted butter
4 tablespoons olive oil
4 large onions, very thinly sliced (you can do this in the food processor)
Salt
1/2 cup heavy cream
2 teaspoons tomato paste, more to taste
Ground black pepper
1 pound linguine or other long, thin pasta
1/2 cup freshly grated Parmesan cheese, more for serving
Finely minced parsley, for serving (optional)

Steps:

  • In a wide skillet with a lid, heat the butter and oil over medium heat. When melted, add the onions in batches, stirring to coat. Reduce the heat to very low, cover and cook, stirring often, until very soft and translucent, about 30 minutes. The onions may turn light gold, but they should not brown.
  • Sprinkle with 1 teaspoon salt, cover and continue cooking until onions are golden and melting into a purée, 30 to 60 minutes more depending on the thickness of the onions.
  • In a microwave, heat the cream until warm, add the tomato paste, and stir until dissolved.
  • Meanwhile, bring a large pot of water with 1 tablespoon salt to a boil over high heat for the pasta.
  • When the onions are cooked, stir the cream mixture into the skillet along with a dozen grinds of black pepper. Cook, stirring, until the onion mixture is slightly thickened, 2 to 3 minutes. Turn off the heat.
  • Add the pasta to the boiling water and cook until tender, then drain and return to the pot. Immediately add the onion mixture and Parmesan cheese and toss together. Taste and adjust the seasonings with salt and pepper; add a little more tomato paste if the mixture needs sweetness or acidity.
  • Serve immediately, sprinkling each serving lightly with parsley, if you'd like. Pass more cheese at the table.

1 veal shank, (4 pounds) minus hock (10 to 12 inches long)
Sea salt and pepper
4 ounces olive oil
2 tablespoons unsalted butter
2 carrots, diced
2 celery stalks, diced
1 onion, diced
10 ounces white wine
5 whole garlic cloves
2 bay leaves
4 sprigs thyme
4 sprigs parsley
6 peppercorns
1 green leek
1-ounce bacon fat
1-ounce duck fat
1 onion, sliced thin
6 shallots, sliced
1 head cabbage, shredded
Salt and pepper to taste
1/4 tablespoon caraway seeds
4 ounces white wine
16 ounces of oxtail stock
2 tablespoons unsalted butter
1-ounce rice wine vinegar
3 tablespoons unsalted butter
1/4 cup sugar
1 pound cippolini onions
Salt to taste
1 sprig thyme
Chicken stock to cover
6 tomatoes, concasse (finely chopped)
1 clove garlic, minced
1 tablespoon ginger, grated
1 tablespoon rice vinegar
1 tablespoon sugar to taste
1 tablespoon mustard seeds

Steps:

  • Season shank with sea salt and pepper. Sear off the shank in a hot roasting pan with oil and butter in a preheated 450 degree F oven. Continually baste shank and cook until brown. Add mirepoix (carrots, celery and onions) and brown slowly. Add white wine and bouquet garni (garlic, bay leaves, thyme, parsley, and peppercorns) wrapped in the green leek. Continually baste while roasting. Cook for about 2 to 3 hours until shank is bronzed and fork tender, with no liquid left in pan. Remove shank and add water to pan and reduce to make a sauce. Strain and reseason with sea salt and pepper.;
  • CABBAGE: Heat a rondeau, add bacon fat, duck fat, onions, and shallots. When shallots are lightly caramelized, add cabbage. Season lightly with salt and pepper and cook until cabbage is lightly caramelized. Add caraway, white wine, and oxtail stock. Reduce down. Add butter, vinegar and check seasoning.
  • CIPPOLINI ONIONS: In a large saute pan, melt butter and sugar. Stir in cippolini onions, salt and thyme, then pour chicken stock over onion mixture to cover. Cook until onions are glazed and lightly caramelized. Set aside.
  • TOMATO MARMALADE: Over medium heat in stainless steel saute pan, combine all ingredients completely. Cook until dry or jam-like consistency. Check seasoning.
  • PLATING: Place cabbage on plate, top with shank. Ladle onions and marmalade over top, then sprinkle with truffle oil, thyme leaves, fleur de sel or sea salt, cracked pepper.

3 tablespoons vegetable oil, plus more as needed
4 medium red onions, sliced into 1/4-inch thick rounds
Salt and pepper
2 pounds top round, semi-frozen
1/2-pound fontina cheese, cut into small cubes
4 sub rolls

Steps:

  • Heat 3 tablespoons oil in a nonstick skillet over high heat. Saute the onion slices until wilted and just starting to take on some color, stirring all the while, about 7 minutes. Sprinkle onions with salt while cooking.
  • Slice the top round into very thin slices. Partially freezing the meat enables you to slice it very thinly.
  • Remove the onions from the skillet. Salt and pepper the steak slices and then saute them in the same skillet, in batches until cooked through, about 45 seconds per side. Repeat process for the remaining steak slices, replenishing oil as needed.
  • Meanwhile, melt the cheese cubes in a microwave-safe bowl on low power for a couple minutes or until completely melted.
  • Cut each roll down the middle lengthwise. Fill each roll with a good helping of steak slices and top with the melted cheese and sauteed onions.

1 Tbsp olive oil
1 large red onion, halved, thinly sliced lengthwise
1 Tbsp brown sugar
1/4 tsp each salt and freshly ground black pepper
1 Tbsp bourbon
1 1/2 tsp plus 4 Tbsp unsalted butter, softened
12 oz (3 cups) of your favorite cheeses (we used sharp cheddar and Gruyère), grated
8 (1/2-inch) slices crusty bread

Steps:

  • 1. Heat oil in a large skillet over medium heat. Add onion and cook 20 minutes, stirring frequently, until caramelized and very tender. Stir in sugar, salt, and pepper. Add bourbon, scraping up all brown bits in bottom of skillet. Stir in 1½ tsp butter until melted; keep warm. (Makes about 1 cup.) 2. In a medium bowl, toss cheeses until well combined. Divide evenly into 4 portions; press each into a disk-like patty to fit the size of the bread slices. 3. Spread ¼ cup of the onion mixture on each of 4 slices of bread. Top each with a cheese patty and another slice of bread. Spread 1½ tsp of the butter on 1 side of each sandwich. 4. Heat a large nonstick skillet over medium-low heat. Place 2 sandwiches, butter side down, in skillet. Cook 3 to 4 minutes, until golden brown. While first side is cooking, spread 1½ tsp of the butter on other side of each sandwich. Turn sandwiches and cook 3 to 4 minutes, until second side is crispy and golden brown and cheese has melted. Repeat with remaining 2 sandwiches.

2 tablespoons seasoned rice wine vinegar
1/4 cup soy sauce
1 tablespoon sesame oil
1 (1-pound) pork tenderloin
Salt and freshly ground black pepper
4 tablespoons olive oil
3 spanish onion, julienned
1 small fennel bulb, thinly shaven
2 cloves garlic, thinly sliced
2 tablespoons picked thyme leaves
1/4 cup sake
1 tablespoon chervil leaves, chopped
1 tablespoon chives, chopped
1 cup goat cheese, at room temperature
Salt and pepper
1 loaf French bread
1 clove garlic
Extra-virgin olive oil
Creme fraiche, as garnish

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl mix the vinegar, soy sauce, and sesame oil together and pour over the tenderloin, turning every 10 minutes, for 30 minutes. Pat dry. Season with salt and pepper.
  • Heat 2 tablespoons of olive oil in a medium saute pan over high heat. Sear the tenderloin until evenly colored and transfer to the oven. Cook until the pork reaches the internal temperature of 145 degrees F. Remove from the pan and allow to rest 15 minutes. Thinly slice.
  • While tenderloin is in the marinade, in a small pot over high heat add the remaining 2 tablespoons olive oil and saute the onions, fennel, garlic and thyme until just colored. Reduce the heat to low and deglaze with the sake. Cover with a lid and cook for 30 minutes, stirring periodically until the onions are translucent and soft. Remove from heat.
  • In a small bowl, using a fork, mix in the remaining herbs and the goat cheese and season with and salt and pepper, to taste.
  • While the onions are cooking, thinly slice the bread. Rub each piece with a garlic clove and season lightly with salt and pepper. Drizzle each piece with olive oil and bake until golden but still soft in the center, 10 minutes.
  • On a piece of garlic crostini spread a thin later of goat cheese mixture. Top with a thin slice of tenderloin, then the onion mixture and lastly dollop of creme fraiche.

They can be used as the basis for a number of recipes, as a topping, or instead of tomato sauce on pizza! This super-simple recipe comes from Hunter Lewis as written in "Saveur" magazine.

4 hoagie rolls

  • Heat 3 tablespoons oil in large skillet over high heat.
  • Saute onion until wilted and just starting to color, stirring frequently, about 7 minutes. Sprinkle onions with salt while cooking.
  • Slice the steak into very thin slices. (Partially freezing enables you to slice it very thin.).
  • Remove onions from skillet.
  • Salt and pepper (and season if desired) steak slices then saute in same skillet, in batches until cooked thru, about 45 seconds per side.
  • Repeat process for the remaining steak slices, adding more oil as needed.
  • Meanwhile, melt the cheese cubes in a microwave-safe bowl on low power for a couple of minutes or until completely melted. (Actually do this right before assembly, cuz the cheese cools off too quickly.).
  • Cut each roll in half lengthwise. Fill each roll with steak, onions and melted cheese.
