I got this recipe out of a church cookbook many years ago. It is a simple and delicious pumpkin bread. My daughter who hates coconut loves this bread. It is so moist and tasty that it really does melt in your mouth.

2/3 cup oil
2 large eggs
1 cup pumpkin
1 cup flour
1 cup sugar
1 (3 1/2 ounce) box instant coconut pudding mix
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cinnamon

Steps:

  • Mix oil, eggs and pumpkin.
  • Combine remaining ingredients and add to pumpkin mixture.
  • Bake in a 9x5x3-inch pan at 325° for 1 hour.

This delicious pumpkin bread came from a Texas Bed & Breakfast cookbook. I changed the amount of pumpkin used and it is absolutely delicious!

2 c all purpose flour
2 c sugar
2 pkg 4-oz. each- french vanilla instant pudding
1 tsp each - baking soda, salt, and cinnamon
5 eggs
1 1/4 c vegetable oil
1 can(s) 15 oz, pumpkin (not pie filling)
1/2 c coconut, flaked

Steps:

  • 1. Preheat oven to 325 degrees. Grease 2 5x9 inch loaf pans.
  • 2. Combine dry ingredients in a medium bowl.
  • 3. Combine oil, eggs, and pumpkin in a large bowl, mix well. Stir in coconut.
  • 4. Add dry ingredients to wet ingredients and mix well. Spread batter into greased loaf pans. Bake for 1 hour or until done.

The name says it all, this is a very moist & delicious pumpkin bread... Great for Fall baking, bake sales, Holiday's, gift giving, and just savoring. This bread needs nothing, but a dollup of whipped cream makes it look pretty :-) I happen to have a very large loaf pan & that's what I use, not sure if you need 2 loaf pans or not for this, but I have also made this in a rectangular aluminum pan.

1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups sugar
3 1/2 cups flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
cooking spray (Bakers Joy)

Steps:

  • Spray loaf pan with Bakers Joy or grease liberally. Preheat oven 350 degrees.
  • In a large mixing bowl, combine pumpkin, eggs, oil, water and sugar until well blended.
  • In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just combined.
  • Pour it all into the loaf pan & bake about 50 minutes at 350 degrees.
