4 ½ cups cubed honeydew melon
1 ½ cups lime sherbet
2 tablespoons lime juice
4 fresh strawberries

Steps:

  • Place honeydew melon in a single layer on a baking sheet. Cover and freeze until firm, about 30 minutes.
  • Transfer frozen melon to a food processor with the sherbet and lime juice. Puree until smooth. Pour mixture evenly into 4 glasses, and garnish each glass with a strawberry. Serve immediately.

1 (750-ml) bottle dry white wine or 3 cups white grape juice
2 (8-ounce) bottles fresh watermelon juice
1 1/2 cups mixed melon balls, cantaloupe and honeydew
Ice cubes
1 (33.8-ounce) bottle club soda

Steps:

  • In a large pitcher, combine wine, melon juice, and melon balls. Chill for at least 1 hour. Just before serving, add ice, stir, pour in soda, and stir lightly again.

1 large honeydew melon
1 large cucumber, peeled
2 cups water
1/2 cup sugar
2 tablespoons fresh lemon juice
ice

Steps:

  • Remove rind from honeydew and cut into chunks.
  • Peel cucumber, cut 8 nice slices from the middle to use as garnish and cut the rest of the cucumber into chunks.
  • Using a blender and working in 2 batches, puree the melon, cucumber and water.
  • Strain mixture and discard solids.
  • Whisk sugar and lemon juice into the liquids remaining from melon/cucumber.
  • Taste it and add up to 2 cups more water if it is too concentrated for your liking.
  • Refrigerate until chilled and serve over ice with a floating slice of cucumber as a garnish.

juice of 2 oranges
3 tbsp Campari or 2 tbsp elderflower cordial
8 mint leaves, torn, plus extra
475g tub ready-prepared melon medley (a mix of melons)
caster sugar , for sprinkling

Steps:

  • Be a clever cheat and save time and buy a tub of fresh ready prepared melon chunks. Mix the orange juice, Campari or cordial and mint in a bowl. Tip in the melon with any juice, and stir. Pile the lot into tumblers and top each with mint leaves. For frosted tumblers, run the outside of 4 tumblers under the cold tap. Scatter with caster sugar and put in the freezer until ready to serve, about 30 minutes.

How to make Misty Melon Cooler

2 cups diced very ripe cantaloupe
1 cup orange juice
3 tablespoons sugar
Vanilla ice cream or frozen yogurt

Steps:

  • Place the melon chunks on a plate and place it in the freezer until the fruit is quite firm but not frozen solid, about 20 to 30 minutes.
  • In a blender, puree the melon chunks with the orange juice and sugar until the mixture is smooth. Add 4 or 5 big scoops of ice cream or frozen yogurt and blend the mixture for another minute or so.
  • Divide the cooler among four chilled glasses and serve. Makes four 8-ounce servings.
