20 Minute Skillet Sausage & Zucchini image

Throw together this quick skillet dinner when you need a healthy and satisfying meal in a hurry! You'll love this perfectly seasoned mix of sausage, zucchini, peppers, and onions. Whole30 compliant, dairy free, gluten free -- and extra delicious!

2 1/2 tbsp olive or avocado oil
4 fully cooked sausages (sliced into circles 1/4 inch thick)
2 medium zucchini (cubed)
1 onion (cut into 3/4 inch pieces (close to same size as zucchini))
1 bell pepper (any color, cut into 3/4 inch pieces (close to same size as zucchini))
1/2 tsp salt
1/2 tsp dried oregano
1/2 tsp dried basil
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp pepper
1 tsp garlic (minced)

Steps:

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is hot, add sliced sausage. Sautè, flipping sausage frequently, for 1 to 2 minutes or until sausage slices have some browning. Remove from pan and set aside.
  • Reduce heat to medium. Add remaining 1 1/2 tablespoons of oil to skillet with the zucchini, onion, and bell pepper. Sprinkle with salt, oregano, basil, garlic powder, onion powder, and pepper. Stir. Let cook until the onion is translucent and peppers and zucchini are close to tender, about 5 to 10 minutes.
  • Add sausage back to the skillet along with minced garlic. Stir. Cover so everything heats through for 1 to 2 minutes. Taste. Add extra salt if desired. Garnish with chopped fresh basil (optional).

1/4 cup vegetable oil
2 cups shredded zucchini
1 onion, chopped
1/2 lb bulk sausage
2 cups swiss cheese, grated
1 cup milk
1/2 cup half-and-half
2 tablespoons parmesan cheese, grated
2 eggs, slightly beaten
1 cup flour
1/2 teaspoon white pepper
1 tablespoon butter, melted

Steps:

  • Heat oil in a large frying pan over medium heat and sauté the zucchini and onion for 5 minutes or until soft. Put the zucchini and onion in a large bowl.
  • Add the sausage to the pan. Break up the sausage and cook over medium heat until no longer pink. Drain the sausage and add to the bowl. Mix zucchini, onion and sausage. Then add the remaining ingredients.
  • Mix well and pour into a 9x9 inch baking pan. Bake for 40 minutes at 400 degrees F. Cut into squares. Serve warm or cold.

1 lb ground sausage
1/3 cup chopped onion
1 tablespoon butter
3/4 cup milk
1 (3 ounce) package cream cheese
3 eggs
1 cup shredded cheddar cheese
1/2 teaspoon Worcestershire sauce
1/2 teaspoon salt (use less if the sausage is salty)
1/8 teaspoon pepper
1 (9 inch) deep dish pie shells, partially baked and cooled

Steps:

  • Preheat the oven to 375°.
  • In a heavy skillet over medium heat, crumble the sausage with a fork.
  • Sauté the sausage until completely cooked.
  • Drain off the fat, remove the sausage, and set aside.
  • Melt the butter in another skillet over medium heat.
  • Sauté the onions in the butter until tender.
  • Add the milk and heat until steam rises, but do not boil the milk.
  • Cut the cream cheese into small pieces, add it to the onion mixture, and remove the pan from the heat.
  • In a large bowl, beat the eggs, then add the cheddar, the onion mixture, the Worcestershire, salt, and pepper.
  • Mix thoroughly and pour this into the pie crust.
  • Top with cooked sausage, and bake for 30 minutes, or until set.

1 pound bulk sage pork sausage
6 green onions, chopped

  • Preheat oven to 375°. On a lightly floured surface, unfold pastry sheets; roll each into a 16x12-in. rectangle. Using a floured cutter, cut twelve 4-in. circles from 1 sheet; press onto bottoms and up sides of ungreased muffin cups. Using a floured cutter, cut twelve 3-1/2-in. circles from remaining sheet., Mix sausage, green onions, apricots and spices lightly but thoroughly. Place 1/4 cup mixture into each pastry cup. 1/2 pound fully cooked smoked Polish sausage, cut into 1/2-inch diagonal slices
1 cup chopped onion
1 cup sliced celery

4 to 5 medium zucchini, sliced

2 lb zucchini, chopped
1/2 lb sausage
1/4 c onion, chopped
1/2 c cracker crumbs
3 eggs, beaten
1/8 tsp thyme
1/8 tsp rosemary
1/8 tsp granulated garlic powder
1/2 c fresh grated parmesan cheese

Steps:

  • 1. Cook zucchini in salted water until tender; drain. Saute' sausage until cook through and drain off fat. Combine Sausage and zucchini with remaining ingredients, except 2 tablespoons of cheese. Spoon into greased 9-inch pie plate and bake at 350 degrees for 45 minutes. Sprinkle top of pie with remaining cheese.

1.4 cup veg oil
1 lb breakfast sausage (original type typically)
2 eggs beaten lightly
1 cup milk
1/2 cup 1/2 and 1/2
1/2 tsp salt
1/4 tsp pepper
dash nutmeg
2 Tbl parmesan cheese
1 Tbl melted butter

Steps:

  • saute onion and zucchini in oil. Cook sausage. Combine all ingredients bake 40 minutes at 400 degrees in 13x9 or smaller pan
