Mediterranean Salad with Grilled Chicken image

This mediterranean salad is a perfect blend of greens, juicy tomatoes, feta, pistachios and grilled chicken tossed in lemon tahini dressing.

Number Of Ingredients 24

2 lbs. boneless skinless chicken breasts 3-4 breasts
Zest from a lemon
1/3 cup fresh squeezed lemon juice
1/3 cup olive oil
1/3 plain yogurt don't use non-fat
2 Tbsp. minced garlic
1 tsp. salt
½ tsp. black pepper
1 tsp. dried basil
2 tsp. dried oregano
1/4 cup lemon juice
1/3 cup olive oil
2 Tbsp. tahini
1 Tbsp. minced shallot
1 Tbsp. dijon mustard
2 tsp. honey or agave syrup
1 tsp. minced garlic
1/2 tsp. salt
1/4 tsp. pepper
1-2 Tbsp. water
2/3 cup roasted, salted, shelled pistachios (lightly crushed)
2/3 cup feta (crumbled)
10 oz. baby arugula
2 cups cherry tomatoes (halved)

Steps:

  • Remove any fatty areas or excess skin from chicken breasts. Either marinade whole breasts for 2 hours or to speed the marinade time up, cut chicken into 1" pieces and marinade for 30 - 60 minutes.
  • Mix all chicken ingredients together in a bowl or reusable bag and let marinade for 30 minutes - 1 hour. Use some of this time to prepare dressing and salad ingredients. If using 1" pieces and you plan on grilling the chicken as kabobs, soak the wooden skewers in water while the chicken is marinating to keep them from burning.
  • Add all dressing ingredients to a small glass jar and shake to combine. Start by adding only 1 Tbsp. of water and add an additional Tbsp. if needed to reach desired consistency (amount of water will depend on tahini thickness).
  • Prepare all salad ingredients and add to a serving bowl. Set aside.
  • Preheat Grill to about 425° F (218° C) and brush and oil grill grates.
  • If using 1" chunks, skewer chicken onto kabob skewers leaving a few millimeters of space between each chunk so that chicken cooks evenly. Once grill is hot, place chicken on grill and cook for 5-8 minutes per side for breasts or 4-6 minutes per side for kabobs.
  • Remove chicken from grill and let sit for 5-10 minutes before slicing breasts (if cut into chunks, it does not need to rest).
  • Shake salad dressing jar and pour over prepared salad. Toss to combine.
  • Add chicken to salad and serve immediately.

This grilled chicken salad combines marinated chicken, fresh veggies, and bold Greek flavors all in one tasty and easy dinner. There is a reason this Greek chicken salad with the tastiest lemon and olive oil dressing is one of my go-to supper salads!

1 cup Greek yogurt
Juice of 1 large lemon
2 tbsp extra virgin olive oil (more for later)
2 tbsp red wine vinegar
3 garlic cloves (minced)
Kosher salt (generous pinch to taste)
Black pepper (generous pinch to taste)
1 tbsp oregano
1 tsp sweet paprika
1 tsp ground cumin
1 tsp ground coriander
pinch cayenne pepper (optional)
1.5 lb Chicken tenders
Homemade Greek dressing,
8 oz hearts of Romaine lettuce, (chopped )
10 oz cherry or grape tomatoes,
1 bell pepper any color, (cored and chopped)
1 English cucumber sliced into rounds, (diced)
2 shallots, (thinly sliced)
Pitted Kalamata olives, (to your liking)
Quality Greek feta blocks, (to your liking)

Steps:

  • Season and marinate the chicken tenders. In a large bowl, mix together the yogurt, olive oil, lemon juice, vinegar, garlic, salt, and spices. Add the chicken tenders and mix to make sure chicken is well coated with the marinade. Cover and refrigerate for 30 minutes (or refrigerate overnight, if you like)
  • Prepare the dressing according to this Greek dressing recipe.
  • Prepare the salad. In a large bowl, combine the lettuce, cherry tomatoes, bell pepper, cucumber slices, shallots and kalamata olives. Add 4 tablespoons of the Greek dressing and toss to combine (you can always add more dressing to your liking). Leave some of the dressing (about 3 tablespoons or so) for later. Add feta cheese to your liking.
  • Cook the chicken. Heat 1 tablespoon of extra virgin olive oil in a non-stick skillet over medium-high until shimmering but not smoking. Add chicken tenders to the pan (make sure to shake off any excess marinade before adding chicken to the pan.) Cook on one side undisturbed for 5 minutes until browned. Using a pair of tongs, turn chicken over and cook on other side for another 5 minutes or until chicken is done. (See notes for outdoor grilling)
  • Assemble the grilled chicken salad. Transfer the salad to serving bowls and top each bowl with the cooked chicken then drizzle a bit more of the salad dressing directly over the chicken. Serve immediately.

juice of 1 lemon ((1/4 cup fresh squeezed lemon juice))
2 tablespoons water
2 tablespoons red wine vinegar
2 tablespoons fresh chopped parsley
2 teaspoons dried basil
2 teaspoons garlic (, minced)
1 teaspoon dried oregano
1 teaspoon salt
cracked pepper (, to taste)
1 pound (500 g) skinless, boneless chicken thigh fillets (or chicken breasts)
4 cups Romaine ((or Cos) lettuce leaves, washed and dried)
1 large cucumber (diced)
2 Roma tomatoes (diced)
1 red onion (sliced)
1 avocado (sliced)
1/3 cup pitted Kalamata olives ((or black olives), sliced (optional))
Lemon wedges (to serve)

Steps:

  • Whisk together all of the marinade/dressing ingredients in a large jug. Pour out half of the marinade into a large, shallow dish. Refrigerate the remaining marinade to use as the dressing later.
  • Add the chicken to the marinade in the bowl; marinade chicken for 15-30 minutes (or up to two hours in the refrigerator if time allows). While waiting for the chicken, prepare all of the salad ingredients and mix in a large salad bowl.
  • Once chicken is ready, heat 1 tablespoon of oil in a grill pan or a grill plate over medium-high heat. Grill chicken on both sides until browned and completely cooked through.
  • Allow chicken to rest for 5 minutes; slice and arrange over salad. Drizzle salad with the remaining UNTOUCHED dressing. Serve with lemon wedges.

Steps:

  • In a shallow plate whisk together all the marinade ingredients. Add the chicken breasts and toss them around making sure they are fully covered in the marinade. Cover with plastic wrap and refrigerate for about 30 minutes to up to 4 hours.
  • Heat up your grill so that it's around 400 F degrees.
  • In the mean time whisk all the dressing ingredients together in a small bowl and set aside.
  • In a larger bowl toss the lettuce, cucumber, red onion, bell pepper, tomatoes, and olives together.
  • Grill the chicken on both sides, about 5 minutes per side or until no longer pink and is cooked through. Discard remaining marinate.
  • Let the chicken cool for about 5 minutes before slicing it into 1/2 inch slices.
  • Drizzle the prepared dressing over the salad and toss well. Add the crumbled feta to the salad and mix.
  • Serve with the sliced chicken breast over the salad and avocado slices. Other optional sides include hummus and pita chips.

1 lemon, juice of
1/4 cup olive oil
1 teaspoon ground cumin
salt, to taste
pepper, to taste
2 heads romaine lettuce, shredded
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 cup red onion, chopped
2 carrots, shredded
2 cups pita chips, plain
1/2 cup extra virgin olive oil
1 lemon, zest of, and reserve
1/4 cup lemon juice
1 tablespoon Dijon mustard
2 tablespoons honey
2 tablespoons fresh dill, chopped
salt, to taste
pepper, to taste

Steps:

  • Combine marinade ingredients in a bag or glass dish and add the chicken to marinate for 30 minutes.
  • Grill about 5-6 minutes per side or broil 6-7 minutes per side; When slightly cooled, slice chicken breasts on the diagonal and set aside.
  • Make the dressing by combining all ingredients except for the oil and then slowly whisk in the oil, taste and adjust seasoning and set aside until ready to eat.
  • In a salad bowl, combine all the greens and vegetables and pita chips with chicken and toss.
  • Whisk the dressing and add to the salad and toss more and serve immedietly.
