- Cut each pita half into three wedges; separate each wedge into two pieces. Place on an ungreased baking sheet. MEDITERRANEAN DIP
This is a Trader Joe recipe. It is such a delicious dip! I took it to a party and everyone wanted a copy of the recipe. The recipe suggests layering the ingredients into a pie plate or something sized similar. I made the mistake of thinking that was too big for the dip and used a smaller serving dish. By the time I was finished layering the ingredients, it was too full! I served this dip with pita crackers from Trader Joes, but you could use your own favorite dippers. This recipe looks unusual but it is knock out.

- Mix yogurt, cream cheese and first 4 dried spices until well blended. Spread dip in shallow glass casserole dish or pie plate. Cover and let sit in refrigerator for a few hours if you can.
- Carefully open the pita breads and cut into triangles, and place on two baking sheets spraying both sides with olive oil spray (or brush a small amt on each one) and lightly sprinkle with garlic salt. If the pita bread will not separate, then just cut them into the wedges and brush a small amount of olive oil onto each side instead of using the olive oil spray. Bake at 350 until just starting to brown on edges, about 10 minutes or so.
- Peel and seed the cucumber (seed it by cutting lengthwise and running a spoon along the center). Chop finely and layer on top of dip. Follow with diced tomatoes, black olives, pepperoncinis and feta cheese. Top with chopped parsley if desired.

SIX-LAYER MEDITERRANEAN DIP

- 1 First, strain the yogurt by putting cheesecloth or a paper coffee filter in the bottom of a strainer and pour in all the yogurt but 1/4 cup (reserve for later); let it strain for a couple of hours to thicken it up, or overnight (in the fridge) to make thicker "yogurt cheese" (I prefer it just for a couple of hours; you could also substitute sour cream for the yogurt, if you like). 2 Combine the reserved 1/4 cup of un-strained yogurt with the prepared hummus, then spread mixture on the bottom of a 9 inch pie dish. 3 Combine remaining strained yogurt and cumin and spread over the hummus layer. 4 Toss together the garlic powder, salt, lemon/lime juice, chopped tomatoes, and avocado, then spread over the yogurt layer. 5 Add a layer of the cucumbers and sprinkle with a bit of salt and pepper. 6 Add a layer of feta, then finish it all off with olives. 7 Let chill for an hour before serving with pita chips (artichoke hearts are a good addition to this recipe, as well.).

Consists of layers of Wild Mushroom Couscous, Spicy Lemon Hummus, Kalamata Olive Tapenade, marinated artichoke hearts, feta cheese, sundried tomatoes, and parsley. Makes an impressive presentation with all the rich colors. Some individual layers require their own separate preparation in advance of assembling the dip. The flatbread is a perfect complement to this dish.

- Prepare the Wild Mushroom Couscous.
- Cook 1 cup of plain couscous according to package directions and let it cool to room temperature.
- Whisk together lemon juice and olive oil.
- Pour into couscous and add the next 5 ingredients, stirring to mix well.
- Line a nine-inch glass pie plate with the wild mushroom couscous.
- Prepare the Spicy Lemon Hummus.
- Stir the ground cumin and black pepper into the prepared lemon hummus.
- Spread the spicy lemon hummus on top of the couscous mixture.
- Prepare the Kalamata Olive Tapenade.
- Mince garlic in food processor and then add the next seven ingredients.
- Slowly add the olive oil while the blade is running. Process until smooth.

- Arrange chopped artichoke hearts as the next layer, followed in turn by layers of feta cheese, sundried tomatoes, and parsley.
- Serve immediately or cover and refrigerate. Bring to room temperature before serving.
- Prepare the Flatbread with Rosemary Butter.
- Stir rosemary into the melted butter and brush on the flatbread. Heat on baking tray in 350 degree oven for one to two minutes.
