MEDITERRANEAN DIP

Mediterranean Dip image

This is a Trader Joe recipe. It is such a delicious dip! I took it to a party and everyone wanted a copy of the recipe. The recipe suggests layering the ingredients into a pie plate or something sized similar. I made the mistake of thinking that was too big for the dip and used a smaller serving dish. By the time I was finished layering the ingredients, it was too full! I served this dip with pita crackers from Trader Joes, but you could use your own favorite dippers. This recipe looks unusual but it is knock out.

Number Of Ingredients 8

1/2 cup sour cream
8 ounces garlic hummus
1/2 cup kalamata olive, sliced

6 ounces marinated artichoke hearts, drained and chopped (but RESERVE the liquid)
1/2 cup green onion, sliced
3/4 cup carrot, shredded
pita chips, 1-2 boxes

Steps:

  • In a medium bowl, combine sour cream and hummus; mix well.
  • Spread into a pie plate or servewear of similar size.
  • Sprinkle olives, feta, artichoke hearts, green onions and carrot - adding each as a layer.
  • Drizzle with reserved artichoke marinade.
  • Cover and refrigerate for at least an hour or up to 12 hours.
  • Serve with pita crackers.

MEDITERRANEAN PARTY DIP WITH PITA CHIPS

Mediterranean Party Dip With Pita Chips image

A great dip perfect for summer picnics or winter parties. If you don't have time to make your own pita chips, store bought ones would work, too. I know you enjoy this recipe!

Provided by Denise J

Categories     Vegetable

Time 1h

Yield 12 serving(s)

Number Of Ingredients 15

8 ounces low fat soft cream cheese (sometimes I use 12 oz if I want a thicker dip)
8 ounces plain yogurt, Greek yogurt is the best
1 1/2 tablespoons ground coriander
1 teaspoon dried oregano
1/4 teaspoon ground black pepper
1 teaspoon garlic salt
1 tomatoes, chopped
5 pepperoncini peppers, sliced
1/2 cup sliced kalamata olive, pitted and sliced
1 medium cucumber, seeded and diced
1/3 cup feta cheese, crumbled
1/2 cup chopped fresh curly-leaf parsley
5 pita bread rounds, opened and cut into triangles
olive oil flavored cooking spray
garlic salt

Steps:

  • Mix yogurt, cream cheese and first 4 dried spices until well blended. Spread dip in shallow glass casserole dish or pie plate. Cover and let sit in refrigerator for a few hours if you can.
  • Carefully open the pita breads and cut into triangles, and place on two baking sheets spraying both sides with olive oil spray (or brush a small amt on each one) and lightly sprinkle with garlic salt. If the pita bread will not separate, then just cut them into the wedges and brush a small amount of olive oil onto each side instead of using the olive oil spray. Bake at 350 until just starting to brown on edges, about 10 minutes or so.
  • Peel and seed the cucumber (seed it by cutting lengthwise and running a spoon along the center). Chop finely and layer on top of dip. Follow with diced tomatoes, black olives, pepperoncinis and feta cheese. Top with chopped parsley if desired.

This is my own creation inspired by, if not entirely true to, the cuisines of the Southern Mediterranean which I love. Use it as a dip, spread it on any type of toasted bread. I've used it on grilled steak to good advantage. You'll get 16 servings of 1 Tbsp each.

SIX-LAYER MEDITERRANEAN DIP

SIX-LAYER MEDITERRANEAN DIP image

Number Of Ingredients 13

8 ozs hummus (prepared)
114 cups plain yogurt (divided)
12 tsp cumin
14 tsp garlic powder
14 tsp salt
1 tsp lime juice (lemon)
1 cup tomato (seeded and chopped)
1 avocado (ripe, seeded and chopped)
12 cup cucumber (peeled and chopped)
salt
ground pepper
4-6 ozs feta cheese (crumbled)
2 tbsps kalamata olives (minced)

Steps:

  • 1 First, strain the yogurt by putting cheesecloth or a paper coffee filter in the bottom of a strainer and pour in all the yogurt but 1/4 cup (reserve for later); let it strain for a couple of hours to thicken it up, or overnight (in the fridge) to make thicker "yogurt cheese" (I prefer it just for a couple of hours; you could also substitute sour cream for the yogurt, if you like). 2 Combine the reserved 1/4 cup of un-strained yogurt with the prepared hummus, then spread mixture on the bottom of a 9 inch pie dish. 3 Combine remaining strained yogurt and cumin and spread over the hummus layer. 4 Toss together the garlic powder, salt, lemon/lime juice, chopped tomatoes, and avocado, then spread over the yogurt layer. 5 Add a layer of the cucumbers and sprinkle with a bit of salt and pepper. 6 Add a layer of feta, then finish it all off with olives. 7 Let chill for an hour before serving with pita chips (artichoke hearts are a good addition to this recipe, as well.).

SEVEN LAYER MEDITERRANEAN DIP WITH ROSEMARY BUTTER FLATBREAD

Seven Layer Mediterranean Dip With Rosemary Butter Flatbread image

This has many of my favorite appetizers all in one dish. Consists of layers of Wild Mushroom Couscous, Spicy Lemon Hummus, Kalamata Olive Tapenade, marinated artichoke hearts, feta cheese, sundried tomatoes, and parsley.
