Mediterranean Roasted Cauliflower with Olives image

This cauliflower medley is a great way to perk up your menu. It can be served warm as a side dish, or at room temperature and tossed with romaine lettuce as a salad. Warming the herbs and garlic in the oil prior to tossing with the veggies helps their flavor bloom. When ready to serve, drizzle on as much or as little balsamic vinegar as you like.

2 tablespoons extra-virgin olive oil
1 teaspoon fresh minced garlic
½ teaspoon dried Italian herb seasoning
salt and ground black pepper to taste
2 cups cauliflower, cut into 1-inch florets
1 cup red onions, cut into 1-inch cubes
1 large red bell pepper, seeded and cut into 1-inch squares
2 ounces sliced black olives
1 tablespoon balsamic vinegar, or to taste
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a 12x18-inch baking sheet with foil or parchment paper.
  • Combine olive oil, garlic, Italian seasoning, salt, and freshly ground pepper in a small, microwave-safe bowl. Microwave on High for 20 to 30 seconds. Watch carefully, and remove from the microwave when the oil bubbles. Set aside.
  • Combine cauliflower florets, red onion, and red bell pepper in a large bowl. Pour in the olive oil mixture and stir until all the vegetables are coated. Spread out vegetables on the prepared baking sheet in a single layer.
  • Roast in the preheated oven until vegetables reach the desired doneness, 20 to 25 minutes. Broil if you like additional color, carefully watching that the vegetables do not burn, 1 to 2 minutes.
  • Sprinkle sliced olives over the vegetables and drizzle with balsamic vinegar. Garnish with fresh parsley. Serve warm.

One 12-ounce bag frozen cauliflower fries
1 tablespoon plus 1 1/2 teaspoons za'atar
Kosher salt and freshly cracked black pepper
1/2 cup fresh parsley, leaves torn with your hands
1/4 cup finely diced red onion
1/4 cup chopped kalamata olives
1/4 cup extra-virgin olive oil
3 tablespoons chopped pickled pepperoncini
1 medium cucumber, finely diced
1/3 cup crumbled feta
1 cup plain whole-milk Greek yogurt
1/2 cup fresh mint, chopped
3 tablespoons chopped capers
1/2 teaspoon ground coriander
Zest of 1 lemon plus juice of up to 2 lemons
Hot sauce, to taste
Kosher salt and freshly cracked black pepper

Steps:

  • For the loaded fries: Preheat the oven to 425 degrees F. Put a baking sheet in the oven for 10 minutes to heat up.
  • Toss the frozen cauliflower fries with 1 tablespoon of the za'atar and season with salt and pepper. Place on the hot baking sheet and bake until crispy and hot, 13 to 15 minutes depending on your oven.
  • While the fries are cooking, in a medium bowl, combine the parsley, onion, olives, olive oil, pepperoncini, cucumber and the remaining 1 1/2 teaspoons za'atar. Season with pepper (the olives are salty).
  • For the yogurt sauce: Combine the yogurt, mint, capers, coriander, lemon zest and juice and some hot sauce in a small mixing bowl. You may add more or less lemon juice depending on how thick your yogurt is, or how tart you would like your sauce. Season with salt and pepper.
  • To finish, spread the yogurt sauce on the bottom of a plate. Place the crispy fries on top of the sauce. Top with the cucumber-olive salad and finish with the crumbled feta.

1 cup hummus, or to taste

Steps:

  • Trim leaves off cauliflower and slice into thick "steaks", 1 1/2 to 2 inches thick. Brush with olive oil and garlic on both sides.

1-1/2 cups CLASSICO Spicy Red Pepper Pasta Sauce
1/2 cup crumbled feta cheese
1 Tbsp. chopped fresh parsley

Steps:

  • Heat grill for indirect grilling: Light one side of grill, leaving other side unlit. Close lid. Heat grill to 350ºF.
  • Cut cauliflower lengthwise into 1-inch-thick slices; brush with half the vinaigrette. Place, vinaigrette sides down, over lit side of grill.
  • Grill 2 min.; turn. Brush with remaining vinaigrette; grill additional 2 min. Transfer cauliflower to unlit side of grill; cook 10 to 12 min. or until tender. A few minutes before cauliflower is done, cook pasta sauce in saucepan on medium-low heat until heated through, stirring frequently.

1 large head cauliflower, broken into florets
2 cans (14-1/2 ounces each) diced tomatoes with basil, oregano and garlic, drained
1/2 cup sliced green olives with pimientos
4 green onions, sliced
1/2 teaspoon pepper
1/4 teaspoon salt
1 cup crumbled feta cheese

Steps:

  • In a 6-qt. stockpot, place a steamer basket over 1 in. of water. Place cauliflower in basket. Bring to a boil. Reduce heat; steam, covered, until crisp-tender, 4-6 minutes. Drain and return to pan., Stir in tomatoes, olives, onions, pepper and salt. Bring to a boil. Reduce heat; simmer, uncovered, until cauliflower is tender and tomatoes are heated through, 3-5 minutes.   • Preheat an air fryer to 375 degrees F (190 degrees C).
