MEDITERRANEAN AUSTRALIAN LAMB BURGER WITH GOAT CHEESE AND TOMATO RELISH
Steps:
- To make the burgers, combine ground lamb, shallot, capers, basil and pepper in a large bowl and mix well. Divide mixture into four burgers. Spread cornmeal over a plate and press burgers into mixture to coat. Preheat barbecue or grill pan and brush with oil. Cook the burgers over a medium to high heat for 6 - 7 minutes each side or until cooked as desired. To make the relish, place the tomatoes and onion into a preheated saute pan with the olive oil. Cook for 5 minutes. Add sugar, vinegar, salt and pepper. Remove from heat and let cool. Grill the buns, cut side down, until lightly toasted. Spread with goat cheese and top with the burgers. Serve with the tomato relish.

Steps:
- Heat oil; cook capsicum and onion for 8-10 minutes or until soft and golden, stir in passata, season with salt and pepper. Cook stirring for 1 minute. Remove from heat and keep warm.
- Preheat an oiled BBQ.
- Remove casings from sausages and place sausage mince in a mixing bowl, add basil and parmesan; mix well to combine.
- Shape mixture into 4 patties, cook for 3-4 minutes each side or until done.
- Place spinach on base of rolls, top with patties, then capsicum mixture and serve.
MEDITERRANEAN TURKEY BURGER WRAPS

- For the Burger: In a bowl mix ground turkey with the fresh oregano, red onion, allspice, cinnamon, red pepper flakes, ground corrinader, salt and pepper. Form them into smaller thicker patties (as not to fall apart). Brush them with olive oil and place them on hot oiled grill. Grill for about 4 minutes per side or until brown. For Filling: In a bowl place prepared as mentioned above: red onion, kalamata olives, lettuce, tomato, basil, pepperoncinni, paresean cheese and garbonzo beans. For Dressing: In measuring cup pour olive oil, pepperoncinni liquid, garlic, red pepper flakes and salt and pepper and mix together. Combine a light coating of dressing over filling mixture. Place flat bread down, spoon on filling mixture, and 2 or 3 turkey burgers and roll it up and then cut in half.

- In a large bowl, use a fork to gently combine lamb, onion, Dijon, parsley, mint, oregano, salt and pepper. Gently form into four 1-inch thick patties.
- Heat grill to high. Place patties on the hottest part of the grill and sear until browned 1-2 minutes per side.
- Move patties to the cooler part of the grill and continue grilling until desired doneness, 4-8 minutes per side.
- Place burger on split bun and garnish as desired.

- 1. In small bowl stir together hummus and lime juice. Set aside.2. Cook MORNINGSTAR FARMS GARDEN VEGGIE PATTIES according to package directions. Cut in half.3. Place patties in pita halves. Top patties with hummus mixture. Spoon lettuce, mint and tomatoes on top. Serve immediately.*NOTE: Tahini hummus may be purchased alongside other flavors of hummus in the refrigerated section of your grocery store. If you can't find tahini hummus, remove crusts from 3 slices of bread. Tear bread into 2-inch pieces. In food processor bowl combine bread, 1 tablespoon tahini (a thick paste made of ground sesame seeds), 2 tablespoons bottled minced garlic, 1 tablespoon lime juice and 4 teaspoons olive oil. Cover and process until coarse paste forms. Continue as directed above in step 1.

- 1. Preheat grill to medium-high. 2. Mash garlic and salt on a cutting board with the side of a knife until it's a smooth paste. Mix the paste with 1 tablespoon oil in a small dish. Lightly brush the oil mixture over portobellos and then on one side of each slice of bread. 3. Combine red peppers, tomato, feta, olives, vinegar, oregano and the remaining 1 tablespoon oil in a medium bowl. 4. Grill the mushroom caps until tender, about 4 minutes per side; grill the bread until crisp, about 1 minute per side. 5. Toss salad greens with the red pepper mixture. Place the grilled mushrooms top-side down on 4 half-slices of the bread. Top with the salad mixture and the remaining bread.
