Karen's One Pan Mediterranean Baked Halibut With Veggies image

Number Of Ingredients 12

2 pieces SAUCE: whole lemons, zest and juice of
1 cup olive oil
1 1/2 tablespoons freshly minced garlic
2 teaspoons dill weed (fresh dill is even better!)
1 teaspoon seasoning salt
1/2 teaspoon ground black pepper
1 teaspoon dried oregano
3/4 teaspoon ground coriander
1 pound FISH: green beans
1 pound cherry tomatoes
1 piece whole large yellow onion, sliced into half moons
1 1/2 pounds halibut fillets, sliced into 1 1/2 inch strips

Steps:

  • Preheat oven to450 degrees
  • In a large mixing bowl, whisk the sauce ingredients together Add the green beans, tomatoes and onions and toss to coat with the sauce (you can do this in batches if the bowl is too small).
  • With a large slotted spoon or spatula, transfer the veggies to a large baking sheet (21" x 15" for example). Keep the vegetables to one side or one half of the baking sheet and make sure they're spread out in one layer.
  • Now, add the halibut fillet strips to the remaining sauce, and toss to coat. Transfer the halibut fillet to the baking sheet next to the veggies and pour any remaining sauce on top.
  • Lightly sprinkle the halibut and veggies with seasoning salt.
  • Bake in 450 degrees heated oven for 15 minutes. Then transfer the baking sheet to the top oven rack and broiler another 3 to 5 minutes, watching carefully. The cherry tomatoes should begin to pop under the broiler.
  • When ready, remove the baked halibut and veggies from the oven. Serve immediately. Presentation looks great with veggies on the bottom of a platter and the fish on top.

1 onion, sliced
1/3 cup KRAFT Lite Zesty Italian Dressing
2 Tbsp. capers
2-2/3 cups hot cooked brown rice

Steps:

  • Preheat oven to 350°F. Arrange half of the tomato slices on bottom of 9-inch square baking dish; top with fish, onions and remaining tomatoes. Drizzle with dressing; sprinkle with capers.
  • Bake 20 to 25 min. or until fish flakes easily with fork.
  • Spoon rice onto serving platter. Top with the fish, vegetables and cooking juices.
