1 (16-oz) can Hormel chili without beans
1 (8-oz) package cream cheese
1 (16-oz) package shredded mild or sharp cheddar cheese
Nachos or chips, to serve

Steps:

  • Microwave the cream cheese in a 12x12-inch glass pie or Pyrex dish for 1 minute, or until cheese is easily spreadable.
  • Spread the cream cheese to coat the bottom of the dish completely.
  • Pour the Hormel chili over the cream cheese.
  • Top with shredded cheddar cheese.
  • Microwave the dip for 3 minutes or until cheese has melted.
  • Serve with nachos or chips.

1 pound ground beef
1 pound bulk pork sausage
1 small onion, chopped
2 jalapeno peppers, seeded and finely chopped
1 garlic clove, minced
1 can (15 ounces) chili con carne (without beans)
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of mushroom soup, undiluted
1 can (10 ounces) diced tomatoes and green chiles, drained
1 jar (4 ounces) diced pimientos, drained
1 package (2 pounds) Velveeta, cubed
Prepared taquitos, tortilla chips or corn chips

Steps:

  • In a large skillet, cook beef and sausage with onion, jalapenos and garlic over medium-high heat until meat is no longer pink, 5-7 minutes, crumbling meat. Using a slotted spoon, transfer to a 5-qt. slow cooker. Stir in chili, soup, tomatoes, pimientos and cheese. , Cook, covered, on low until heated through, 2-3 hours, stirring halfway through cooking. Serve warm with taquitos or chips.

8 ounces ground beef
1 tablespoon olive oil
1 small red onion, finely chopped
2 teaspoons ground cumin
1 1/2 teaspoons chili powder
2 cloves garlic, finely chopped
2 tablespoons all-purpose flour
1/2 cup light-colored beer
One 10-ounce can tomatoes and chiles, such as Ro-Tel, drained
3/4 cup milk
4 ounces (about 1 cup) Monterey Jack cheese, grated
4 ounces (about 1 cup) whole-milk mozzarella, grated
Minced cilantro and tortilla chips, for serving

Steps:

  • Cook the beef, stirring, in a dry medium skillet over medium-high heat until golden and starting to caramelize, about 5 minutes. Remove with a slotted spoon and pour off any excess liquid. Add the olive oil to the pan.
  • Reduce the heat to medium and cook the onions, stirring occasionally, until browned, 5 to 6 minutes. Add the cumin, chili powder and garlic and cook, stirring, until fragrant, about 1 minute. Sprinkle in the flour and cook, stirring, until the flour smells toasty, 1 minute. Pour in the beer and canned tomatoes and chiles, bring to a boil and cook 2 minutes. Gradually add the milk, whisking, and bring to a gentle boil until thickened, about 2 minutes. Add the cheeses and reduce the heat to low. Cook, stirring frequently, until the cheese fully melts, about 3 minutes. Stir in the reserved beef.
  • Transfer to a serving dish, garnish with cilantro and serve warm with chips.
