Steps:

  • Cook 2 chopped shallots in a skillet with 2 tablespoons butter over medium heat, about 3 minutes. Add 3/4 cup heavy cream, 2 cups Perfect Marinara Sauce (see Cook's Note) and a pinch of red pepper flakes; heat through. Stir in 1/4 cup grated parmesan and 1 to 2 tablespoons vodka; season with salt. Toss with penne.

2 tablespoons minced garlic
½ cup vodka (such as Ciroc®)
1 pint heavy whipping cream
1 (28 ounce) jar tomato sauce
1 (16 ounce) can crushed tomatoes
½ cup freshly grated Parmesan cheese
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh parsley

Steps:

  • Heat a large saucepan over high heat until the surface is very hot; add minced garlic and sear until brown, 1 to 2 minutes. Pour vodka into the saucepan, taking care to avoid any flames that ignite from the alcohol meeting the hot surface of the pan. Quickly pour cream into pan to douse the flames and stir; add tomato sauce, crushed tomatoes, Parmesan cheese, basil, and parsley.
  • Bring the mixture to a boil, remove from heat, and rest sauce long enough to let herbs flavor the sauce, 5 to 10 minutes.

This is the incredibly easy and always popular vodka sauce. There are certain flavors in tomatoes that are only brought out if you introduce alcohol into the sauce.

4 ounces pancetta bacon, diced
1 small sprig fresh rosemary
1 tablespoon olive oil
½ cup vodka
½ cup heavy whipping cream
freshly ground black pepper to taste
3 cups prepared marinara sauce
¾ cup water
1 (14.5 ounce) package multigrain penne pasta (such as Barilla®)
½ cup freshly grated Parmesan cheese

Steps:

  • Cook and stir bacon and rosemary sprig with olive oil in a large, deep skillet over medium heat until bacon renders its fat but is not crisp, about 5 minutes. Pour vodka into the skillet, standing back to avoid any flare-ups. Raise heat to high and continue to cook until the vodka reduces to about 2 tablespoons.
  • Pour heavy cream into skillet, stir briefly, and add black pepper; bring sauce to a boil. Reduce heat to medium; cook and stir until sauce has slightly reduced, 3 to 4 minutes. Mix marinara sauce and water into cream mixture and bring to a simmer. Lower heat and simmer sauce 20 to 25 minutes to blend flavors.
  • Fill a large pot with salted water and bring to a boil. Stir in penne and return to a boil. Cook pasta, stirring occasionally, until cooked through but still chewy, about 10 minutes; drain and return to pot. Pour sauce over penne and stir to combine. Turn off heat, cover pot with a lid, and let stand 5 minutes for pasta to absorb sauce. Serve sprinkled with Parmesan cheese.

1/4 cup vodka
1/8 teaspoon red pepper flakes (1/2 teaspoon for a good amount of spice, my personal preference)
1 tablespoon olive oil
3/4 cup chopped onions
2 1/2 teaspoons minced garlic
1/8 teaspoon salt
1 jar (26 to 32 oz.) marinara sauce
1/2 cup half-and-half cream
1/4 cup sour cream
1/4 cup vodka, optional (yes, a second 1/4 cup)
1/4 cup chopped fresh basil
2 tablespoons freshly grated parmesan cheese

Steps:

  • 1. combine 1/4 cup vodka and red pepper; set aside. 2. heat oil in large saucepan over medium-high heat. add onions; cook, stirring occasionally, until tender, 4 to 5 minutes. add garlic and salt; cook 1 minute more. 3. add vodka/red pepper mixture. cook over high heat until vodka is nearly evaporated. stir in marinara sauce and additional vodka (if desired); simmer 5 minutes. 4. add cream, sour cream, basil and parmesan; heat through, another 5-10 minutes or so. serve with your favorite hot pasta and enjoy! makes 4-6 servings.
