Feel free to use plain ketchup to top this delicious simple meatloaf recipe,or serve with ketchup on the side. I usually use 85% ground beef because of the flavor,but 90% will work as well.

2 lb ground beef
2 large eggs,lightly beaten
1/2 c milk
1 c bread crumbs, dry
1/2 c finely chopped onion
1 1/4 tsp salt
1/4 tsp ground black pepper
1/2 c ketchup(plus more for topping,if desired)
GLAZE TOPPING
4 Tbsp ketchup
4 Tbsp maple syrup
2 Tbsp dijon mustard
1 tsp worcestershire sauce

Steps:

  • 1. Preheat oven to 350.
  • 2. In a large bowl,combine the ground beef,eggs,milk,bread crumbs,onion,salt & pepper,and 1/2 cup ketchup. Mix until well blended and pack into a 9x5x3 inch loaf pan. Mix glaze topping and set aside. Bake the meatloaf for 1 hr and 10 min. Carefully drain off any excess grease and top with the glaze topping. Bake for 10 to 15 minutes longer. Remove from oven and let rest 5 minutes before serving.

1 1/2 lbs ground chuck
1 cup Italian style breadcrumbs
1 egg
2 cups ketchup
1/2 medium diced onion
1/4 cup green pepper
2 potatoes
3/4 cup ketchup
1/4 cup granulated brown sugar
1 teaspoon yellow mustard

Steps:

  • Sliced the potatoes about 1/4 inch thick. Diced the onion and finely dice the green pepper salt and pepper to taste.
  • Mix well in a large bowl the meat, diced onions, finely diced green pepper, breadcrumbs, egg and ketchup together by hand. Squish real well form into a loaf.
  • spray the bottom of the crock pot with non-stick spray.
  • place sliced potatoes on the bottom of the crock pot. This will help stop the sticking of the loaf and keep it from swimming in all the juices.
  • Place the loaf in the crock pot on top of the potatoes being sure not to let the loaf touch the sides of the crock pot.
  • mix the ketchup, brown sugar and yellow mustard in a small bowl. This is the topping.
  • pour over the entire loaf.
  • turn crock pot on low for 7-9 hours.

1 cup ketchup
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon soy sauce
1 teaspoon Worcestershire sauce
3 slices white bread, dampened with water and torn into 1/2-inch pieces
3 large eggs
1/2 teaspoon Tabasco Sauce
1 medium onion, coarsely grated
1 pound bacon

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • In large mixing bowl, using hands, gently knead together all ingredients except bacon until just combined. Transfer mixture to a 13 X 9-inch glass baking dish and mound into a 12 X 6-inch oval loaf. Spread bacon strips over loaf and bake until meat is firm and bacon is well done, about 1 hour.

1 small bell pepper, diced
1 onion, chopped
1 (6 ounce) can tomato paste
2 slices stale bread or 2 slices rolls
2 eggs
1 teaspoon cajun seasoning
1/2 teaspoon Tabasco sauce (more or less, to taste)
1 tablespoon gumbo file powder
1 teaspoon salt
2 tablespoons Worcestershire sauce

Steps:

  • Pre-heat oven to 350°F.
  • Combine all ingredients in a large mixing bowl and mix well by hand (a requirement, so that you can work in all the love).
  • Pat into ungreased loaf pan and bake for about 45 minutes, until done.

Steps:

  • Oven@ 400 Combine meatloaf ingredients in a large mixing bowl.
  • Shape meatloaf mixture into a loaf.
  • Place in a baking dish which has been sprayed with non-stick spray.
  • Drape the bacon slices over the meatloaf length-wise.
  • Bake for 30 minutes.
  • Reduce oven temperature to 350.
  • Bake for an additional 40 minutes.
  • *I use a meat thermometer. The meat should reach at least 160 degrees.*
  • Combine Southern Glaze ingredients.
  • Remove the meatloaf from the oven.
  • Using a pastry or a bbq brush, brush the glaze over and around the sides of the meatloaf.
  • Return meatloaf to the oven for an additional 5 minutes.
  • In a small sauce pan, combine Rosemary Gravy ingredients.
  • Heat on medium heat until hot.

1 1/2 tsp salt

16 oz tomato sauce
3 Tbsp white vinegar

  • 1. Preheat oven to 350 degrees.
  • 2. Mix together the beef, breadcrumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce
  • 3. Form this mixture into a loaf and place it in a shallow pan
  • 4. Stir together the remaining tomato sauce, vinegar, sugar, mustard, Worcestershire
  • 5. Pour this sauce over the meatloaf

1 onion, chopped
1 cup ketchup
1 cup Italian-seasoned bread crumbs
2 eggs

¼ cup water
3 tablespoons white wine vinegar
3 tablespoons brown sugar
2 tablespoons Dijon mustard
2 teaspoons Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x5-inch loaf pan.
  • Mix beef, onion, 1 cup ketchup, bread crumbs, eggs, salt, and pepper together in a bowl. Press beef mixture into a loaf in the prepared loaf pan.
  • Mix 1 1/2 cups ketchup, water, vinegar, brown sugar, mustard, and Worcestershire sauce together in a saucepan; cook and stir over medium heat until sauce is smooth and warm, about 10 minutes. Pour 1/3 the sauce over meatloaf.

2 lb lean ground beef
1/2 large onion, finely chopped
1/4 c celery ribs, finely chopped
1/2 c bread crumbs, seasoned
2 large eggs
1 slice day old bread, tore in small pieces
2 tsp creole seasoning
1/4 c whole milk
1 - 8 oz can of tomato sauce
1/3 c ketchup
2 Tbsp worcestershire sauce, divided
1 Tbsp ketchup
1 slice bacon ~ (optional)

Steps:

  • 1. Melt butter in a medium nonstick skillet over medium heat; add celery and onion, and sauté 7 minutes or just until tender. Let cool.
  • 2. Meanwhile, in a large bowl stir together ground beef, 2 eggs~lightly beaten,1/2 can of tomato sauce. 1 tablespoon Worcestershire sauce, breadcrumbs, celery mixture,and next ingredients. Shape into a 10- x 5-inch loaf, cut bacon in half, and put on top of loaf. Bake at 350°for 45 minutes.
  • 3. Stir together remaining 1 tablespoon Worcestershire sauce, tomato sauce, and 1 tablespoon ketchup until blended, pour evenly over meatloaf, and bake 15 to 20 more minutes, or until no longer pink in center. Let stand 10 minutes before serving.

BASIC MEATLOAF (SOUTHERN STYLE)

This is a meatloaf recipe that I really like by Diana Rattray, that I found on About.com. This recipe appeals to anyone that can appreciate a basic meatloaf with a southern style flare. And, any leftovers are really good sliced on sandwiches the following day. Diana suggests that you may wish to substitute 1/2 cup of ketchup or barbecue sauce (topping) in place of bacon according to your taste; I usually choose ketchup to avoid the extra calories!

  • Pack into a lightly greased loaf pan or form into a loaf and place on a lightly greased baking sheet with sides, such as a jelly roll pan. (I form into a loaf in a 9 X 13 pyrex baking dish).
  • Top meatloaf with sliced bacon, or your choice of ketchup or barbecue sauce.
  • Bake at 350° for 1 1/2 - 1 3/4 hours, or till 170 to 180 degrees.
  • Dianna suggests serving meatloaf with heated tomato sauce or gravy. (I suggest serving with garlic mashed potatoes and mixed vegetables for a comfort style meal).

• 1/2 pound fresh ground pork
• 1 cup dry bread crumbs

• 1 large egg
• 3 tablespoons butter
• 1/2 cup hot water

Steps:

  • Place a medium sized baking pan into a cool oven and heat oven to 350 degrees. Place the hot water into a large mixing bowl and add the butter. Stir until completely melted. Add all remaining ingredients and mix well. Shape mixture into a loaf and place in heated baking pan. Cook your meatloaf for approximately 40 minutes or until an internal temperature of 170 degrees has been reached. Don't overcook or the meatloaf will be dry. You may serve this southern meatloaf either hot or cold. My kids like to use ketchup when eating this, but I prefer sauteed onions on the top of mine. This recipe also freezes well, so it can be a good idea to double the recipe and make 2 loaves of meatloaf at once. It will take a bit longer to cook 2 meatloaves, but use an internal meat thermometer to test for doneness. Cool 2nd meatloaf completely before covering in freezer wrap and storing in your freezer for another night. Thaw in your refrigerator and reheat in 350 degree oven. Cover the meatloaf with aluminum foil while reheating to make sure the meatloaf doesn't dry out.

1 pound ground beef
1 pound ground pork
1 pound ground veal
1 cup bread crumbs
2 teaspoon salt
1 ½ teaspoons pepper
2 tablespoons Worcestershire sauce
2 eggs (beaten)
1 onion (chopped)
1 green bell pepper (chopped)
1 cup ketchup
¼ cup brown sugar
2 tablespoons yellow mustard
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 375 degrees.
  • Add the ground beef, ground pork and ground veal (if using) to a large mixing bowl, or the bowl of a stand mixer.
  • Using either your hands, a sturdy wooden spoon, or the mixer paddle, combine the ingredients until just mixed. Don't overwork and overmix the ingredients. If using a stand mixer, use the lowest possible speed and stop when the ingredients are just combined.
  • Divide the mixture in half and shape it into two loaves on a baking pan lined with either aluminum foil or parchment paper.
  • In a small bowl, stir together the topping ingredients until well mixed.
  • Pour half of the topping over the loaves and set aside the remainder.
  • Cook the meatloaves for one hour. Add the remaining topping when 20 minutes of cooking time remains.
  • Remove from the oven when the internal temperature reads between 160 and 165 degrees on a meat thermometer. Remove from the oven and let stand 15 minutes before serving.
