1 egg
1/4 cup milk
1/3 cup breadcrumbs
3 tablespoons onions, chopped
1/4 teaspoon salt
1/8 teaspoon rubbed sage
1 dash pepper
1/2 lb lean ground beef
1/4 cup ketchup
2 tablespoons brown sugar
1/4 teaspoon Worcestershire sauce

Steps:

  • In a large bowl, beat the egg.
  • Add the milk, crumbs, onion, salt, sage and pepper.
  • Crumble beef over the egg mixture and mix well.
  • Shape into two loaves.
  • Place in a shallow bakining dish coated with cooking spray.
  • Combine the catchup, brown sugar and Worcestershire sauce.
  • Spoon over the meatloaves.
  • Bake at 350 degrees for 40-45 minutes or until the meat is no longer pin and and a meat thermometer reads 160 degrees; drain.

The original recipe was found in the 1998 edition of Taste of Home's " The Best of Country Cooking ".I did add alot of different ingredients that wasn't in the original, but I still wanted to thank Kim McMurl of Fargo, North Dakota for sending the original into them.Make sure to let meatloaf " rest " for a few minutes, so it won't fall apart when you slice it. Submitted to " ZAAR " on October 28, 2009.

1 egg
3 tablespoons milk
1/2 teaspoon Worcestershire sauce
1 1/2 teaspoons dried onion flakes (to taste)
1/2 teaspoon salt (to taste)
1/4 teaspoon ground black pepper
1/4 cup Italian seasoned breadcrumbs
1/4 teaspoon oregano
1/4 teaspoon crushed red pepper flakes
1/2 lb uncooked ground pork
1/3 cup brown sugar
1/4 cup ketchup
1 tablespoon vinegar
1/4 teasppon dry mustard

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl mix well the first 9 ingredients.
  • Add pork and mix well.
  • Shape into a loaf and place into a small greased rectangular baking dish.
  • Mix together topping ingredients, and pour over meatloaf.
  • Bake uncovered, at 350 degrees for 1 hour or until no longer pink.

CLASSIC MEATLOAF

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

I found this recipe in the "Eating For 2" recipe magazine. I've made this recipe a few times, and both my husband and I like it. I always make a double batch and freeze half for another meal.

1/4 cup 2% low-fat milk
1/3 cup crushed saltine
3 tablespoons chopped onions
1/4 teaspoon salt
1/8 teaspoon rubbed sage
1 dash pepper
1/2 lb lean ground beef
1/4 cup ketchup
2 tablespoons brown sugar
1/4 teaspoon Worcestershire sauce

Steps:

  • In a bowl, beat the egg. Add milk, cracker crumbs, onion, salt, sage and pepper. Crumble beef over mixture and mix well. Place mixture into 2 mini loaf pans or shape into 2 loaves and place in a shallow baking dish coated with nonstick cooking spray.

8 ounces ground chuck
2 tablespoons grated onion
2 tablespoons chopped parsley
3 tablespoons chili sauce
1 tablespoon Worcestershire sauce
Salt and pepper, to taste

Steps:

  • 1. Preheat the oven to 350°F. Place the chuck, onion, parsley, 2 tablespoons of the chili sauce, the Worcestershire, salt, and pepper in a bowl. Toss together lightly.
  • 2. Form the meat into a 5-inch by 3-inch oval loaf in a small baking pan. Spread the remaining tablespoon of chili sauce all over the surface of the meatloaf. Bake for 30 minutes, or until cooked through. Do not overbake.

2 tablespoons olive oil
1/2 medium red onion, diced
Kosher salt and freshly ground black pepper
1/2 cup ketchup
1 tablespoon harissa
1/2 pound 80/20 ground beef
1/2 pound ground lamb
3/4 cups plain dried breadcrumbs
1/2 cup whole milk
1 large egg, lightly beaten
1/4 cup chopped cilantro leaves
Small handful fresh mint leaves, chopped
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon sweet paprika

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C). Line a small baking sheet with parchment paper.
  • Heat the oil in a medium nonstick skillet over medium-high heat. Add the onions, season with salt and cook, stirring occasionally, until softened, about 5 minutes.
  • Meanwhile, combine the ketchup and harissa in a small bowl.
  • Put the beef, lamb, breadcrumbs, milk, beaten egg, cilantro, mint, coriander, cumin and paprika in a large bowl. Season with salt and pepper.
  • Add the sauteed onions and using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf.
  • Pour the ketchup-harissa glaze on top of the meatloaf and spread all over until the sides and top are coated. Bake the meatloaf until the edges have browned, about 45 minutes.
  • Allow the meatloaf to rest for at least 15 minutes before cutting and serving.

1 Tbsp fat free milk
1 egg white
2 tsp worcestershire sauce
1/2 lb extra lean ground beef
2 Tbsp dry bread crumbs
1/4 tsp salt
1/4 tsp pepper
2 Tbsp barbecue sauce

Steps:

  • 1. In a medium bowl, beat milk, egg and Worcestershire sauce with a fork. Mix in beef, bread crumbs, salt and pepper.
  • 2. Shape into 2 (4-by-2-1/2-inch) loaves. Place in an ungreased 8-inch square pan. Brush loaves with barbecue sauce.
  • 3. Bake in a preheated 350-degree oven for 18-22 minutes until meat thermometer inserted in center of loaf reads 160 degrees. Let stand 5 minutes before serving. Serve with mashed potatoes.
