CHEF JOHN'S GRILLED BACON MEATLOAF BURGERS



Chef John's Grilled Bacon Meatloaf Burgers image

I love meatloaf, but not as much as I love meatloaf sandwiches. In fact, I'll make a meatloaf just for the leftovers. I'll fry the cold slice in a buttered pan until hot and crusty, and enjoy it on toast with ketchup. This recipe is basically that, plus bacon, in burger form.

1 large egg, beaten
1 tablespoon ketchup
2 teaspoons Worcestershire sauce
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon brown sugar
½ teaspoon onion powder
¼ teaspoon garlic powder
pinch dried thyme
cayenne pepper to taste
¼ cup plain bread crumbs
⅔ cup chopped cooked bacon
1 pound ground chuck beef (85% lean)

Steps:

  • Whisk egg, ketchup, Worcestershire sauce, salt, brown sugar, onion powder, garlic powder, thyme, and cayenne pepper together in a bowl. Add breadcrumbs and chopped cooked bacon. Crumble in the ground beef. Mix with your fingers until bacon and breadcrumbs are distributed evenly.
  • Form mixture into 4 burgers with your wet hands. Cover with plastic wrap and refrigerate until chilled thoroughly, about 3 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place burgers on the grate and cook, turing occasionally, until firm and cooked to your desired doneness. An instant-read thermometer inserted into the center should read between 145 and 150 degrees F (63 degrees C). Let burgers rest for a few minutes before serving.

1 1/2 cups ketchup
1 1/2 teaspoons apple cider vinegar
2 tablespoons sriracha
1/2 teaspoon freshly ground black pepper
1 tablespoon olive oil
1/2 white onion, chopped
8 to 10 fresh oregano leaves, finely chopped
2 sprigs fresh thyme, finely chopped
1 teaspoon kosher salt
Freshly ground black pepper
2 stale slices white bread, rubbed between hands to make sand
1 large egg
One 212-milliliter jar sun-dried tomato or basil pesto (about 3/4 cup)
2 teaspoons Worcestershire sauce
2 ounces freshly grated Parmesan
2 cloves garlic, grated on a rasp
1 pound ground chuck (80/20)
3 to 4 burger buns, warmed
Thin potato chips, for topping

Steps:

  • For the sauce: Combine the ketchup, vinegar, sriracha and pepper in a small pot. Simmer, stirring occasionally, until reduced slightly, 10 to 15 minutes. Remove and refrigerate.
  • For the patties: Add the olive oil to a small pan on medium-high heat, then add the onion, oregano, thyme, salt, pepper and 1 tablespoon water. Stir to coat everything and cook until the onions are translucent but not browned, 3 to 5 minutes.
  • Meanwhile, combine the bread, egg, pesto, Worsterschire sauce, Parmesan and garlic in a medium bowl. Add the sauteed onions to the breadcrumb mixture and stir to completely combine. Break up the beef in a large bowl with your hands or a wooden spatula. Add the breadcrumb mixture and gently mix together.
  • Preheat the grill for cooking with direct and indirect heat at 350 degrees F or heat a pan over medium-high heat.
  • Evenly divide the mixture into 3 or 4 balls and form into patties. Place on the direct heat of the grill or into the pan. Cook on one side until the patties release, 5 to 6 minutes, then flip, transferring to the indirect heat of the grill. If using a pan, simply lower the heat and cover the patties with a lid or upside-down metal bowl. Cook until the internal temperature reaches 160 degrees F, 5 to 6 minutes more. Remove from the heat and let rest, covered, for 5 minutes.
  • For the burgers: Add a patty to each bun bottom, then top with the sauce and a pile of potato chips. Top with the bun tops. Enjoy!

A meatloaf style turkey burger that's moist and flavorful. My kids love these burgers and don't realize it's a lighter alternative to beef burger. My kids just slap on some mayo and head to town. Great served with lettuce, tomato, and your choice of condiments, with a side of chips or raw crispy veggies.

1 ⅓ cups seasoned bread crumbs
1 small onion - grated, and juice drained
2 eggs
3 tablespoons applesauce
2 teaspoons chili powder
1 teaspoon paprika
1 teaspoon kosher salt
2 tablespoons olive oil
8 hamburger buns, split

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix the turkey, bread crumbs, onion, eggs, applesauce, chili powder, paprika, and kosher salt in a large bowl until thoroughly combined. Divide mixture into 8 equal portions, then shape into patties.
  • Heat olive oil in a large skillet over medium-high heat. Arrange the patties in the skillet and cook until browned, 3 to 5 minutes on each side. Place the browned patties on a paper towel-lined plate to drain. Transfer the patties to a 9x13-inch baking dish.
  • Bake the turkey burgers in the preheated oven until no longer pink in the center and the juices run clear, about 10 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Serve the turkey burgers on the hamburger buns.

4 slices white bread - soaked with water, squeezed out and broken into tiny pieces
3 eggs
½ cup grated Romano cheese
1 teaspoon dried parsley

Steps:

  • In a large bowl, combine the ground beef, bread, eggs, cheese, parsley and onion and season with salt and pepper to taste.
  • For meatballs: Form mixture into golf size balls and brown in a large skillet over medium heat for 5 to 10 minutes, or until well browned. Add to your favorite spaghetti sauce and simmer until meatballs are completely cooked through, about 15 to 20 minutes.
  • For meatloaf: Preheat oven to 350 degrees F (175 degrees C). Add 3 tablespoons ketchup to mixture, mix well, form into a loaf and place in a 9x13 inch baking dish. Bake at 350 degrees F (175 degrees C) for 75 to 90 minutes.
  • For burgers: Add 3 to 4 tablespoons steak sauce to mixture, mix well and form into patties. Saute in a large skillet over medium heat for 10 to 15 minutes, or to desired doneness.

Steps:

  • In a large bowl, combine beef, breadcrumbs, scallions, garlic, 1/2 cup chili sauce, egg, chili powder, cumin, 1 teaspoon salt, and 1/2 teaspoon pepper. Using your hands, mix just until combined; do not overmix.

I made these burgers a long time ago and wondered why I haven't had them in so long as I really liked them. If you like meatloaf sandwiches then you will like this version, only you don't have to make a meatloaf first. Serve on a bun and put whatever toppings you like on these. Or if you want, eat without the bun, they are good...

1/2 envelope dry onion soup mix
1 1/2 tsp worcestershire sauce
1/2 c crushed saltine crackers
1 large egg, slightly beaten
2 Tbsp ketchup

  • 1. Preheat oven to 450 degrees. Spray a baking sheet with cooking spray; set aside.
  • 2. In a medium bowl, mix all ingredients. Do not over mix. Divide beef mixture into 4 or 6 equal portions, depending on what size patty you want. Place on prepared baking sheet.
  • 3. Transfer to oven; bake about 5 to 7 minutes, flip over for about another 5 to 7 minutes, until burgers are cooked through. Watch time as it depends on the size of your patty. Can fry these as well. I have done both.

1 small onion, chopped

1 tablespoon plus 1 teaspoon extra-virgin olive oil, plus more for brushing
2 tablespoons low-sodium soy sauce
2 pounds ground dark turkey
4 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
1 slice soft white bread, torn into pea-size pieces (1 cup)
Coarse salt and freshly ground pepper
3 tablespoons Heinz Chili Sauce, plus more for brushing
1/2 cup mayonnaise
2 cups packed finely shredded kale
1/2 teaspoon balsamic vinegar
8 potato rolls, split
4 tablespoons unsalted butter, melted

Steps:

  • Drain 1 jar relish in a sieve; discard liquid. Pulse 2/3 cup drained relish with onion and garlic in a food processor until finely chopped.
  • Heat 1 tablespoon oil in a skillet over medium-high; add relish mixture. Cook, stirring, until a thick paste forms, about 7 minutes. Stir in soy sauce. Transfer to a bowl; let cool 5 minutes. Stir in turkey, Worcestershire, mustard, bread, 1 1/2 teaspoons salt, and pepper to taste. Form into 8 patties, each about 4 inches in diameter. Refrigerate, covered, at least 1 hour and up to 8 hours.
  • Preheat grill to medium. Brush both sides of burgers with oil, then brush grates. Grill 5 minutes. Flip; lightly brush tops with chili sauce and grill until a thermometer inserted into centers registers 165 degrees, 5 to 6 minutes more.
  • Combine chili sauce and mayonnaise. Drizzle kale with vinegar and remaining 1 teaspoon oil; season with salt and pepper. Brush split sides of rolls with butter; grill until lightly toasted. Sandwich burgers in rolls with chili-sauce mixture, remaining relish, and kale.

Growing up one of my favorite sandwiches was one my Grandmother made which was a grilled cheese and meatloaf sandwich. That's what gave me this idea for these burgers and they are just delicious.

3 slice bacon
1 lb ground chuck
1/2 c plain bread crumbs
3 Tbsp milk
splash of worcestershire sauce
1 Tbsp minced onion
1/4 tsp chili powder
1/4 tsp garlic powder

3 Tbsp ketchup
1 Tbsp mustard
1 Tbsp honey

Steps:

  • 1. Line a baking sheet with tinfoil and place the bacon on the tinfoil and put in a 350 degree oven for 12-15 minutes or until crispy.
  • 2. Meanwhile, in a large bowl combine ground chuck, bread crumbs, milk, worcestershire sauce, minced onion, chili powder and garlic powder. Once the bacon is done, remove to a paper towel lined plate to drain and then crumble into the meat mixture, add the cheese and mix well. Divide the meat into four portions and make into patties. Drain off the bacon grease from the baking sheet and place the burgers on the baking sheet (that little hint of bacon grease left on the tinfoil is very flavorful).
  • 3. Whisk together the ketchup, mustard and honey and brush the tops of the burgers. Place in a 350 degree oven for 25 minutes.

1 large zucchini (about 4 cups) finely grated after seeds are removed and skin is left on
3 large onions (minced) (3 cups)
10 slice(s) bread (crumbled)
4 large eggs (beaten with liquid from zucchini)
5 large cloves garlick (minced fine)
2 tablespoon(s) dry basil
1 teaspoon(s) each: salt, pepper, onion powder, cayenne pepper
2 teaspoon(s) each: garlic powder, dry oregano

Steps:

  • In a very large bowl (a roast pan will work too), put in onions and zucchini you prepared. Tilt the bowl by placing a folded towel under the end where the veggies are at. Add the eggs to the zucchini liquid. Beat together well. Add the spices and garlic, beat together and stir in the bread crumbs (the bread crumbs will soak up the liquid and be thick) Mix the veggies in well. (Depending on size and thickness of bread slices, you may need to add more bread). This should be about the same thickness as the meats.
  • Add the two meats in and knead with your hands to blend all together well. Let this sit for five minutes.
  • BURGERS: Form 14 of the size patties you like. Either cook on the outdoor grill or in a skillet. Make them into burgers on a bun the way you like them, or make Salisbury Steaks of them by making a thick gravy to go over them and serve with mashed potatoes and veggies.
  • Place patties on metal baking sheet. Freeze.
  • When totally frozen, place the patties into zipper bags with wax paper between the patties. Place back into the freezer until ready to use them.
  • MEATLOAF: Form into a loaf shape and bake in a 8x8 or 9x9 inch pan (be sure to leave room all the way around the "loaf" for fat drippings). Place in a 350 degree oven and bake for 45 minutes or until done to your liking. Cool and Freeze until needed. Or if serving right away, During the last 15 minutes of baking, drain the oil from the pan and pour either a large can of tomato soup or a large can of spaghetti sauce over the top of the meatloaf and return it to oven to finish baking. Serve with mashed potatoes and corn.
  • *** You can make many recipes using this meat mixture. *** Sometimes when I am in a hurry, I just freeze the raw mixture in zipper bags for future use.

1/2 pound ground veal or turkey
1/2 cup sour cream
1/2 cup fresh bread crumbs (see "how to make fresh bread crumbs" below)
1/4 cup Dijon mustard
2 teaspoons kosher salt
1 teaspoon freshly milled black pepper
1/3 cup chili sauce (the kind you serve with shrimp cocktail or you can make your own by combining 2/3 ketchup with 1/3 bottled horseradish)

Steps:

  • 1. Heat 1 tablespoon of the oil in a large ovenproof skillet over high heat until hot. Reduce the heat to medium; add the onion, celery, and garlic and cook, stirring occasionally, until softened, about 5 minutes. Transfer to a rimmed baking sheet, spreading out the mixture, and place in freezer to cool slightly. Combine the beef, pork, veal, sour cream, bread crumbs, 2 tablespoons of the mustard, the salt, and pepper; stir in the onion mixture. Shape into 6 equal burgers. 2. Heat the remaining tablespoon of oil in the skillet over high heat until hot; reduce the heat to medium and add the burgers to the pan. Cook the burgers for 6 minutes a side or until they are almost cooked through (nice and pink; they should be almost firm to the touch and have very little pink color inside). Transfer the burgers to a rimmed baking sheet. 3. Meanwhile, combine the chili sauce and the remaining 2 tablespoons mustard. Preheat the broiler to high. Spoon the chili sauce over each burger to cover well and place the skillet under the broiler. Broil for 2 minutes or until the topping begins to bubble.

FRIED MEATLOAF BURGERS

This is a recipe I threw together, with some of the family meatloaf I made earlier in the month. It is super easy, super fast, and super tasty. Serve them up in your favorite bun with your fave condiments.

1/2 of 1 meatloaf recipe
2 cups hot and spicy Cheez-It crackers
1/4 cup barbecue sauce
1 egg
2 tablespoons vegetable oil
4 slices swiss cheese

Steps:

  • Cut the meatloaf into 1 inch thick slices, once thawed.
  • Beat the egg and barbecue sauce together.
  • Crush the Cheez-Its in a plastic bag with your rolling pin.
  • Dip each slice of meatloaf into the egg and barbecue mixture and then into the cheez-Its.
  • Fry them in a hot skillet with the vegetable oil.
  • Cook on each side, approximately 3 minutes, until browned on each side, and hot all the way through.
  • Top with swiss cheese. And throw em on a bun, and enjoy!

1 1/2 lbs ground beef
1 egg
2 tablespoons Worcestershire sauce
1 tablespoon onion powder
1/2 cup ketchup
1 teaspoon garlic powder
2 tablespoons vegetable oil
1 cup breadcrumbs
salt and pepper

Steps:

  • In a large bowl, combine ground beef, egg, bread crumbs,1 tablespoon worcestershire sauce, onion powder, garlic powder, ketchup, salt and pepper. Mix well and form patties.
  • Heat oil and remaining worcestershire sauce to below smoking point in a skillet and fry to desired doneness. You may also broil these to desired doneness.

2 pounds ground beef
4 slices white bread - soaked with water, squeezed out and broken into tiny pieces
3 eggs
1/2 cup grated Romano cheese
1 teaspoon dried parsley
1/4 cup minced onion (optional)
salt and pepper to taste
3 tablespoons ketchup
4 tablespoons steak sauce

Steps:

  • In a large bowl, combine the ground beef, bread, eggs, cheese, parsley and onion and season with salt and pepper to taste. For meatballs: Form mixture into golf size balls and brown in a large skillet over medium heat for 5 to 10 minutes, or until well browned. Add to your favorite spaghetti sauce and simmer until meatballs are completely cooked through, about 15 to 20 minutes. For meatloaf: Preheat oven to 350 degrees F (175 degrees C). Add 3 tablespoons ketchup to mixture, mix well, form into a loaf and place in a 9x13 inch baking dish. Bake at 350 degrees F (175 degrees C) for 75 to 90 minutes. For burgers: Add 3 to 4 tablespoons steak sauce to mixture, mix well and form into patties. Saute in a large skillet over medium heat for 10 to 15 minutes, or to desired doneness.

SOUTHWESTERN MEATLOAF BURGERS

This can be a make-ahead or right away recipe. Very fun and unique! If you like, modify the recipe to be just a traditional-sized meatloaf.

1 1/4 lbs ground chuck
1/4 cup plain breadcrumbs
1 cup minced scallion
4 garlic cloves, minced
1/2 cup tomato chili sauce, plus
3 tablespoons tomato chili sauce
1 large egg, lightly beaten
1 tablespoon chili powder
2 teaspoons ground cumin
salt and pepper

Steps:

  • Preheat oven to 425°F.
  • n a large bowl, combine beef, breadcrumbs, scallions, garlic, 1/2 cup chili sauce, egg, chili powder, cumin, 1 teaspoon salt, and 1/2 teaspoon pepper.
  • Using your hands, mix just until combined.
  • Divide beef into 4 equal portions; form each portion into a patty, about 1.5 inches thick.
  • At this point, you may choose to cover each patty with plastic wrap and refrigerate overnight; if not, go onto the next step.
  • Transfer patties to rimmed baking sheet.
  • Bake until brownmed, about 15 minute.
  • Brush tops and sides of patties with remaining chili sauce.
  • Return to oven , cook 5-10 minutes more.
  • Serve with jalapeno slices and warm tortillas, if desired.

BACON-TOPPED MEATLOAF BURGERS

Instead of turning a meatloaf into a red-centered burger-loaf, why not turn a burger into a tender, juicy meatloaf patty? You get the inimitable meatloaf flavors of beef laced with ketchup and onion but in a far more delectable form. Simply broil the burgers until they are just past purple on the inside, and seared mahogany brown on the outside. This takes about five minutes - 55 minutes less than a traditional meatloaf. Put the patties on a potato bun and bite in. The meat is juicy enough to soak the roll, and is flavored in that meatloaf manner - brawny yet barely sweet, porky from the bacon, aromatic with herbs, onion and garlic, all commingled with a deep, beefy flavor. Excellent!

3 tablespoons ketchup
2 tablespoons Dijon mustard
1 teaspoon Worcestershire sauce
1 1/2 pounds ground beef, or a combination of beef, pork and veal
1/2 cup finely chopped onion
1 tablespoon chopped fresh thyme leaves or 1 teaspoon dried thyme
1 garlic clove, minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
6 slices bacon, cut into thirds crosswise
Burger buns and trimmings like pickles, tomato, lettuce and mayonnaise, if desired

Steps:

  • Preheat broiler. Position oven rack 4 inches from heat. In a small bowl, mix together ketchup, mustard and Worcestershire sauce. In a separate medium bowl, mix together the meat, onion, thyme, garlic, salt and pepper. Mix in half the ketchup mixture, reserving other half as a glaze.
  • Form meat mixture into six equal patties, about 1 1/4 inches thick. Transfer patties to a baking sheet. Brush each patty with glaze.
  • For rare burgers, broil for 1 minute, then add bacon slices to tops of patties and continue broiling until bacon is browned and meat is cooked as desired, about 4 minutes longer. For medium, add bacon after 2 minutes of broiling, and for well-done, after 3 minutes. Serve with buns and trimmings if desired.
