1 1/2 lb lean (at least 80%) ground beef
1/2 cup finely chopped onion (about 1 medium)
1/2 cup Progresso™ plain bread crumbs
1/2 teaspoon salt
1/8 teaspoon pepper
2 eggs, slightly beaten
1 bottle (12 oz) chili sauce (1 1/2 cups)
1/2 can (16-oz size) jellied cranberry sauce (1 cup)
60 fresh cranberries, if desired

Steps:

  • Heat oven to 375°F. In large bowl, stir meatball ingredients until well mixed. Shape into 1-inch balls; place in ungreased 15x10x1-inch pan.
  • Bake 25 to 30 minutes or until meatballs are thoroughly cooked and no longer pink in center.
  • Meanwhile, in 3-quart saucepan, stir sauce ingredients until well blended. Heat to boiling over medium heat. Reduce heat to low; simmer 5 minutes, stirring occasionally.
  • Add meatballs to sauce; stir to coat. Cook over medium heat about 5 minutes, stirring occasionally, until thoroughly heated. Thread cranberries on toothpicks; stick toothpicks in meatballs to serve.

I make these nearly every year for our Christmas gathering and they are always eaten up in no time! If I have time I'll make and use the meatballs from my basic meatball recipe # 8060. Enjoy!

2 (2 lb) bags cocktail meatballs, 1-inch in size
1 (16 ounce) can ocean spray jellied cranberry sauce
1 (12 ounce) bottle chili sauce
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper

Steps:

  • Combine cranberry sauce, chili sauce, cumin and cayenne pepper in a large saucepan.
  • Cook over medium heat, whisking occasionally, until the cranberry sauce is melted and smooth.
  • Add meatballs; stir gently to coat.
  • Cook over medium-low heat, stirring occasionally, 30 minutes or until the meatballs are heated through.
  • Place in a chafing dish or slow cooker to keep warm during the party or gathering.

Steps:

  • Heat oven to 375.
  • In large bowl, combine ground beef, onion, breadcrumbs, salt, pepper and eggs; blend well.
  • Shape into 1 inch meatballs; place in ungreased 15x10x1 inch baking pan.
  • Bake at 375 for 25 to 30 minutes our until meatballs are browned and no linger pink in center.
  • Meanwhile, in large saucepan, combine sauce ingredients; blend well.
  • Bring to a boil over medium heat.
  • Reduce heat to low; simmer 5 minutes, stirring occasionally.
  • Add meatballs to sauce; stir to coat.

2 - 32 oz pkgs. frozen meatballs (homestyle - not italian style)
2 can(s) cranberry sauce (jellied)
1/4 c brown sugar
2 Tbsp prepared mustard
6 Tbsp apple cider vinegar

Steps:

  • 1. In a saucepan, combine the cranberry sauce, the brown sugar, the mustard, and the apple cider vinegar.
  • 2. Cook and stir over medium heat until the cranberry sauce is melted.
  • 3. Put the frozen meatballs in a six quart crockpot and pour the cranberry glaze over the meatballs.
  • 4. Cook on high 4-6 hours or until hot. Serve hot and enjoy!

Olive oil, for oiling baking tray and brushing meatballs
¾ lb (375 g) ground pork
½ cup (125 mL) chopped Italian parsley
2 cloves garlic, minced
One 1-inch (2.5-cm) slice French bread, crusts removed,
soaked in water and squeezed dry
½ tsp (2 mL) 5-spice powder
1 large egg, beaten to mix
Salt and freshly ground pepper
Cranberry Glaze
½ tsp (2 mL) olive oil
1 clove garlic, minced
1 tsp (5 mL) chili paste
¼ tsp (1 mL) sesame oil
¾ cup (175 mL) canned jellied cranberry sauce
4 tsp (20 mL) soy sauce
1 tsp (5 mL) honey
1 tsp (5 mL) oyster sauce

Steps:

  • 1. Preheat oven to 400ºF (200ºC) and brush a baking sheet with olive oil. 2. In a medium bowl combine pork, parsley, garlic, soaked bread, 5-spice powder, egg and salt and pepper to taste. Mash together with hands to mix well. With wet hands, roll the mixture into 24 equal balls, about 1-inch (2.5-cm) each. Place meatballs on greased baking sheet and brush lightly with olive oil. Bake meatballs 15 minutes and flip them over (you may need to use a metal spatula to unstick meatballs from pan). Turn on broiler and continue cooking meatballs for 5 to 10 minutes or until crispy and cooked to desired doneness. 3. To make the cranberry glaze, heat olive oil in a small saucepan over medium-low heat. Add garlic and cook for about 5 minutes or until softened but not browned. Whisk in chili paste, sesame oil, cranberry sauce, soy sauce, honey and oyster sauce. Simmer 2 to 3 minutes. 4. Remove meatballs from oven and transfer to a large bowl. 2 tablespoons honey
2 tablespoons soy sauce
1 tablespoon sesame seeds (toasted)

  • Combine all ingredients except meatballs in a large saucepan.
  • Cook until hot.
  • Stir in meatballs.

2 pounds (900g) ground pork
3/4 cup (80g) bread crumbs
1/3 cup (80ml) whole milk
2 large eggs
1 1/2 teaspoons ground allspice, or a spice mixture, such as pumpkin pie spice (see headnote)
3/4 teaspoon salt
3/4 teaspoon fennel seeds, lightly crushed
2 cloves garlic, peeled and minced
freshly ground black pepper
optional: 1/2 - 1 fresh chili pepper, seeded and finely diced
One 14-ounce (396g) can whole cranberry sauce
3 tablespoons cider vinegar
2 tablespoons orange juice
2 tablespoons brown sugar, light or dark
1 tablespoon Dijon mustard
1 tablespoon minced fresh ginger
1-2 teaspoons sriracha, or another hot sauce, to your liking
1/2 teaspoon salt
freshly ground black pepper

Steps:

  • 1. To make the meatballs, in a medium bowl, mix the pork, breadcrumbs, milk, eggs, spice mixture, salt, fennel, garlic, a few turns of black pepper, and the chopped chili, if using. 2. If planning to bake the meatballs, preheat the oven to 375ºF (190ºC) and line a baking sheet with parchment paper. Shape the meat mixture into meatballs, roughly the size of an unshelled walnut, and place them on the baking sheet. Bake the meatballs until cooked through, about 12 minutes. (If you want to pay fry them, heat some oil in a large skillet and fry them until cooked through. You may need to work in batches, depending on the size of your pan.) 3. While the meatballs are cooking, puree the cranberry sauce in a blender or food process, and pour it into a large, wide saucepan or Dutch oven.
