Number Of Ingredients 10

2 large eggs
1/4 cup water
1 small onion, finely chopped
1-1/3 cups soft bread crumbs
2/3 cup grated Parmesan cheese
2 garlic cloves, minced
2 teaspoons Italian seasoning
1-1/2 teaspoons salt
1/4 teaspoon pepper
2 pounds ground beef

Steps:

  • Preheat oven to 375°. In a large bowl, combine eggs, water, onion, bread crumbs, Parmesan cheese, garlic and seasonings; mix well. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Place meatballs on greased racks in shallow baking pans. Bake, uncovered, until no longer pink, 15-18 minutes. , Freeze option: Freeze cooled meatballs in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in the microwave.

2 slices white bread
1 cup water
1/4 pound ground veal
1/4 pound ground beef chuck
1/4 pound ground pork
1/4 cup minced onions
2 teaspoons minced garlic
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/4 finely chopped green onions
2 quarts beef stock
1/2 pound dried pasta sheets, broken into small pieces
1 pound Swiss chard, cleaned, stemmed and shredded
4 ounces Parmigiano-Reggiano, grated

Steps:

  • Place the bread in a shallow bowl and pour the water over the bread. Allow to sit for 10 minutes. Remove the bread from the bowl, squeezing out the excess liquid. In a mixing bowl, combine the bread, meats, onions, garlic, salt, pepper, and green onions. Mix well.
  • Form the meat mixture into small balls, about the size of a quarter. Bring the beef stock to a simmer, add the meatballs and cook for 25 to 30 minutes. Add the pasta and Swiss chard, and continue to cook until the pasta is tender, about 6 to 8 minutes. To serve, ladle the soup into individual bowls. Garnish with the cheese.

1 lb hamburger
1/3 c evaporated milk
1/4 c catsup
1 Tbsp dried parsley flakes
1 Tbsp prepared mustard
1 tsp salt
1/4 tsp pepper
1 can(s) 10 1/2 oz can cream of chicken soup
1/2 c shredded swiss cheese
1/3 c evap milk
1/4 c water
2-3 drops tabasco sauce

Steps:

  • 1. Mix beef, 1/3 cup evap milk, catsup, parsley flakes, mustard, salt and pepper. with wet hands, shape into 16 meat balls about 1 1/2 inch diameter. Put in a shallow baking pan. Bake in 350 oven for 20 minutes or until brown. Drain. Mix soup, cheese, 1/3 cup evap milk, water and tabasco. Pour over meat balls and bake 10 min more or until bubbly. Sprinkle with parsley flakes. Makes about 4 servings.
