⅓ cup bread crumbs
1 ½ teaspoons Worcestershire sauce
½ teaspoon salt
1 ½ pounds ground beef
4 cups beef broth
1 (28 ounce) can whole peeled tomatoes
1 (12 ounce) can corn, drained
2 cups chopped celery
2 cups shredded cabbage
1 medium onion, chopped
1 small zucchini, chopped
½ cup dry red wine
1 tablespoon dried parsley
1 teaspoon dried oregano
¼ teaspoon dried basil
⅛ teaspoon garlic powder
salt and ground black pepper to taste
1 cup broken spaghetti

Steps:

  • Combine milk, bread crumbs, Worcestershire sauce, and salt in a large bowl. Add ground beef and mix well. Shape into 36 to 48 meatballs.
  • Heat a large nonstick skillet over medium heat. Cook meatballs in batches until browned, 2 to 3 minutes per side. Transfer to a plate and set aside.
  • Combine beef broth, tomatoes, corn, celery, cabbage, onion, zucchini, wine, parsley, oregano, basil, garlic powder, salt, and pepper in a large pot. Stir in browned meatballs. Simmer soup until vegetables are tender, 35 to 40 minutes. Stir in broken spaghetti and cook until tender, about 20 minutes more.

1 large egg, lightly beaten
1/2 cup chopped onion
1/4 cup dry bread crumbs

This is a delicious rich soup that will need a longer cooking time then most soups and tastes even better the next day it's really a meal in itself, I serve it with garlic bread on the side --- to save some time prepare the meatballs up to a day ahead, the meatball mixture may be doubled if desired, if you don't use all the meatballs then freeze for another time and just drop them into the soup frozen -- 1/4 to 1/3 cup dry red wine may be added to the soup :)

3 -4 tablespoons olive oil
2 -3 tablespoons fresh minced garlic
2 medium onions, chopped
2 teaspoons dried oregano
1 teaspoon crushed red pepper flakes (optional or adjust to suit heat level)
1 stalk celery, diced
4 carrots, peeled and sliced
2 tablespoons tomato paste
4 cups chicken broth (can use beef broth)
4 cups tomato sauce (for a richer flavor use 2 cups each tomato sauce and crushed tomatoes)
1 (14 ounce) can kidney beans, drained
1 (10 ounce) can green beans, drained
2 cups chopped fresh spinach (rinsed over with cold water)
2 -3 medium zucchini, sliced thick (or coarsely chopped)
cooked small shell pasta (use any amount desired, small shell pasta or macaroni will work fine)
1/3-1/2 cup grated parmesan cheese (more for sprinkling)

Steps:

  • Reduce heat to low, cover and simmer for about 1-1/2 to 2 hours (after about 30 minutes of cooking season with salt and fresh ground black pepper to taste).
  • Add in cooked pasta and 1/3 to 1/2 cup Parmesan cheese; stir to heat through (can add in more cheese if desired).

I always love to find a new way to use frozen meatballs--either commercial or homemade and frozen. This is a particularly good (and hearty) soup. I think you will enjoy it. I found a tiny elbow macaroni in the Mexican section of the ethnic aisle of the supermarket; I thought it worked very well in this recipe. It's name is Pasta Alimenticia (La Moderna brand). I also substituted Navy beans for the kidneys since we like them best. The recipe comes from "Slow Cooker Magic" by Rehberg and Conway.

1 tablespoon olive oil
1 lb frozen meatballs
1 medium onion, chopped
5 cups beef broth (or 5 bouillon cubes and 5 cups water)
1 (14 1/2 ounce) can diced tomatoes, Italian-style
1 cup peeled and sliced carrot, about 1/8-inch thick
1 cup sliced celery, about 1/4-inch thick
1/2 cup chopped green pepper
1/2 teaspoon dried oregano

1 tablespoon chopped fresh Italian parsley

1 (16 ounce) can kidney beans, rinsed and drained

Steps:

  • In a nonstick skillet, heat oil over medium heat. Add meatballs and brown on all sides. Just before they are completely browned, add the onion to the skillet and reduce heat to medium-low. Continue cooking about 2 more minutes or until the onions are soft.
  • Add 1 cup of the beef broth to the pan, stirring up all the browned particles from the bottom of the pan. Carefully pour contents of skillet into your crock pot. I used a 4-quart sized crock pot.
  • Add the rest of the beef broth, tomatoes, carrots, celery, green pepper, oregano, basil and parsley to the crock pot. Cover and cook on LO for 6 to 8 hours.
  • Turn the heat to HI. Add the macaroni and rinsed and drained beans; stir. Cover and cook about 30 minutes until the macaroni is fully cooked.
  • Taste before serving. If necessary, adjust seasoning. Serve in soup bowls with grated Parmesan cheese on top.

12 beef meatballs
1 carrot, chopped
1 celery stick, chopped
1 onion, chopped
1 garlic clove, chopped

400g can cannellini beans, rinsed and drained
100g pasta shapes or rice
800ml low-salt vegetable or chicken stock

Steps:

  • Heat the oil in a large saucepan and fry the meatballs all over until browned. Remove and set aside on a plate. Add the carrot, celery and onion to the pan, and fry for 10 mins until soft. Stir in the garlic, oregano and bay. Tip in the tomatoes, beans, pasta and stock. Bring to a simmer.
  • Add the meatballs back to the pan and cook until the pasta is tender and the meatballs are cooked through. Season, and add a dash of vinegar or a pinch of sugar to balance the acidity of the tomatoes, if you like. Ladle into four bowls, then swirl a spoon of pesto into each. Top with the basil to serve.

Don't let the long ingredient list fool you - it is simple and quick to prepare with ingredients you usually have on hand. You can substitute fresh vegetables for the canned; I created this in winter when I had more canned and frozen items on hand than fresh. 1 pkg. thawed 10 oz pkg chopped frozen spinach; squeezing out all liquid. Combine with 1 1/2 pounds lean ground beef, 1/3 cup fine dry bread crumbs, 1 egg, 1/2 tsp salt, and 1/4 tsp pepper until well blended. Shape into 1 inch balls.
1 tablespoon salad oil
1 large onion, chopped
5 cans beef broth (approx 10 cups)
1 can (about 1 lb.) stewed or diced tomatoes.
1 can (about 1 lb.) red kidney beans
1/2 teaspoon EACH oregano leaves and dry basil
1 cup EACH sliced carrots and sliced celery
1 cup bow shaped macaroni or other small pasta.

Steps:

  • Prepare spinach meatballs. Heat oil in a large pot over medium heat; add meatballs and cook, turning often, until browned on all sides. Remove from pan and set aside. Add onion to drippings in pan and cook, stirring occasionally, until onion is soft (about 10 minutes). Stir in stock, tomatoes, beans and their liquid, oregano, and basil. Bring to a boil over high heat; reduce heat, cover, and simmer for 10 more minutes. Add carrots and celery; cover and simmer for 10 more minutes. Stir in macaroni; cover and simmer until macaroni is tender (about 10 more minutes). Add meatballs and heat until steaming. Serve with plenty of grated parmesan cheese and crusty bread.

6 tbsp Parmesan cheese
2 cloves garlic, minced
1/4 tsp salt
1/4 tsp pepper
1/2 - 3/4 tsp red pepper flakes
Soup Ingredients:
6C chicken broth
2C potatoes, cubed
1C carrots, chopped
1C celery, chopped
1/2C yellow onion, chopped
2 cloves garlic, minced
1 tsp basil
1/2 tsp thyme
1/2 tsp salt
1/4 tsp red pepper flakes
3/4C pasta (I used mini shells)

Steps:

  • To prepare meatballs; in a large bowl combine meatball ingredients. Mix well by hand or with a wooden spoon. Line a large baking sheet with parchment paper. Using the small end of a melon baller (in between 1/2 and 1 tsp in size), scoop out meat and roll to form even balls. Space evenly on prepared baking sheet. Cover and store refrigerated until ready to make soup. Preheat oven to 350 degrees. Bake meatballs for 10 minutes. Set aside. Add broth and spices to slow cooker. Chop vegetables, small enough that you can easily fit a variety in a single spoonful. Mince garlic. Add garlic and vegetables to slow cooker, followed by mini meatballs. Stir gently. Cover and cook on high for 5 hours, or low for 10. In the last 30 minutes of cooking add pasta.

This is adapted from a frozen meatball package recipe - I've left out the pasta and added black soy beans in its place. I also use a low-carb frozen meatball that's light on the 'filler': approximately 3 carbs per 6-meatball serving.

32 frozen store-bought or homemade meatballs (I use 'Rosina's' Italian-style')
1 (28 ounce) can chopped tomatoes
2 tablespoons olive oil
1 large onion
3 medium zucchini
2 cups chopped raw eggplants
3 stalks celery
1 green bell pepper
1 tablespoon italian seasoning mix
1 bay leaf
1 teaspoon garlic powder
3 cups chicken broth
1 (15 ounce) can black soybeans

Steps:

  • Chop the vegetables.
  • Defrost the meatballs in the microwave according to directions, which helps remove some of the fat. If you want to skip this step, just drop the meatballs into the simmering soup.
  • Saute the onion, celery, zucchini, pepper, and eggplant in the oil.
  • Add all of the rest of the ingredients and bring to a simmer. Cover and simmer until vegetables are soft (and meatballs are heated through.)
  • erve with grated parmesan cheese.

3 garlic cloves, minced
1 tablespoon olive oil
3 (15 ounce) cans cannellini beans, undrained and divided
1 (32 ounce) container chicken broth
1 (1 1/2 ounce) envelope vegetable soup mix (Knorr's)
60 -64 frozen cooked meatballs
1 (14 1/2 ounce) can diced tomatoes with basil oregano and garlic
1/2 teaspoon dried crushed red pepper flakes
8 ounces uncooked rotini pasta
1 (10 ounce) package fresh spinach, torn
shredded parmesan cheese
chopped fresh parsley

Steps:

  • Saute garlic in hot oil in a large soup pot over medium-high heat for 1 minute.
  • Add in 2 cans beans and chicken broth; bring mixture to a boil.
  • ADd in vegetable soup mix; stir until dissolves.
  • Add in meatballs, tomatoes, and red pepper flakes; return to a boil.
  • Add in rotini; cook, stirring frequently, for 15 minutes.
  • Add in remaining beans and spinach; cook 5 more minutes.
  • Ladle into soup bowls; garnish with parmesan cheese and parsley.
