MOM'S HAMBURGER SOUP

I made a pot of Mom's Hamburger Soup this afternoon which is really smelling and tasting good. And I just emailed my daughter and asked her to bring home some crusty rolls from Panera's to have with it. This is a thick and hearty soup -- perfect for dunking the bread. It's cold outside, so this will be great for supper tonight. Since it's one of those recipes that isn't written down, I decided to post it while everything is fresh on my mind. Mom always used spaghetti, but I think it gets too mushy when the soup is warmed up for the 2nd or 3rd time. And she didn't use the steak seasoning, but to me it seems to lift the taste of the meat and tomatoes.

2 lbs hamburger
2 teaspoons salt
1/2 teaspoon pepper
2 tablespoons onion flakes
2 (16 ounce) cans diced Italian-style tomatoes, with juice
2 (46 ounce) cans tomato juice
2 teaspoons italian seasoning (optional)
2 (16 ounce) packages frozen mixed vegetables
1 cup white rice, uncooked (or raw spaghetti broken into 2-inch pieces)
2 cups hot water

Steps:

  • Use 8 quart stock pot.
  • Combine first 4 ingredients and cook together until hamburger is loose and no longer pink. Do not overcook. Drain off grease and return meat mixture to the stock pot.
  • Add the diced tomatoes, tomato juice and steak seasoning to the meat mixture; simmer on low heat for 30 minutes. Stir after 15 minutes.
  • Add the frozen mixed vegetables; simmer on low heat for 60 minutes, stirring every 15 minutes.
  • Add the rice and 2 C water; continue to simmer for about 60 minutes stirring frequently. Add additional water if soup is too thick.

I cannot believe that there are so many DIFFERENT recipes for hamburger soup! This is ours and came to us by way of Maxine, with a few modifications. This is so great in the cold of Winter. It reminds me of the bounty of Summer, and warms my heart. Definitely a comfort food. Since I use my own canned tomatoes, my soup may be thinner than the recipe would indicate. Please feel free to add more water, tomato juice, V-8 juice, or sauce to make this soup of your desired thickness or thinness!

2 lbs ground chuck
4 onions (diced)
2 quarts canned tomatoes (I use the jars of tomatoes I have canned)
1 cup white shoepeg corn
1 cup potato (diced)
1 cup carrot (sliced in rounds)
1 cup green beans
1 cup lima beans
1 cup macaroni (cooked, rinsed, and drained)
1/4 cup sugar
1 (6 ounce) can tomato juice (or V-8 juice -the single serving size) (optional)

Steps:

  • Brown meat with onions.
  • Add rest of ingredients and simmer 30 to 45 minutes, or until tender.
  • Add water or beef broth if needed.
  • Salt and pepper to taste.
  • Add macaroni at last minute continue to heat for 3 minutes.
  • Serve with crusty bread, or hot buttered rolls.

2 cups frozen mixed vegetables
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (14-1/2 ounces) beef broth
1/4 teaspoon pepper
1/2 cup uncooked elbow macaroni

Steps:

  • In a large saucepan, cook beef over medium heat until no longer pink; drain. Stir in the mixed vegetables, tomatoes, broth and pepper. Bring to a boil; add macaroni. Reduce heat; cover and simmer for 8-10 minutes or until macaroni and vegetables are tender.

1 lb lean ground beef
1 medium onion, diced
2 cloves garlic, minced
1 cup celery
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1 (8 ounce) can tomato sauce
6 cups water
1 box Kraft macaroni and cheese
1/4 cup parmesan cheese
1 (16 ounce) box frozen peas and carrots

Steps:

  • In a large soup pot brown the beef with the onion, celery and minced garlic.
  • Drain the fat from the beef and stir in the dried spices, tomato sauce and the water.
  • Simmer for about 5 minutes.
  • Add the macaroni and cheese, parmesan cheese.

1 (10 ounce) can tomato soup
1 dash parsley

2 cups frozen hash browns
