Simple mashed sweet potatoes flavored with maple syrup and butter.

Steps:
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender, 20 to 30 minutes.
- With an electric mixer on low, blend potatoes, slowly adding milk, about 1/2 a cup at a time. Use more or less to achieve desired texture. Add butter and maple syrup to taste. Blend until smooth. Serve warm.

YUKON GOLD & SWEET POTATO MASH
Classic mashed potatoes get a nutrient boost with the addition of sweet potatoes. This healthy mashed potato recipe can easily be doubled, just be sure to cook the potatoes in a Dutch oven rather than a large saucepan.

- Place potatoes and sweet potatoes in a large saucepan and add enough water to cover. Bring to a boil over high heat and cook until very tender when pierced with a fork, 20 to 25 minutes.
- Drain the potatoes, then mash them in the pot to the desired consistency. Place milk and butter in a small bowl and microwave on High until the butter is mostly melted and the milk is warm, 30 to 40 seconds. (Alternatively, place in a small saucepan and heat over medium until the milk is warm.) Stir the milk mixture, sugar, salt and pepper into the mashed potatoes until combined.

TEQUILA AND LIME SWEET POTATOES
I'm posting this per a request of a friend. I have not tried it yet but have every intention of doing so. This is a very unique dish and can also be finished on a gas or charcoal grill. My broiling time is only approximate so keep a close eye on these potatoes under the broiler! The original recipe came from a local promotional cookbook out of Mobile, Alabama.

Steps:
- Cut the potatoes into 3/4" thick slices.
- In a large saucepan, bring the water to a boil and then add the potatoes -- when they begin to re-boil, allow them to go for 6 minutes, uncovered, (they should be just tender) and then drain them with a colander.
- Mix the lime juice, honey and tequila together in a small bowl.
- Set up a large baking sheet on which there is a metal grill-type rack. Lay the potatoes out on the rack and brush them with the lime-honey-tequila sauce.
- Broil the potatoes until they brown on one side, flip them and when they brown on the second side, they're done.
- NOTE: A second option is to grill the brushed potatoes on a gas or charcoal grill.

MASHED SWEET POTATOES WITH TEQUILA

- Preheat oven to 400 F. Pierce sweet potatoes in several places w/fork, then bake whole, 50-60 minutes, until very tender. Reduce oven temp to 350F. Butter large baking dish. When cool enough to handle, scoop out sweet potatoes and mash in a large bowl. Mix in applesauce and butter. then add salt, cinnamon, and tequila and brown sugar to taste. Stir in egg yolks. Spoon into prepared dish. Meringue: beat egg whites at high speed, sprinkle cream of tartar when foamy, beat until whites hold soft peaks. Spoon over sweet potatoes. Bake 30 minutes, until meringue is lightly browned.
