4 large potatoes, peeled and thinly sliced
4 medium onions, thinly sliced
3 large parsnips, peeled and thinly sliced
1-1/2 cups shredded Gruyere or Swiss cheese, divided
1 tablespoon all-purpose flour
3/4 teaspoon salt
1/4 teaspoon pepper
2 cups heavy whipping cream

Steps:

  • Layer the potatoes, onions, parsnips and 3/4 cup cheese in a greased 13x9-in. baking dish; set aside. In a small saucepan, combine the flour, salt, pepper; gradually whisk in cream. Bring to a gentle boil, stirring occasionally. Remove from the heat; pour over vegetables. Sprinkle with remaining cheese., Cover and bake at 375° for 30 minutes. Uncover; bake 20-25 minutes longer or until vegetables are tender and top is golden brown.

Mmmmmmmmmmmmm.......... Amazing flavor. This recipe is adapted from one found in the local newspaper. These potatoes are wonderful for holiday meals and the recipe makes a BIG batch.... but they do take a while to prepare.

CARAMELIZED ONIONS:
1 Tbsp butter
8 c sliced onions
1 Tbsp sugar
1/2 tsp salt
1/4 tsp pepper
2 clove garlic, minced
3 Tbsp water
POTATOES:
4 lb yukon gold potatoes, peeled and cubed
1 c half and half
6 Tbsp butter
1 1/2 tsp salt
1/2 tsp pepper
1/4 tsp nutmeg

Steps:

  • 1. In a large non-stick skillet melt 1 tablespoon butter over medium heat. Add 8 cups onions, 1 tablespoon sugar, 1/2 teaspoon salt, amd 1/4 teaspoon pepper. Cook, stirring, until onions are browned. Reduce heat a bit more add garlic and water and continue cooking and stirring until onions are caramelized, about 20 more minutes.
  • 2. Cook potatoes in a large pot of boiling water for about 20 minutes until tender. Drain and return to pot. Heat half and half with butter until butter melts. Add milk mixture and salt, pepper, and nutmeg to potatoes. Mash. Stir 2/3 of caramelized onions into potatoes and mix well. Top with remaining onion mixture. Serve.

6 large potatoes, peeled and quartered
1 package (8 ounces) cream cheese, softened
1 cup shredded cheddar cheese
1/2 cup sour cream
1/3 cup chopped onion
1 large egg
2 teaspoons salt
1/2 teaspoon pepper
Additional shredded cheddar cheese, optional

Steps:

  • Place potatoes in a large saucepan; cover with water. Cover and bring to a boil. Cook for 20-25 minutes or until very tender; drain well., In a bowl, mash potatoes. Add cream cheese, cheddar cheese, sour cream, onion, egg, salt and pepper; beat until fluffy. Transfer to a greased 2-qt. baking dish. Cover and bake at 350° for 40-45 minutes or until heated through. Sprinkle with additional cheese if desired.

3 large onions, halved and sliced
2 tablespoons chopped fresh rosemary or 2 teaspoons dried rosemary
6 turnips or 6 rutabagas, peeled and sliced
4 large rusett potatoes, peeled and sliced
1 cup milk, heated
salt & fresh ground pepper

Steps:

  • Melt 1 1/2 tablespoons butter in a large skillet over medium-high heat.
  • Add onions and cook until golden, stirring often, about 15 minutes.
  • Mix in rosemary and put onions aside.
  • Bring large pot of salted water to boil.
  • Add parsnips and potatoes; boil until tender, about 20 minutes.
  • Drain well.
  • Return vegetables to pot and mash.
  • Add warm milk and 1 1/2 tablespoons butter; stir until smooth.
  • Stir in onion mixture.

2 1/2 pounds Yukon gold potatoes, peeled and quartered
4 garlic cloves, crushed

Steps:

  • In a large skillet, heat 1 tablespoon olive oil over medium-low heat. Add onions, season with coarse salt. Cook, stirring frequently, until onions are caramelized, 35 to 40 minutes.
