I've looked all over for inspiration! When my mother was in the hospital for by-pass surgery, I picked up a handout for heart healthy bran muffins. It became the basis for this recipe, but I've added a number of very healthy additions. Customize this as you wish: choose different nuts, add raisins, dates, dried apricots... make them your own!

Number Of Ingredients 20

1 cup oat bran
1/2 cup wheat germ
1/2 cup flax seed meal
1 cup whole wheat flour
1 tablespoon vital gluten
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup brown sugar
1/4 cup hemp seeds (aka hemp hearts)
2 tablespoons chia seeds
2 tablespoons buckwheat groats
1/2 cup pecans, chopped
1/2 cup dried cranberries
1/2 cup prune, chopped
1 cup milk
2 eggs, beaten
1 teaspoon vanilla
2 tablespoons canola oil

Steps:

  • Preheat oven to 350ยบ F. Line muffin tins with paper muffin cups.
  • In a large mixing bowl, combine all the dry ingredients, including nuts and fruits.
  • In a small mixing bowl, combine all the wet ingredients (milk, eggs, vanilla and oil).
  • Make a well in the center of the dry ingredients and add the wet ingredients. Mix only until the dry ingredients are moistened.
  • Fill the muffin cups about 2/3 full and bake for 15-20 minutes or until a toothpick inserted into the center comes out dry.

I have lost 80lbs and kept it off, though I still love my foods and eat like a "QUEEN". These are the best moist and tasty muffins and the best thing is, they are guilt free. Great with a cup of joe in the morning or a snack at night. They also freeze well. By adding the very, very small amount of chocolate chips, this will cure your chocolate craving. This makes the recipe low fat,and still healthy and very low calorie... "A Happy Heart"...... Enjoy....

1 1/4 cup(s) unsweetened almond milk ( 35 to 40 calories per cup)
1/3 cup(s) splenda brown sugar ( or mix half and half brown sugar light and stevia to equal 1/3 cup)
1/2 cup(s) 100% pure can pumpkin
2 - egg whites
1/4 cup(s) cracked wheat soaked in hot water for 5 min and drained
MIX CEREAL-ALMOND MILK-SPLENDA BROWN SUGAR-PUMPKIN- EGGS AND CRACKED WHEAT, TOGETHER. LET SIT FOR 10 MIN.
1 cup(s) whole wheat flour
1 1/2 teaspoon(s) baking soda
1 1/2 teaspoon(s) baking powder
1/2 teaspoon(s) cinnamon
3 tablespoon(s) cocoa powder
1/2 cup(s) toasted sunflower seeds
1/2 cup(s) semi sweet chocolate chips (optional)

Steps:

  • **All Bran Cereal image** PREHEAT OVEN 400-SPRAY MUFFIN PANS WITH COOKING SPRAY Mix dry ingredients together. stir into wet mixture until just mixed. Pour into muffin tin. Bake for 12 to 16 min.
  • Calories per muffin with out chips about 114 calories each.
