Delicious on its own, this tuna salad recipe also makes a memorable Two Bite Tuna Melt.

1 six-ounce can water-packed tuna, drained
2 tablespoons Homemade Mayonnaise, or prepared
1 teaspoon Dijon mustard
2 tablespoons finely minced celery
1 teaspoon freshly squeezed lemon juice
1 teaspoon grated lemon zest
Salt and freshly ground black pepper

Steps:

  • In a medium bowl, combine tuna, mayonnaise, mustard, celery, lemon juice, zest, and salt and pepper to taste. Using a fork, mix well until thoroughly combined. Store in an airtight container in the refrigerator up to 1 day.

1 stalk celery, halved lengthwise and thinly sliced
1/2 Granny Smith apple, peeled and grated
Whole-wheat bread, red onion, cucumber, and alfalfa sprouts, for serving

Steps:

  • Whisk together mayonnaise, yogurt, and lemon zest and juice; season with salt and pepper. Stir in tuna, celery, and apple. Serve with bread, onion, cucumber, and sprouts.

Kosher salt and freshly ground black pepper to taste
Sliced sandwich bread of choice

Martha's favorite egg salad sandwich is a healthy-and delicious- lunch choice.

Number Of Ingredients 9

10 hard-boiled egg whites
2 hard-boiled egg yolks
2 to 3 tablespoons light mayonnaise
1 teaspoon Dijon mustard
1 tablespoon freshly squeezed lemon juice
1/2 avocado, mashed, plus 1/2 avocado roughly chopped
Coarse salt and freshly ground pepper
Boston lettuce, arugula, and tomato slices (optional)
12 white sandwich bread, such as Pullman, sliced about 1/2-inch thick, toasted

Steps:

  • Using a pastry blender or fork, mash together egg whites and yolks in a large bowl; carefully fold in avocado. Stir in mayonnaise, mustard, and lemon juice; season with salt and pepper.
  • Place 6 slices of bread on a work surface. Evenly divide egg salad among bread slices. Add lettuce greens or tomato, if desired. Top with remaining 6 slices bread. Serve.
