Kittencal's Party Meatballs With Cranberry-Marmalade Sauce image

I find this is the best recipe for appetizer meatballs everyone seems to like this one when I serve it at my get togethers, but you most certainly can use your own favorite meatball recipe for this, or see my Parmesan meatball recipe#69173 you can reduce the garlic amount to taste if desired. Don't omit the dry onion soup, it what makes these meatballs Yield is only estimated and all amounts can be adjusted to taste.

2 1/2 lbs lean ground beef
2 tablespoons fresh minced garlic (or to taste)
2 small eggs, slightly beaten
2 (1 ounce) packages lipton dry onion soup mix (can use only one package, two is better!)
2 -3 tablespoons grated parmesan cheese (optional)
1/4 cup breadcrumbs
2 teaspoons black pepper (or to taste)
1 teaspoon seasoning salt (can use more)
1 (16 ounce) can cranberry sauce
1 teaspoon garlic powder (or to taste)
1 (12 ounce) jar Heinz Chili Sauce
3/4 cup marmalade
1/4 cup water
2 tablespoons soy sauce (can use more)
2 tablespoons red wine vinegar
1 -2 teaspoon dried red pepper flakes
black pepper (optional)

Steps:

  • In a bowl combine all the meatball ingredients together.
  • Shape into 1-inch balls.
  • In a skillet brown the meatballs in hot oil over medium heat for about 5-6 minutes (meatballs will not be completely cooked through) remove and drain on paper towels.
  • For the sauce; in a large saucepan mix together the cranberry sauce with all remaining ingredients; cook over medium heat stirring constantly until smooth.
  • Season with black pepper if desired.
  • Add in the browned meatballs; reduce heat to low and cook about 20-25 minutes or until the centers are no longer pink.
  • Delicious!

1 bottle (16 ounces) Catalina salad dressing
1 cup orange marmalade
3 tablespoons Worcestershire sauce
1/2 teaspoon crushed red pepper flakes
1 package (32 ounces) frozen fully cooked home-style meatballs, thawed

Steps:

  • In a 3-qt. slow cooker, combine the salad dressing, marmalade, Worcestershire sauce and pepper flakes. Stir in meatballs. Cover and cook on low for 4-5 hours or until heated through. Freeze option: Freeze cooled meatball mixture in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, gently stirring; add water if necessary.

My mom made these for my family's Christmas party and my family thought they were so good. When my mom made these she did not add the red pepper flakes due to these being served to children. When I made them I did the same as my mom except I used a 12oz jar of orange marmalade to use up a couple of leftover tablespoons. I also used Aldi's brand frozen meatballs. The recipe is from Sandra Lee at Food Network.

2 lbs fully cooked frozen meatballs (recommend Armanino)
16 ounces Catalina dressing
1 cup orange marmalade

  • Place frozen meatballs in the insert of a slow cooker.
  • In a bowl, stir to combine the remaining ingredients.
  • Pour over meatballs and stir to coat.

1 pound ground pork or beef
1/2 cup dry breadcrumbs
1/4 cup minced red onion
1 large egg
1 teaspoon kosher salt
1 teaspoon mustard
1 teaspoon lemon zest
1 teaspoon Worchestershire sauce
1/2 teaspoon freshly ground black pepper
1 cup orange marmalade and 1/2 teaspoon red pepper flakes, for serving

Steps:

  • Preheat oven to 400 degrees F. Combine all ingredients, except the marmalade and red pepper flakes, in a large bowl and mix until just combined. Moisten hands, gently form mixture into 1-inch meatballs (you should have about 25) and place on a baking sheet. (Meatballs can be made up through this step to 24 hours ahead and stored covered in the refrigerator; let come to room temperature 10 minutes before roasting.)
  • Bake until meatballs are warmed through and almost cooked, about 15 minutes. Meanwhile, stir together marmalade and red pepper flakes, and season with salt, as desired.
  • Remove meatballs from oven, toss with marmalade, return to oven and bake until the meatballs are completely cooked and the sauce is warmed through, about 5 more minutes. Skewer meatballs with toothpicks and serve.

These are great! I've served them as an appetizer and also with rice and veggies for dinner. I often half the recipe for just my husband and I. I've made a few minor changes from the original recipe, this is adapted from Sandra Lee's show Semi-Homade. These can also be made in a crockpot and heated over high heat for 2 to 3 hours.

2 lbs frozen meatballs (use the fully cooked kind, Homestyle variety works well)
16 ounces French dressing (Catalina works too)
1 cup orange marmalade
3 tablespoons Worcestershire sauce
1/2 teaspoon red pepper flakes
1/2 teaspoon balsamic vinegar (optional)
1/8 teaspoon garlic powder (optional)
1/4 teaspoon black pepper

Steps:

  • Defrost meatballs (I usually put them in the microwave for a few minutes).
  • Place meatballs in a medium large sauce pan, or a deep 12 inch skillet should work too.
  • Combine the remaining ingredients in a bowl, stir until combined well.
  • Pour sauce over meatballs and stir to coat.
  • Cook on medium heat, stirring occasionally, for 20 minutes or until meatballs are heated through and sauce is hot. Enjoy!
