1 small onion, finely chopped
1/2 cup sliced fresh mushrooms
1/2 cup chopped green pepper
1 tablespoon canola oil
3 cups frozen shredded hash brown potatoes
1 medium tomato, finely chopped
1/2 cup shredded reduced-fat cheddar cheese
2 tablespoons sliced ripe olives
1 jalapeno pepper, seeded and sliced
1/4 teaspoon seasoned salt
1/8 teaspoon pepper
1 tablespoon minced chives

Steps:

  • In a large nonstick skillet, saute the onion, mushrooms and pepper in oil until tender. Add hash browns; cook over medium heat for 8-10 minutes or until potatoes are browned, stirring occasionally., Stir in the tomato, cheese, olives, jalapeno, seasoned salt and pepper. Cover and cook for 2 minutes or until cheese is melted. Sprinkle with chives; cut into wedges.,

Number Of Ingredients 13

1/2 cup sour cream
2 tablespoons chopped fresh parsley
2 teaspoons smoked paprika
2 teaspoons sherry vinegar
1 clove garlic, minced
Kosher salt and freshly ground black pepper
4 small russet potatoes, peeled
1 small onion, grated
2 tablespoons chopped fresh parsley
1 teaspoon dried oregano
1 teaspoon kosher salt, plus more for sprinkling
1/2 teaspoon freshly ground black pepper
1/2 cup vegetable oil

Steps:

  • Smoky Sauce: In a medium mixing bowl combine the sour cream, parsley, paprika, vinegar and garlic. Mix until well blended, and then taste to check the seasoning. Season with salt and pepper.
  • For the hash browns: Grate the potatoes using the large holes of a box grater. Place the grated potatoes on a clean dish towel and squeeze out the excess water.
  • In a large mixing bowl combine the grated potatoes, onions, parsley, oregano, salt and pepper, and give it a good stir.
  • Heat the oil in a large nonstick saute pan over medium heat. Using a 1/4 cup measuring cup, scoop out the potatoes and place in the hot pan. Fill the pan with 4 or 5 potato scoops, making sure not to overcrowd the pan. Using a spatula, flatten out the potato portions. Cook until golden brown, about 3 minutes. Flip and continue to cook on the other side until golden brown and crispy, about 3 minutes. Drain the hash browns on paper towels, sprinkle with salt, and repeat the process for the remaining potatoes. Serve with the smoky sauce on the side.

As a cook in a restaurant, I'm always searching for new recipes. One day I came up with this new breakfast item and served it to some of our 'regulars'. they declared it a success, and it has since been added to the menu.

3 tablespoons butter or margarine
¾ cup frozen cubed hash brown potatoes
⅓ cup diced onion
⅓ cup diced green pepper
⅓ cup diced tomato
⅓ cup sliced fresh mushrooms
½ cup diced fully cooked ham
1 pinch salt and pepper to taste
½ cup shredded Swiss cheese

Steps:

  • In a medium nonstick skillet, melt butter. Add the next six ingredients; mix well. Cook over medium-high heat for 10-15 minutes, stirring occasionally, or until potatoes are browned. Season with salt and pepper. Sprinkle with cheese. Cover and cook over low heat for 2 minutes longer or until cheese is melted.

1 (10 2/3 ounce) can cream of celery soup
1 (10 2/3 ounce) can cream of chicken soup
3 cups sharp cheddar cheese, shredded and divided
1 (8 ounce) container sour cream
1 medium diced onion
1/4 teaspoon fresh ground black pepper

Steps:

  • Combine all ingredients reserving 1 cup of the shredded cheese. Pour into baking dish sprayed with non-stick spray. Top with reserved cheese. Bake at 350 degrees for about 45 minutes or until top is golden brown.

1 bag (2 lb.) frozen hash browns, defrosted
1/2 cup melted butter
1 tsp salt
1/4 tsp pepper
1/2 cup chopped onion
1 can cream of mushroom soup
1 container (16 oz.) sour cream
10 oz Kraft Grated Cheddar Cheese (I use the whole package)
2 cups crushed cornflakes mixed with 1/4 cup melted butter (I use a little extra butter)

Steps:

  • Defrost potatoes and pour melted butter over them. Add salt and blend well. Add other ingredients.
  • Pour into 9 x 12 casserole. Cover with cornflakes.
  • Bake at 325 degrees F for 1 hour.

Hash browns are a classic breakfast item for a reason. It benefits here from fresh spices and a shallot.

4 Yukon gold or russet potatoes (2 pounds), peeled
1 large shallot, peeled
3 tablespoons fresh herbs, roughly chopped, such as parsley, thyme, and rosemary
Coarse salt and freshly ground pepper
4 tablespoons canola oil

Steps:

  • Preheat oven to 175 degrees. Have ready a baking sheet lined with paper towels. Grate potatoes and shallots on large holes of a box grater or with a food processor fitted with the grating blade. Transfer to a piece of cheesecloth or clean dishcloth; squeeze out as much liquid as possible. Place in a bowl, add herbs, season with salt and pepper, and stir to combine.
  • Heat 2 tablespoons of oil in a large nonstick skillet over medium-low heat. Drop 1/4 cup of the mixture into the skillet; gently press to form a patty about 2 1/2 inches in diameter. Repeat until there are six patties in the skillet. Cook until deep golden brown, about 8 minutes on each side. Remove from skillet; transfer to prepared baking sheet. Place in oven to keep warm. Wipe out pan; pour in remaining 2 tablespoons oil. Repeat process with remaining potato mixture; serve.

I was just experimenting one morning. I was trying to reduce the time that it takes to make hash browns on the stove. Every time I make them it takes about half hour to an hour. So I tried this and they turned out great! Enjoy!

3 medium potatoes
1 tablespoon honey
2 teaspoons paprika
1 teaspoon ground thyme
2 teaspoons seasoning salt
1 teaspoon pepper
1 medium onion
1/2 lb ground turkey (or whatever you want)
1 tablespoon garlic and herb seasoning
1/3 cup olive oil

Steps:

  • First, cut a slit in each potato and microwave them until they are half cooked( for me this was about 3 mins.).
  • While they are cooking, chop up the onions.
  • Once the potatoes are half done, take them out and cube them.
  • Get a skillet with oil ready and put your potatoes, and everything else inches
  • Cook for about 5-10 minutes depending on how crispy you want them.
  • Enjoy!
