STEAK AND SWEET POTATO SKILLET



Steak and Sweet Potato Skillet image

Marinated steak bites sauteed with sweet potatoes and peppers. A delicious combination of savory with a little kick of sweetness.

Prepare Steak
1.5 lb Flat Iron Steak or Sirloin Steak, Cut into bite-sized pieces
1 cup Your Favorite Marinade, or Italian Dressing
2 Tbsp Extra Virgin Olive Oil
Prepare Veggies
4 cups Sweet Potatoes, Diced
1 red or green Bell Pepper, Diced
2 cups Shredded Kale, Optional
2 Tbsp Extra Virgin Olive Oil
Salt & Pepper, To taste

Steps:

  • Marinate the steak bites for at least 30 minutes or up to a few days ahead of time. The longer, the better, but even 30 minutes makes such a difference. You can even just let the meat swim happily in the marinade while you cut up & cook your veggies.
  • Preheat the oven to 425
  • On a baking sheet, toss your veggies (excluding kale, if using) with olive oil and salt and pepper.
  • Bake for 20 minutes, toss, then bake for 10 minutes more, remove from oven.
  • Once the veggies have baked, add olive oil to a large cast iron pan, or skillet of choice over med/high heat until the olive oil starts to ripple.
  • While this is happening, discard any leftover marinade and then place your steak bites in a single layer in the pan, and saute for about 5 minutes, browning all sides of the meat. Likely no more than 5 minutes is needed.
  • Add the roasted veggies to the skillet and stir everything together and sautéing about 2 more minutes.
  • Remove from heat and then add the chopped kale and stir.
  • Serve and Enjoy!

I like coming up with new ways to serve foods so that I don't get bored with the same dishes all of the time. I decided to try preparing my sweet potatoes in various ways and this is one that I came up with. Very simple and can be modified to suit your taste. The recipe is enough for two generous servings for adults. The potatoes will not be as crispy as regular potatoes because of the texture difference so be sure to not overcook.

2 medium sweet potatoes
1/2 cup white onion, diced
2 tablespoons olive oil
2 garlic cloves, pressed
1 teaspoon salt (more or less to taste)
1/2 teaspoon pepper
2 tablespoons light brown sugar (lightly packed)

Steps:

  • Dice sweet potatoes no thicker than 1/4 inch thick.
  • Place pan on medium heat to begin warming. While waiting dice onion and prepare garlic.
  • Place oil in pan and add potatoes, garlic, and onions and then coat well(be sure that oil is not left to heat up or it will scorch the onions and garlic).
  • Sprinkle salt and pepper just after adding other ingredients to the pan.
  • Allow the potatoes to cook for a few minutes and check for browning. Keep temperature from getting too hot.
  • Stir occasionally until potatoes are to your desired doneness (approx 10 minutes for me.
  • Turn off heat and add brown sugar while still hot. Stir well and serve.
  • * variation* try using butter instead of olive oil for a more sweet and traditional flavor.

2 strip steaks (each about 1 inch thick), room temperature
Kosher salt and freshly ground pepper
1 teaspoon unsalted butter
Simple Steak Sauce, optional

Steps:

  • Heat a large heavy-bottomed skillet (preferably cast iron) over high 5 minutes. Generously season steaks with salt and pepper. Add 1/2 teaspoon butter to pan, then immediately top with one steak. Repeat with remaining 1/2 teaspoon butter and steak. Cook without moving steaks until a golden brown crust forms, 3 to 4 minutes. Turn and cook 2 minutes more for rare, or 3 to 4 minutes more for medium-rare. Transfer to a cutting board and let rest 5 minutes. Slice steaks against the grain; serve with sauce, if desired.
  • Heat a 10- or 12-inch cast-iron skillet over high heat. Season the steaks liberally with salt and pepper. Seconds before adding a steak, drop 1/2 teaspoon of the butter into the pan and immediately top with the steak. Repeat with the remaining steak. Sear for 3 minutes without moving the steak (to form a crust). Turn and cook for 2 minutes for rare or 3 to 4 for medium rare. Remove the steaks from the pan and let them rest on a board or platter for a few minutes before serving.

PAN-FRIED SHELL STEAK

To get the perfect sear, make sure to heat the skillet well before adding the shell steaks, and wait until they release easily from the bottom of the skillet before flipping them.

4 shell steaks (each 8 ounces and 3/4 inch thick)
Coarse salt and freshly ground pepper
1 tablespoon unsalted butter
1/2 cup water
Watercress, for garnish

Steps:

  • Pat dry steaks with paper towels. Season on both sides with salt and pepper. Heat a large skillet over high; melt butter, swirling to coat bottom of pan. Working in two batches, cook steaks 7 to 8 minutes for medium-rare, turning once. Transfer steaks to plates.
  • Remove skillet from heat; add the water and scrape up browned bits from bottom of skillet with a wooden spoon. Season pan sauce with salt and pepper. Strain through a fine sieve, if desired, discarding solids. Serve steaks with sauce spooned over top. Garnish with watercress.
  • It's quick work to make a sauce by adding liquid to the pan and scraping up the flavorful bits from the bottom of the hot skillet. If desired, use wine (red or white) or broth in place of water.

Steps:

  • Drop potatoes in boiling water covered by 3 to 4 inches. Remove before they are thoroughly cooked (about 15 to 20 minutes). Cool potatoes and then peel. And cut into pieces 2 inches long and 1/2 inch thick.
  • Heat oil to 375°F
  • Put the potatoes in oil a few at a time and cook until light and brown; remove and drain well. Sprinkle with salt and sugar.

1/2 teaspoon coarse black pepper
1/4 teaspoon kosher salt

  • Cut the potatoes into thin wedges.
  • Pile them in a bowl and cover them with cold water.
  • Let rest 15 minutes.
