BEER - MARINATED PORK BACK RIBS WITH SIDE SAUCE



Beer - Marinated Pork Back Ribs With Side Sauce image

The sauce for this recipe does not require and cooking, but must be prepared and then let sit for 2 hours before using on the ribs, you can even make it days ahead and refrigerate until ready to use. Plan ahead the ribs need to marinade for 5 hours. If you have any fresh herbs around such as rosemary OR thyme (one or the other do not use both) then throw in a couple tablespoons into the beer marinade.

5 lbs pork back ribs
2 bay leaves
2 medium onions, sliced
2 tablespoons peppercorns
2 tablespoons minced fresh garlic
3 (12 ounce) bottles beer (any brand will do)
1 cup ketchup
1 cup brown sugar
3 tablespoons minced fresh garlic
1 tablespoon mustard powder
1 tablespoon louisiana hot sauce (or use 1 teaspoon Tabasco, or to taste)
2 teaspoons italian seasoning
1 tablespoon Worcestershire sauce
2 teaspoons soy sauce
2 tablespoons maple syrup
2 teaspoons dried onion flakes
1 teaspoon black pepper
salt

Steps:

  • Mix all the sauce ingredients in a large glass bowl, then let sit for a minimum of 2 hours before using it.
  • Cut the ribs into smaller portions.
  • Spread the onion slices in the bottom of a large baking dish (you might have to use two dishes for this).
  • Place the ribs over the onion slices, then sprinkle the herbs (if using) over the ribs.
  • Sprinkle with garlic, peppercorns and bay leaves.
  • Pour the beer over the ribs.
  • Cover with plastic wrap, then marinate for 5 hours.
  • Remove the ribs from the dish.
  • Place the ribs bone-side down on the grill, over medium heat.
  • Remove some sauce from the bowl to baste the ribs with.
  • Grill for about 10 minutes turning occasionally, or until browned, basting every few minutes with the sauce.
  • Serve the remaining sauce with the ribs.

Mom's recipe. Simple, super tasty and a great family dinner. Prep time includes 4 hour marination in refrigerator.

4 lbs boneless pork ribs (mostly dark meat, if you can find them)
3 lbs red potatoes, quartered
salt & freshly ground black pepper
8 -10 garlic cloves, minced
3 tablespoons fresh thyme, minced
2 tablespoons fresh rosemary, minced
2/3 cup extra-virgin olive oil
1/3 cup red wine (we always use cabernet sauvignon, one good enough to drink)

Steps:

  • Arrange pork in two oven-proof 9x13 dishes. Add red potatoes in between the ribs. Salt and pepper all to taste.
  • Mix the rest of the ingredients and spoon over the meat/potatoes.
  • Cover with foil or plastic wrap and marinate in the refrigerator for 2 hours. Flip meat, salt and pepper lightly, recover and marinate for 2 more hours.
  • Preheat oven to 425 degrees. Remove cover from pans and cook for 40-45 minutes or until 165 degrees internal temperature is reached. Potatoes will be tender.

I found this in the recipe book and it look really nice. The book says you could replace pork spare ribs with 800g pork fillet.

1 1/3 kg rack american pork spareribs (or 800g pork fillet)
1/2 cup soy sauce
1/4 cup hoisin sauce
2 tablespoons mirin
1 tablespoon sweet chili sauce
2 tablespoons honey

Steps:

  • Make marinade:.
  • Combine soy sauce, hoisin sauce, mirin, sweet chili and honey in a large ceramic ovenproof dish. Add ribs to marinade and turn to coat. Cover and refrigerate for at least 8 hours.
  • Remove ribs from fridge 30 minutes before cooking. Preheat oven to 200°C Roast ribs, basting with marinade every 10 minutes, for 30 minutes or until cooked through.

12 thick cut country style pork ribs
1 tbsp. cajun seasoning
1 bottle zesty italian salad dressing, 16 oz
1 bottle liquid smoke, 5 oz
1/2 cup steak sauce, such as a.1
1/2 cup worcestershire sauce

Steps:

  • 1. Wash pork ribs and rub with Cajun seasoning. In medium pan, bring Italian dressing, liquid smoke, steak sauce and Worcestershire sauce to a boil. Immediately remove the sauce from the heat. lay ribs flat in baking dish and saturate them with the prepared sauce, reserving 1/2 cup for brushing while grilling. cover and refrigerate overnight.
  • 2. Over medium coals, grill the pork ribs for about 20 minutes per side til done. The inner temperature should be 160 and the meat should begin to pull away from bone. use reserved sauce to brush ribs during cooking. Makes 6 servings
