2 tablespoons butter
1 small red onion, peeled and thinly sliced
1 medium red cabbage, quartered, spines removed and thinly sliced
1/2 cup dark brown sugar
2 tablespoons caraway seeds
2 tablespoons yellow mustard seeds
1/2 cup cider vinegar
3/4 cup dry red wine
1 large tart apple, such as Granny Smith, peeled and coarsely grated
salt & freshly ground black pepper

Steps:

  • 1. Melt the butter in a large saute pan over medium heat. Add the onions and saute until softened, about 5 minutes. Add the cabbage and toss until it begins to wilt, 2 to 3 minutes.
  • 2. Add the brown sugar, caraway seeds, mustard seeds, vinegar, wine and apple. Stir to combine, and season with salt and pepper. Cut a circle of parchment paper the size of the bottom of the pan, slice a small vent in the middle, and place directly over the cabbage. Simmer until the cabbage is soft, about 45 minutes. Adjust salt and pepper, and serve.

6 tablespoons unsalted butter
1/2 cup sugar
1 1/4 teaspoons coarse salt
2 medium Granny Smith or other tart, firm apples, 1 pound total, peeled, cored, and cut into 1 1/2-inch wedges
1 large onion, peeled and cut into 1 1/2-inch wedges
1 small (1 1/2 pounds) red cabbage, cored and cut into 1 1/2-inch wedges through the core
3/4 cup apple cider vinegar
3/4 cup water

Steps:

  • Melt butter in a medium stockpot or Dutch-oven (at least 11 inches in diameter) over medium-high heat. Add sugar and salt, and stir to dissolve. Add apples and onion, in as close to a single layer as possible. Turn to coat in butter mixture. Let cook, shaking pan occasionally and turning over once, until sugar is beginning to caramelize and coat the apples and onions, about 10 minutes.
  • Add cabbage, vinegar, and water. Bring to just a boil. Reduce to a simmer, cover, and cook until cabbage is tender and liquid is reduced to a syrup, 25 to 30 minutes. If necessary, remove lid in the last 5 minutes and cook, uncovered, to reduce liquid to desired consistency; most of the apples will disintegrate.
  • Transfer cabbage and apples to a bowl and serve immediately.

Salt and pepper
1 small onion, thinly sliced
1/2 cup cider vinegar
1 granny smith apple, peeled, cored and chopped
1 cup water
1 small head red cabbage, finely shredded
1 tablespoon brown sugar

Steps:

  • Melt butter in heavy pot over medium heat. Add onion and cook for 3 minutes. Add apple and cook for 2 minutes. Add in cabbage and stir to coat. Season and add vinegar, water and brown sugar. Bring to a simmer and cover. Reduce heat to medium and cook for 15-20 minutes until cabbage is tender. Add more water if necessary. Serve hot.
