CARAMEL BANANAS WITH MAPLE SYRUP



Caramel Bananas with Maple Syrup image

This is very easy to make, and it's delicious too. Use pure maple syrup if possible. Makes ALL the difference. Serve as a light dessert or at a lazy Sunday brunch on pancakes.

2 ripe bananas
1 teaspoon unsalted butter
3 tablespoons pure maple syrup (may use brown sugar in a pinch)
1 teaspoon pure vanilla extract
1 tablespoon fresh lemon juice
1/4 teaspoon cinnamon

Steps:

  • Cut bananas in half crosswise then lengthwise.
  • Melt the butter over medium-high heat in a large skillet and place the bananas in the butter, coating them using a pastry brush.
  • Move the bananas to one side of the pan.
  • Slightly tip the pan (with bananas on upper side), then add the maple syrup (or brown sugar), vanilla and lemon juice.
  • Sprinkle the cinnamon and give the mixture a good stir.
  • Lower the pan and blend the sauce with the bananas, spooning the sauce over the top.
  • Cook for 5 minutes.
  • Arrange 4 banana pieces on each dessert plate.
  • Garnish each dish with mint sprig, and serve with a scoop of vanilla ice cream or any flavor ice cream of your choice.

Steps:

  • 1. Melt your butter on high in a small pot or pan. Meanwhile, slice your bananas into circle cuts and throw them into the melted butter. Let simmer for a teeny second! Squeeze in your maple syrup, and don't forget: eyeball everything according to how much you want served!
  • 2. When heated through, pour on top of pancakes, or waffles and enjoy!

BREAD PUDDING WITH WARM BANANA MAPLE SAUCE

1 loaf unsliced rich egg bread, such as challah (1 pound), cut into 1 inch thick slices
3 cups milk
1/2 teaspoon salt
10 large eggs
1/4 cup plus 1 tablespoon sugar
1 teaspoon ground cinnamon
4 tablespoons butter or margarine
6 medium firm bananas, cut into 1/4 inch thick slices
1 bottle (8 ounces) maple syrup

Steps:

  • Grease shallow 3 1/2 to 4 quart ceramic casserole or 13-inch by 9-inch glass baking dish. Arrange bread slices, overlapping slightly, in dish. In a medium bowl, beat milk, salt, eggs and 1/4 cup sugar until well mixed. Slowly pour egg mixture over bread slices; prick bread slices with fork and press slices down to absorb egg mixture. Spoon any egg mixture that bread had not absorbed over bread slices.
  • In a cup, mix cinnamon with remaining 1 tablespoon of sugar; sprinkle over top of bread pudding and dot with 2 tablespoons butter. Cover and refrigerate at least 30 minutes or overnight.
  • Preheat oven to 325 degrees F. Remove cover from bread pudding and bake 45 minutes, or until knife inserted in the center comes out clean.
  • For the sauce; melt remaining 2 tablespoons butter in a nonstick 12-inch skillet over a medium high heat. Add banana slices and cook about 3 minutes, until lightly browned. Pour maple syrup over bananas; heat to boiling. Boil 2 to 3 minutes, until mixture thickens slightly. Serve warm sauce in bowl with bread pudding

1/4 cup butter, cubed
1/4 cup heavy whipping cream
2 tablespoons maple syrup
2 large bananas, cut into 1/2-inch slices
1/2 teaspoon rum extract
Vanilla ice cream

Steps:

  • In a small saucepan, combine the brown sugar, butter, cream and maple syrup. Cook and stir over medium heat until sauce is smooth, 4-5 minutes. Stir in bananas; heat through. Remove from the heat; stir in extract. Serve with ice cream.
