A restaurant near where I work makes the most amazing sweet potato fries with an incredibly delicious maple mayo dipping sauce. This is my take on the maple mayo dip....A pretty close copy if you ask me.

1/8 cup pure maple syrup
1 1/4 tablespoons brown sugar

Steps:

  • Mix all ingredients together.
  • Refrigerate for 10 minutes or so.

2 pounds small sweet potatoes (about 5), cut lengthwise into 1-inch wedges
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
2 tablespoons pure maple syrup
1/2 teaspoon finely grated lemon zest

Steps:

  • Preheat the oven to 425 degrees F. Toss the sweet potatoes on a large, foil-lined rimmed baking sheet with the oil and season with salt and pepper. Roast the potatoes for 20 minutes.
  • Remove the baking sheet from the oven and toss the potatoes with the maple syrup. Continue to roast the potatoes, stirring occasionally until the potatoes are tender and lightly browned, about 15 minutes more. Sprinkle with the lemon zest while still warm.

Sweet potato "fries" are one of our favorite side dishes. Kids love them, and they feel much naughtier than they actually are, since they're baked in the oven and not fried! With a little maple syrup for added sweetness, this makes for the perfect fall comfort food.

2 large sweet potatoes 2 tablespoons grapeseed or canola oil ½ cup maple syrup 2 teaspoon nutmeg 1 teaspoon ground cloves ½ teaspoon salt

Steps:

  • Preheat your oven to 350 degrees. Line a sheet pan with parchment paper or aluminum foil.
  • Wash and scrub potatoes to clean and remove dirt.
  • Leaving the skin on, cut the sweet potato into 1-inch slices. Take each slice and cut into sticks (about 1 x 1 x 4 inches in size).
  • Toss the sticks in a bowl with the oil and maple syrup. Add nutmeg, cloves, and salt and toss, making sure the fries are well-coated with the seasonings.
  • Spread the fries onto the tray, in a single layer. Bake for 16-18 minutes, flipping halfway through. Let cool slightly before serving.

Baked Sweet Potato

2 medium sweet potatoes, peeled
2 tablespoons good olive oil
1 tablespoon light brown sugar
1/2 teaspoon kosher salt, plus extra for sprinkling

2 large sweet potatoes, unpeeled and scrubbed (about 1-1/2 lb)
1 1/2 tablespoons vegetable oil, melted butter or 1 1/2 tablespoons margarine

Vegetable oil, for frying
14 cup maple sugar
1 teaspoon black pepper
1 teaspoon kosher salt
1 teaspoon mild yellow curry
2 large sweet potatoes or yams, skin-on
1 tablespoon minced green onion, to garnish

Steps:

  • In a deep-fryer or heavy-bottomed pot, heat enough vegetable oil to come halfway up the sides of the pot, to 350 degrees F.
  • In a small bowl, whisk together the maple sugar, black pepper, salt, and yellow curry. Reserve.
  • Scrub the sweet potatoes clean. Cut in half and then into 12-inch thick wedges. When oil is hot, reduce heat to medium-high and carefully put half of the wedges in the oil. Cook turning occasionally to brown on all sides, about 10 to 12 minutes. Remove to a paper towel lined colander to drain. Sprinkle the fries with some of the reserved spice mixture. Cover with another paper towel to keep warm. Repeat with remaining wedges.
  • Transfer the wedges to a serving bowl and garnish with green onions.
