Maple Glazed Sweet Potatoes with Bacon and Caramelized Onions image

I made this for Thanksgiving dinner and my family went crazy over it. It is simple, looks great on the table and has already been requested for Christmas dinner! This recipe can be adjusted as you like by adding more or less bacon and onions.

4 pounds sweet potatoes, peeled and cut in 1-inch chunks
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon ground black pepper
5 slices smoked bacon, chopped
1 pound onions, thinly sliced
1 cup pure maple syrup
2 teaspoons fresh thyme

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Toss the sweet potato chunks, olive oil, salt, and black pepper in a large bowl, and spread the sweet potatoes out onto a large rimmed baking sheet.
  • Roast in the preheated oven until browned and tender, about 40 minutes; stir after the first 20 minutes.
  • Cook the bacon until crisp and brown in a large skillet over medium heat, about 10 minutes; transfer bacon to a bowl, but leave the grease in the skillet. Cook the onions in the bacon grease until browned, about 10 minutes, stirring frequently. Reduce heat to low, and cook the onions until very soft, brown, and sweet, another 10 to 15 minutes. Stir often. Mix the onions with the bacon in the bowl, and set aside.
  • Pour the maple syrup into the hot skillet with the thyme, and bring to a rolling boil. Boil the syrup until reduced by half, 3 to 4 minutes. Place the roasted sweet potatoes and onion-bacon mixture into the skillet, and stir to coat the vegetables with maple glaze. Transfer to a serving dish.

4 small sweet potatoes (or 2 large), peeled and cut into 1-inch cubes
1/4 cup grade B maple syrup, divided
1/4 cup extra-virgin olive oil, divided
2 teaspoons kosher salt, plus more for seasoning
1 teaspoon freshly ground black pepper, plus more for seasoning
4 large shallots, peeled and thinly sliced
2 tablespoons balsamic vinegar

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl add the sweet potatoes, 2 tablespoons of the maple syrup, 2 tablespoons of the olive oil, 2 teaspoons salt and 1 teaspoon pepper. Mix to evenly coat the potatoes and arrange on a sheet tray. Roast until caramelized, golden brown and soft, about 20 to 30 minutes. Be sure to check them after 15 minutes and stir, if needed.
  • Meanwhile, in a large skillet over medium-low heat, add the remaining 2 tablespoons of olive oil and the sliced shallots and saute until they start to caramelize, about 5 minutes Add the remaining 2 tablespoons of maple syrup and balsamic vinegar. Season with salt and pepper, to taste. Lower heat to medium and cook until golden brown and caramelized, about 5 minutes. Add water, 1 tablespoon at a time, if the pan becomes dry.
  • Add the roasted sweet potato cubes to the caramelized shallots and transfer to a warm serving dish.

SWEET POTATOES WITH CARAMELIZED ONIONS

Baked sweet potatoes are topped with slow cooked caramelized onions and red bell peppers. Serve with a dollop of sour cream or plain yogurt. Use large sweet potatoes for a delicious meatless main dish.

2 sweet potatoes
1 tablespoon olive oil
2 red bell peppers, thinly sliced
1 sweet onion, thinly sliced
¼ cup fat-free sour cream
salt and pepper to taste

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Scrub and dry the sweet potatoes, then prick several times with a fork and place onto a baking sheet. Bake in the preheated oven until the sweet potatoes are easily pierced with a fork, 50 minutes to 1 hour.
  • Heat the oil in a large skillet over medium heat. Stir in the onion and bell pepper; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 20 to 30 minutes more.
  • Split open the baked sweet potatoes and top with the onion mixture, salt, pepper, and a dollop of sour cream.

5 lbs sweet potatoes, unpeeled
1/4-1/2 cup maple syrup
5 tablespoons unsalted butter, at room temperature
1 cup sour cream
1/2 teaspoon kosher salt
1/4 teaspoon ground nutmeg

Steps:

  • Heat oven to 375 degrees.
  • Pierce the sweet potatoes several times with a fork and place on a foil-lined baking sheet. Bake until softened, 1-1/2 hours, depending on size; let cool.
  • Slice each sweet potato in half lengthwise. Scoop the flesh into a saucepan and discard the skins. Add the maple syrup (to taste), butter and sour cream. Using a wooden spoon or potato masher, mix until smooth. Season with the salt and nutmeg.
  • Place over medium heat, stirring occasionally, until warmed through, about 5 minutes.

4 large sweet potatoes
1/4 cup grade b maple syrup, plus 2 tablespoons
1/4 cup extra-virgin olive oil, divided in 1/2
2 teaspoons kosher salt, plus more for seasoning
1 teaspoon fresh ground black pepper, plus more for seasoning
2 tablespoons butter
1 large vidalia onions or 1 large other sweet onion, thinly sliced
hot water

Steps:

  • Preheat oven to 375°F
  • Peel and cut the sweet potato into chunks.
  • Combine the sweet potato chunks, 1/4 cup maple syrup, 1/4 cup olive oil, 2 teaspoons salt, and 1 tsp pepper and place in shallow baking dish.
  • Bake in the oven for 35-40 minutes, or until sweet potatoes are soft. Check the sweet potatoes after 15 minutes and stir if needed.
  • About 10 minutes before the sweet potatoes are done, thinly slice the onion.
  • Melt 2tbsp butter in a medium sauce pan.
  • Add 2 tbsp olive oil, the sliced onion, 2 tbsp maple syrup, and season with salt and pepper.
  • Sauté onions for about 2 minutes or until deep golden brown. If pan becomes dry, add 1 tbsp water.
  • Remove the onions from the stove and set aside.
  • Put the sweet potato mixture in a food processor and pulse until just blended. Add half the caramelized onions. Pulse a few times until you have the desired consistency, adding 1 tbsp water at a time if needed for a smoother puree.
  • Fold in the remaining onions, reserving a few for the garnish.
  • Serve in a warm dish garnished with the remaining caramelized onions on top for garnish.
