1/2 cup butter, softened
1/2 cup packed brown sugar
2 large eggs
1 cup mashed ripe bananas (about 2 medium)
1/2 cup sour cream
1/3 cup maple syrup
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped pecans
STREUSEL:
2 tablespoons all-purpose flour
2 tablespoons sugar
1 tablespoon packed brown sugar
1 tablespoon butter, softened
1/8 teaspoon ground cinnamon
2 tablespoons finely chopped pecans

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. In a small bowl, mix bananas, sour cream, maple syrup and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; add to creamed mixture alternately with banana mixture, beating well after each addition. Fold in pecans., Transfer to a greased 9x5-in. loaf pan. For streusel, in a small bowl, mix flour, sugars, butter and cinnamon until blended. Stir in pecans; sprinkle over batter., Bake 55-60 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool.

¼ teaspoon salt
½ cup vegetable oil
½ cup pure maple syrup
4 eggs, separated
2 tablespoons milk
3 bananas, mashed
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

2 tablespoons milk

9 prunes
3 tablespoons water
2 1/2 cups all purpose flour
1 cup sugar
1/2 cup quick-cooking oats
2 teaspoons baking soda
1 teaspoon ground allspice
1 teaspoon ground cinnamon
2 cups canned solid-pack pumpkin
1 cup (about 4 ounces) coarsely chopped pecans
1/2 cup maple syrup
1/4 cup vegetable oil
2 egg whites, beaten to blend

Steps:

  • Preheat oven to 350°F. Butter 9x5x2 1/2-inch loaf pan. Place paper liners in 6 muffin cups. Puree prunes and water in processor until smooth. Combine flour, sugar, oats, baking soda, allspice and cinnamon in medium bowl. Mix pumpkin, pecans maple syrup, oil, egg whites and pureed prunes in large bowl. Stir in dry ingredients into pumpkin mixture (batter will be thick).

1/4 cup warm water (110° to 115°)
1 cup warm 2% milk (110° to 115°)

1-1/2 teaspoons salt
1 teaspoon maple flavoring
1/8 teaspoon ground cardamom
1-1/2 cups whole wheat flour
2-1/2 to 3 cups all-purpose flour
FILLING:
1 cup finely chopped peeled tart apple
1/4 cup sugar
1/4 cup packed brown sugar
1/4 cup finely chopped walnuts
2 tablespoons all-purpose flour

2 1/2 c flour, sifted
1 c sugar
3 tsp baking powder
1/2 tsp salt
1 c milk
1 egg, well beaten
3/4 tsp mapleline or maple flavoring
1 c nuts, chopped

Steps:

  • 1. Heat oven to 350 degrees. Grease loaf pan.
  • 2. Sift dry ingredients into bowl and then add milk, egg and maple flavoring. Mix only until dry ingredients are moistened. Stir in nuts.
  • 3. Pour into greased pan and bake for 1 hour or until toothpick comes out clean from center.
  • 4. This bread has a very mild maple flavor. It is good for anytime, but having it for breakfast, slathered in butter and toasted in a skillet and served with a fresh fruit cup is very tasty. Afternoon tea with tea-wonderful as well. I like to use pure maple flavoring instead of just an extract, if available.

6 tablespoons butter, softened
GLAZE:
1-1/2 cups confectioners' sugar
1/4 teaspoon maple flavoring
2 to 3 tablespoons milk

Steps:

  • In a large bowl, dissolve yeast in warm water. Add milk, shortening, sugar, egg, salt, maple flavoring, cardamom and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Meanwhile, grease a baking sheet or 14-in. pizza pan or line with foil. For filling, combine the brown sugar, pecans, cinnamon and maple flavoring; set aside. , Punch dough down. Turn onto a lightly floured surface; divide into thirds. Roll each into a 14-in. circle; place one on prepared pan. Spread with a third of the butter; sprinkle with a third of the filling. Top with a second circle of dough; top with butter and filling. Repeat. Pinch to seal. , Carefully place a glass in center of circle. With scissors, cut from outside edge just to the glass, forming 16 wedges. Remove glass; twist each wedge five to six times. Pinch ends to seal and tuck under. Cover and let rise until doubled, about 30 minutes. , Bake at 375° for 25-30 minutes or until golden brown. For glaze, combine the sugar, maple flavoring and enough milk to achieve desired consistency; set aside. , Carefully remove bread from pan by running a metal spatula under it to loosen.
