4 (5 -6 ounce) norwegian salmon fillets, skin removed
1/4 cup brown sugar
1 tablespoon black pepper, cracked
1/2 teaspoon salt
1/4 cup maple syrup
1/4 cup mustard (grainy or Dijon)
2 tablespoons dill, chopped
2 tablespoons olive oil

Steps:

  • Preheat oven to 400°F.
  • Combine brown sugar, cracked black pepper and kosher salt in bowl. Mix well.
  • Rub salmon filets with brown sugar mixture, making sure to use all of mixture.
  • Let stand for 15 minutes in refrigerator covered lightly with plastic wrap.
  • Combine maple syrup, mustard and fresh dill in small mixing bowl; set aside.
  • Coat bottom of baking pan with 1 tbsp olive oil. Place salmon fillets in pan and drizzle with remaining oil.
  • Bake for 12 minutes or until cooked to desired temperature.
  • Remove from baking pan and drizzle salmon with maple-mustard-dill sauce.

2 pork tenderloins , about 300g/10oz each
1 tbsp plain flour
2 tbsp olive oil
1 red onion , thinly sliced
200ml vegetable stock
2 tbsp maple syrup
2 tbsp wholegrain mustard
juice 1 lemon
handful parsley sprigs (optional)

Steps:

  • Cut the pork into 3cm thick slices, season with salt and pepper, then lightly coat in the flour (the easiest way to do this is to put the flour and seasoning in a large food bag, add the pork and shake well). Heat the oil in a large frying pan, preferably non-stick, then add the pork and quickly fry until it is browned all over. Cook the pork for about 5 mins, then remove to a plate and cover with foil while you make the sauce.
  • Add the onion to the pan (with a touch more oil if needed), then quickly fry until lightly coloured, add the stock, then bring to the boil. Boil hard for a couple of minutes to reduce the stock a little, stir in the maple syrup, mustard and lemon juice, then bring back to the boil, stirring well.
  • Return the pork to the pan and gently simmer for a further 3-4 mins until it is cooked through. Sprinkle with parsley, if using.

2 carrots, peeled and grated
1/2 red onion, thinly sliced
1 garlic clove, minced
1/4 cup mayonnaise
1 cup apple cider vinegar
2 tablespoons kosher salt
1 tablespoon granulated sugar
A few dashes hot sauce
2 Persian cucumbers, thinly sliced on a mandoline
Canola oil, for frying
2 tablespoons garlic powder
2 tablespoons onion powder
1 tablespoon plus 1 teaspoon chipotle chile powder
1 tablespoon mustard powder
2 cups buttermilk
2 boneless, skinless chicken breasts, sliced in half on a bias
2 cups all-purpose flour
2 tablespoons kosher salt

Steps:

  • For the slaw: To a large bowl, add the cabbage, a generous pinch of salt, vinegar, carrots, onion and garlic. Toss to combine, then set aside to sit for 15 to 20 minutes. Add the mayonnaise and mix to combine.
  • For the quick pickles: To a bowl or container, add the vinegar, 1 cup water, the salt, sugar and hot sauce. Stir well to combine. Add the cucumbers, then allow to sit for 20 minutes.
  • For the chicken: Fill a deep fryer or large heavy-bottomed pot with 2 inches of canola oil. Heat to 350 degrees F. Set a rack inside a rimmed sheet pan.
  • To a large bowl, add 1 tablespoon of the garlic powder, 1 tablespoon of the onion powder, 1 tablespoon of the chipotle powder, mustard powder and buttermilk. Add the chicken and submerge, ensuring the chicken is fully coated. Allow to marinate for 15 minutes. To another large bowl, add the flour, the remaining 1 tablespoon garlic powder, the remaining 1 tablespoon onion powder, 1 tablespoon of the salt and the baking soda. In a small bowl, combine 1 tablespoon salt and the remaining 1 teaspoon chipotle powder.
  • Preheat the oven to 400 degrees F. Remove the chicken from the buttermilk mixture and place into the seasoned flour. Toss until the chicken is fully coated, then transfer it back into the buttermilk, and then back into the seasoned flour so the chicken is double coated. Dust off any excess flour, and gently place the chicken into the hot oil. Fry the chicken in batches until the crust is golden brown and crispy and the chicken reaches an internal temperature of 160 degrees F, 4 to 5 minutes. Place on the prepared sheet pan and season the chicken immediately with the chipotle salt. Transfer to the oven and continue to cook for another 5 minutes or until the chicken reaches an internal temperature of 165 degrees F.
  • For the maple mustard sauce: Mix the Dijon and maple syrup in a small bowl to combine.
  • To assemble: Spread some of the maple mustard sauce followed by a slice of cheese on the top and bottom of each bun. Add the fried chicken, then the slaw and finally the pickles. Serve with more maple mustard sauce on the side for dipping.

  • Pour soy sauce on a plate. Mix together bread crumbs, onion powder, garlic powders, and thyme on a second plate. Set out a third plate. 1 tablespoon butter
1 small onion, finely chopped
1 tablespoon flour
1 cup chicken stock
2 tablespoons Dijon mustard
2 tablespoons pure maple syrup
1 tablespoon soy sauce

1 cup panko breadcrumbs (Japanese coarse dry crumb) or 1 cup coarse dry breadcrumbs
1 tablespoon ground ginger
1/2 teaspoon salt

4 (12 ounce) pork tenderloin

Steps:

  • To make sauce: melt butter over medium heat in small saucepan.
  • Cook onion, stirring for about 5 minutes or until soft and starting to brown.
  • Sprinkle with flour and cook, stirring for 1 minute.
  • Whisk in stock, then mustard, syrup and soy sauce.
  • Increase heat to medium high.
  • Bring to boil.
  • Boil gently, whisking, for about 5 minutes or until slightly thickened.
  • Check seasoning.
  • For pork: preheat oven to 375 degrees.
  • Combine bread crumbs, ginger, salt and pepper in shallow dish.
  • Separately, combine mustard and syrup and brush all over pork tenderloins.
  • Tuck thin end of pork under to make even thickness and roll each tenderloin in crumb mixture, pressing to make crumbs stick.
  • Space tenderloins apart on foil-lined baking sheet, placing tucked end underneath.
  • Roast for 20-25 minutes or until internal temperature is 160 degrees.
  • (Pork should still have a tinge of pink in the centre).
  • Let pork sit for 5 minutes on cutting board.
  • Slice diagonally into ½ inch thick slices.
  • Place slices on serving dish and serve sauce on the side.

A French-Canadian entree recipe for salmon fillet seared over a high heat and served with a maple mustard seed sauce. I found this recipe on a French-Canadian food website, and have adapted it for posting for the 2005 Zaar World Tour. No serving sizes or preparation or cooking times were provided, so I have provided guesstimates. If you are reviewing this recipe, it would be helpful if you comment on these if you find the times to be different from my guesstimates. Thank you! 28 ounces center-cut salmon fillets
1 tablespoon vegetable oil
salt, to taste
fresh ground black pepper, to taste
3 tablespoons water
2 tablespoons Dijon mustard
2 tablespoons maple syrup
4 garlic cloves, finely chopped
2 teaspoons mustard seeds
1/4 teaspoon dill
1/4 cup chopped scallion

Steps:

  • Heat the oil in a non-stick pan until it is very hot.
  • Pat the fish dry, remove the skin and season both sides with salt and pepper, to taste.
  • Put the fish, skin (now skinless) side down and cook for about 4 minutes. Turn over and sear on the other side, for another 3-4 minutes.
  • While the salmon is cooking, mix the water, mustard, maple syrup, garlic, mustard seeds, dill and scallions together.
  • Remove the salmon and place on a covered plate and cover loosely with foil to keep it warm.
  • Remove the pan from the heat for about one minute. Return to the heat and pour in the mustard/maple mixture. Whisk the ingredients into the pan and allow the liquid to reduce slightly.
  • Pour the sauce over the fish and serve.

2 8-ounce skinless boneless chicken breast halves, cut crosswise in half
1 large egg
1 tablespoon finely chopped fresh Italian parsley
2 teaspoons plus 2 tablespoons Dijon mustard
1 cup panko (Japanese breadcrumbs)
2 tablespoons olive oil
1 cup low-salt chicken broth
3 tablespoons pure maple syrup
2 tablespoons plus 1 teaspoon coarse-grained mustard
1 tablespoon chilled unsalted butter

Steps:

  • Using meat mallet or rolling pin, pound chicken in resealable plastic bag to 1/3-to 1/2-inch thickness. Whisk egg, parsley, and 2 teaspoons Dijon mustard in large bowl. Place chicken in egg mixture; turn to coat. Sprinkle chicken with salt and pepper. Dip each chicken piece in panko; turn to coat. Heat oil in large nonstick skillet over medium-high heat. Add chicken; cook until brown and cooked through, about 4 minutes per side.
  • Meanwhile, whisk broth, syrup, coarse-grained mustard, and remaining 2 tablespoons Dijon mustard in glass measuring cup.
  • Transfer chicken to plates. Add broth mixture to skillet; boil until reduced to 3/4 cup, stirring occasionally, about 4 minutes. Add butter; whisk until melted. Spoon sauce alongside chicken.
