Steps:

  • Flatten chicken to 1/2-in. thickness. Sprinkle with salt and pepper. In a large skillet, cook chicken in oil for 5-6 minutes on each side or until no longer pink. Remove and keep warm. , Meanwhile, in a small bowl, combine cornstarch and cider until smooth. Stir in syrup and onion powder; add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Add chicken and turn to coat.

2 tablespoons extra-virgin olive oil
2 apples (1 red, 1 green), cored and cut into wedges
8 medium shallots, quartered lengthwise
1/4 cup fresh sage leaves, torn
1/2 cup low-sodium chicken broth
1/4 cup pure maple syrup
1/4 cup apple cider vinegar

Steps:

  • Pat the chicken dry and season all over with salt. Heat a large heavy skillet over high heat and add the olive oil. When the oil is hot, add the chicken skin-side down and cook, undisturbed, until the skin is browned and crisp, about 5 minutes.
  • Turn the chicken and add the apples, shallots and sage to the skillet. Reduce the heat to medium high and cook until the chicken is browned on the bottom, 4 to 5 minutes. Transfer the chicken to a plate and continue to cook the apples and shallots, stirring, until golden, about 2 more minutes.
  • Meanwhile, make the glaze: Mix the chicken broth, maple syrup, vinegar and 1/2 teaspoon salt in a small bowl. Add the mixture to the skillet with the apples and shallots and boil until reduced by about three-quarters, 2 to 3 minutes. Return the chicken to the skillet, turning to coat, until cooked through, about 2 more minutes.

1 ½ pounds sweet potatoes, peeled and cut into 1-inch pieces
1 pound chicken tenders
2 teaspoons steak seasoning (such as Montreal Steak Seasoning®)
2 tablespoons vegetable oil
½ cup maple syrup
½ cup sliced green onions

Steps:

  • Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash the potatoes, and set aside.
  • Sprinkle chicken tenders with steak seasoning; heat the oil in a large skillet over medium heat, and cook the chicken tenders until the meat is lightly browned and no longer pink inside, 5 to 8 minutes per side. 2 tablespoons honey mustard chicken glaze seasoning (recommended: McCormick)
1 tablespoon spicy brown mustard
2 tablespoons canola oil
Salt and freshly ground black pepper
1 pound baby carrots
1 pound Brussels sprouts, halved
1 pound red baby potatoes, halved
1 (3 1/2 to 4 1/2-pound) chicken, rinsed and patted dry
1 tablespoon chicken seasoning (recommended: McCormick Perfect Pinch)
1/4 cup maple syrup
1/4 cup orange juice
1 tablespoon spicy brown mustard
3 tablespoons butter
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • For the vegetables: In a small bowl, whisk together the seasoning, mustard, oil and salt and pepper, to taste. Toss with the vegetables and spread in a layer on the bottom of a roasting pan.
  • For the chicken: Season the chicken with the chicken seasoning. Place the chicken on the vegetables in the roasting pan. Roast until golden and an instant-read thermometer registers 150 degrees F when inserted in the thickest part of the thigh, 50 minutes to 1 hour.
  • For the glaze: While the chicken is roasting, whisk together all the ingredients for the glaze in a pot over medium-high heat. Bring to a simmer and cook until thickened slightly. Season with salt and pepper, to taste.
  • When the chicken is nearly cooked through, completely coat the outside with the glaze using a pastry brush. Pour any remaining glaze over the vegetables. Roast until an instant-read thermometer registers 175 degrees F when inserted in the thickest part of the thigh, an additional 15 to 20 minutes. Remove the chicken from the oven and let rest for 10 minutes before serving.

1 cup maple syrup
2/3 cup chili sauce
1/2 cup finely chopped onion
2 tablespoons Dijon mustard

  • Cut chicken wings into three sections; discard wing tip section. In a large resealable plastic bag, combine remaining ingredients. Set aside 1 cup for basting and refrigerate. This is a recipe I modified from Eating Well magazine that pairs that richness with a slightly sweet flavorful marinade and sauce. These are fabulous when marinated overnight, but you can go a short as two hours. The thighs can be cooked on an indoor or outdoor grill or broiled.

4 skinless chicken thighs or 4 boneless skinless chicken thighs, all visible fat removed
3 tablespoons pure maple syrup
3 tablespoons reduced sodium soy sauce
1 tablespoon lemon juice
1 garlic clove, minced (medium sized)
1 1/2 teaspoons minced fresh ginger
1/4 teaspoon fresh ground pepper
1 dash cayenne pepper (optional)

Steps:

  • Mix together all ingredients save the thighs in a resealable bag or non reactive container. Add thighs and seal. Marinade in the fridge for 2 to 24 hours.
  • When ready to cook, prepare the cooking surface with a light coating of cooking spray or oil. Remove the thighs from the marinade removing any excess.
  • Place thighs on the grill and cook for 4 to 6 minutes per side or until a thermometer registers 165 degrees. Actual cooking time will vary depending on the type of grill chosen. Remove chicken to a serving plate.
  • Place the marinade in a small sauce pan over medium heat and bring to a boil. Reduce temperature to a low simmer and cook for 3 to 5 minutes.

4 boneless skinless chicken breasts , about 500g/1lb 2oz total weight
3 tbsp maple syrup
1 tbsp wholegrain mustard
grated zest of 1 orange
1 tbsp soy sauce

Steps:

  • Make several diagonal slashes across each chicken breast. Tip the other ingredients into a wide shallow bowl and swirl them together until everything is well mixed. Add the chicken breasts and turn them in the mixture until they are evenly coated. At this point you can cover the dish with cling film and chill the chicken for 24 hours, but it's also fine to cook them straight away.
  • Preheat the grill or light the BBQ. Then cook the chicken for 5-6 minutes each side, turning once and brushing or spooning over more marinade as you go, until the chicken is browned and glossy. Serve the chicken on a bed of dressed salad leaves.

5 tablespoons canola oil
1 small red onion, coarsely chopped
1 quart tangerine juice or tangerine-orange juice, not from concentrate
4 sprigs fresh thyme
1 tangerine or orange, zested
1/4 cup pure maple syrup
1 tablespoon low-sodium soy sauce
1 teaspoon coarsely ground black pepper, plus more for seasoning
8 chicken drumsticks
8 bone-in chicken thighs
Salt
2 green onions, thinly sliced, for garnish
Grilled oranges and tangerines, for garnish

Steps:

  • Heat the grill to medium-high.
  • Heat 2 tablespoons of the oil in a medium saucepan over high heat, add the onion and cook until soft, 3 to 4 minutes. Add the juice and thyme, bring to a boil and cook, stirring occasionally, until thickened and reduced to approximately 1/2 cup, 20 to 25 minutes.
  • Strain the mixture into a bowl and whisk in the syrup, soy sauce and black pepper and let cool to room temperature. Can be made 2 days in advance and brought to room temperature before using.
  • Brush chicken on both sides with the remaining oil and season with salt and pepper. Grill until golden brown on both sides and just cooked through. Begin brushing with the glaze during the last 5 minutes of grilling. Remove to a platter and sprinkle with the green onion. Garnish with grilled citrus.

This Maple Dijon Glazed Chicken is really easy to throw together, and so flavorful!

1/2 cup Dijon mustard
1/4 cup maple syrup
1 Tablespoon rice vinegar
2 pounds boneless skinless chicken thighs (or bone in)
Salt and pepper, to taste
1/4 teaspoon dried rosemary (optional for topping)

Steps:

  • Preheat your oven to 425 degrees F.
  • Mix together Dijon mustard, maple syrup and rice vinegar.
  • Put the whole package of chicken thighs into an 8 x 8 inch glass baking dish (I lined mine with aluminum foil for easy clean up).
  • Salt and pepper the thighs.
  • Pour maple mustard mixture over top, turning the thighs in the mixture so they are fully coated.
  • Put the chicken thighs in the oven, and let them bake for about 40 minutes or until a meat thermometer reads 165 degrees F.
  • Baste the tops of the chicken with more sauce halfway through cooking time. Use the sauce that is in the pan for basting.
  • Let the chicken rest for 5 minutes before serving.
  • Sprinkle with rosemary if desired.

1 whole roasting chicken, (freerange birds are always tastier)
2 large carrots --peeled and cut into 1- inch pieces
2 ribs of celery--cut into linch pieces
1 large onion, or 2 small ones-- peeled and cut into eighths
1 can of chicken broth
1/2 cup of real Vermont maple syrup
1 tablespoon chopped thyme-- dry is good, fresh is better
salt and pepper
1 pound russet potatoes, peeled and soaked in salted water
1 egg
1 small red onion, fine dice
3/4 cup flour
Salt
White pepper
1 tablespoon olive oil
Canola oil for sauteing
6 Cortland apples, peeled, cored and diced
3 tablespoons of granulated sugar
1/4 cup water

Steps:

  • Preheat oven to 325 degrees F
  • Once you've prepared all of your vegetables, toss them together with the thyme and some salt and pepper. Put the veggies into a 2-inch deep roasting pan.
  • Wash the bird inside and out and dry with a towel. Sprinkle it all over with salt and pepper. Rub a couple of teaspoons of olive oil all over the skin. Place it on top of the vegetables. Put it into the oven.
  • Pour the stock and syrup into a small saucepan. Bring to a boil and reduce it by half: Use this mixture to baste the chicken generously and frequently.
  • While the chicken is cooking, make the pancakes and the applesauce.
  • Grate the potatoes in the food processor. Put them in a bowl and add the egg and onion. Mix slightly. Add the flour and mix some more, but not too much. Add the salt and white pepper and olive oil. Mix a little more.
  • Heat the Canola oil in a nonstick pan. When it starts to smoke a little, add one sixth of the mixture. Turn down the heat to medium. When the potatoes start to brown around the edges, flip them over and cook for almost 3 to 4 minutes more. Repeat until you are out of batter. You may hold these warm and put them in the oven just before you sit down for dinner
  • Cook the apples on the stovetop with a little water and the sugar. When soft, mash with a potato masher or puree in the food processor for a smoother sauce.
  • FINISHING UP AND SERVING:
  • You will know that the chicken is done when the leg moves somewhat freely and the juices are running clear between the breast and the thigh. Take it out of the oven, move it to the cutting board and allow it to rest for 20 minutes.
  • While the bird is resting, spoon the veggies into a serving dish and keep warm. Put the roasting pan with the cooking juices on the stove and add 1/2 cup of white wine. Reduce all of this together just a little and pass in a pitcher with the chicken. Carve the chicken into large pieces; cut the pancake into wedges. Top with warm applesauce. Serve all family style and enjoy.
  • For a quicker dinner you may roast a whole cut up chicken, basting all pieces in the same manner. You will have to cut the vegetables into smaller pieces so that they are done when the chicken is

1/2 cup Dijon mustard
2 tablespoons chopped fresh chives
1 cut-up whole chicken (3 to 3 1/2 lb)
1 teaspoon seasoned salt
1/4 teaspoon coarse ground black pepper

Steps:

  • Heat coals or gas grill for direct heat. In 1-quart saucepan, mix maple syrup, mustard and chives.
  • Sprinkle both sides of chicken pieces with seasoned salt and pepper. Cover and grill chicken over medium heat, skin sides up, 15 minutes; turn chicken. 1/2 lb boneless skinless chicken breast halves
3 tablespoons reduced-calorie maple-flavored syrup
2 tablespoons lemon juice
1 tablespoon butter or margarine, melted
1 1/2 teaspoons chopped fresh or 1/2 teaspoon ground sage leaves
1 teaspoon grated lemon peel
1/4 teaspoon pepper
1 medium bell pepper, cut into 16 pieces
1 medium yellow summer squash, cut lengthwise in half, then cut crosswise into 16 pieces

Steps:

  • Remove fat from chicken. Cut chicken into 24 pieces. In large glass or plastic bowl, mix remaining ingredients except bell pepper and squash. Stir in chicken, bell pepper and squash. Cover and refrigerate at least 4 hours but no longer than 24 hours.
  • Set oven control to broil. Thread chicken, bell pepper and squash alternately on each of eight 8-inch skewers.* Place on rack in broiler pan. Broil with tops 4 inches from heat 2 to 3 minutes; turn. Broil 2 to 3 minutes longer or until chicken is no longer pink in center.

From Cooks Illustrated: "When reducing the glaze in step 4, remember that the skillet handle will be hot; use an oven mitt. To make sure the chicken cooks evenly, buy breasts that are similar in size-about 12 ounces apiece. If the glaze looks dry during baking, add up to 2 tablespoons of juice to the pan. If your skillet is not ovenproof, brown the chicken breasts and reduce the glaze as instructed, then transfer the chicken and glaze to a 13 by 9-inch baking dish and bake (don't wash the skillet). When the chicken is fully cooked, transfer it to a plate to rest and scrape the glaze back into the skillet to be reduced." 2 tablespoons apple cider
1/3 cup light corn syrup
2 tablespoons maple syrup
1 tablespoon Dijon mustard
1 tablespoon distilled white vinegar
1/8 teaspoon red pepper flakes
1/8 teaspoon salt
1/8 teaspoon ground black pepper
1/2 cup all-purpose flour
4 (12 ounce) chicken breasts, bone-in, skin-on
2 teaspoons vegetable oil
1 medium shallot, minced (about 3 tablespoons)

Steps:

  • Adjust oven rack to middle position and heat oven to 375 degrees. Whisk 1 1/2 cups apple cider, corn syrup, maple syrup, mustard, vinegar, pepper flakes, 1/8 teaspoon salt, and 1/8 teaspoon pepper together in medium bowl. Place flour in pie plate, then season chicken on both sides with salt and pepper. Working with one chicken breast at a time, coat chicken with flour, patting off excess.
  • Heat oil in ovenproof 12-inch skillet over medium heat until shimmering. Add chicken breasts skin-side down; cook until well browned and most of fat has rendered from skin, 8 to 14 minutes. (If after 3 minutes you don't hear definite sizzling, increase heat to medium-high. If after 6 minutes chicken is darker than lightly browned, reduce heat slightly.) Turn chicken and lightly brown other side, about 5 minutes longer. Transfer chicken to plate.
  • Pour off all but 1 teaspoon fat from pan. Add shallot and cook until softened, 1 to 2 minutes. Increase heat to high and add orange juice mixture. Simmer, stirring occasionally, until syrupy and reduced to 1 cup (heatproof spatula should leave slight trail when dragged through glaze), 6 to 10 minutes. Remove skillet from heat and tilt to one side so glaze pools in corner of pan. Using tongs, roll each chicken breast in pooled glaze to coat evenly and place skin-side down in skillet.
  • Transfer skillet to oven and bake chicken until thickest part of breasts registers 160 degrees on instant-read thermometer, 25 to 30 minutes, turning chicken skin-side up halfway through cooking. Transfer chicken to platter and let rest 5 minutes. Return skillet to high heat (be careful-handle will be very hot) and cook glaze, stirring constantly, until thick and syrupy (heatproof spatula should leave wide trail when dragged through glaze), about 1 minute. Remove pan from heat and whisk in remaining 2 tablespoons apple cider. Spoon 1 teaspoon glaze over each breast and serve, passing remaining glaze at table.

1/2 cup onion, chopped
1/2 cup maple syrup
1/2 cup ketchup
1/4 cup Bourbon or 1/4 cup whiskey
1 teaspoon hot sauce (optional)
1/2 cup mayonnaise
2 1/2-3 lbs chicken

Steps:

  • In medium saucepan, heat oil over medium-high heat and cook onion, stirring occasionally, 5 minutes or until golden.
  • Add maple syrup, ketchup, bourbon and hot sauce. Bring to boil; reduce heat and simmer 5 minutes or until sauce is reduced by 1/4 cup. Remove from heat.
  • Whisk in mayonnaise until smooth.
  • Grill chicken, turning once and brushing frequently with mayonnaise mixture. Cook until chicken is done and juices run clear.

4 boneless skinless chicken breasts (I use 8 chicken thighs)
1/4 cup plain flour, seasoned with
salt and pepper
2 tablespoons olive oil
3 tablespoons maple syrup
1 tablespoon whole grain mustard
1 grated orange, zest of
1 orange, juice of
1 tablespoon soy sauce

Steps:

  • Pick any visible fat from off the chicken and wash and dry.
  • Dredge the pieces of chicken in the seasoned flour, patting to remove excess flour.
  • Heat the olive oil in a large skillet.
  • Pan fry the chicken, presentation side first, in the hot olive oil until nicely browned on both sides.
  • While the chicken is browning, combine the remaining ingredients in a measuring cup.
  • Remove the browned chicken from the pan and place in a shallow casserole dish.
  • Add the sauce ingredients, scraping to deglaze the pan, then pour over the chicken in the dish.
  • Bake in a 350*F oven for 20 minutes until nicely glazed and the chicken is cooked through.

0.5 (25 1/2 ounce) package of tyson's frozen chicken breast tenders
1 tablespoon butter
2 tablespoons onions, finely chopped
1/4 cup pure maple syrup
1 tablespoon ground mustard

Steps:

  • Prepare the chicken tenders in the oven as directed, on a foil lined baking sheet.
  • Meanwhile, melt the butter in a medium skillet and cook the onions until soft.
  • Blend in the syrup and the mustard.
  • Cook to a simmer for 1 minute and remove from heat.
  • Add the cooked chicken tenders to the skillet and stir to coat.
  • Spreak glazed chicken back onto the baking sheet and cook 5-8 minutes longer until the sauce is set.
