Here's what you need: olive oil, skirt steak, salt, pepper, onion, green bell pepper, large flour tortillas, provolone cheese, fresh parsley, cheese sauce

Yield 2 quesadillas

Number Of Ingredients 10

1 tablespoon olive oil
½ lb skirt steak, sliced into thin strips
salt, to taste
pepper, to taste
¼ cup onion, julienned
¼ cup green bell pepper, julienned
2 large flour tortillas
4 slices provolone cheese, double for 2 quesadillas
fresh parsley
1 cup cheese sauce

Steps:

  • Heat olive oil in a large skillet and add the strips of skirt steak. Season with salt & pepper and cook 5-7 minutes. Remove from the pan.
  • Add onion and bell peppers to the pan and cook until slightly soft. Remove from skillet.
  • Place the tortilla in the pan and add a layer of cheese on half of the tortilla followed by the steak, peppers and onions. Top with more cheese and fold in half.
  • Cook for 6 minutes over medium heat, flipping half way.
  • Serve with cheese sauce and garnish fresh parsley.
  • Enjoy!

½ lb chicken breast, cut into thin strips
½ teaspoon salt
½ teaspoon pepper
½ tablespoon chili powder
½ teaspoon cumin
¼ teaspoon cayenne
¼ teaspoon garlic powder
½ cup bell pepper, green, red, or yellow peppers, julienned
½ cup white onion, julienned
2 large flour tortillas
1 cup shredded cheddar cheese, double for 2 quesadillas
1 cup shredded monterey jack cheese, double for 2 quesadillas
fresh cilantro
guacamole
sour cream
pico de gallo, or salsa

Steps:

  • In a large skillet, coat chicken with salt, pepper, chili powder, cumin, cayenne, and garlic powder. Cook 5-7 minutes.
  • Add the peppers and onions and cook for 5-7 minutes, or until they are soft. Remove chicken, onions and peppers from the pan and set aside.
  • Place the tortilla in the skillet and add a layer of cheese on half of the tortilla.
  • Add cooked chicken, peppers and onions. Top with more cheese and fold the tortilla in half.
  • Cook for 6 minutes over medium heat, flipping half way.
  • Garnish with fresh cilantro and serve with pico de gallo, guacamole, and sour cream on the side.

Steps:

2 flour tortillas (6 inches)
1/2 cup shredded cheddar cheese, divided
1/2 cup cubed cooked chicken, turkey, pork or beef
1/4 cup sliced fresh mushrooms
1/2 cup shredded Monterey Jack cheese, divided
Sour cream and salsa, optional

2 flour tortillas, 12 inches (30 cm)
nonstick cooking spray, for greasing
2 ½ cups shredded mexican cheese blend, divided
1 ½ teaspoons Tasty Savoury Spice Blend, divided
1 cup refried beans
¼ cup red onion, thinly sliced
2 tablespoons pickled jalapenos, thinly sliced
2 tablespoons pitted black olives, sliced
2 tablespoons salsa
2 tablespoons sour cream, thinned with water or milk

Steps:

  • Lightly spray a tortilla on both sides with nonstick spray. Transfer the tortilla to a microwave-safe plate and microwave for 90 seconds on high power. Flip the tortilla over and microwave for another 30 seconds. Repeat with the other tortilla.
  • Lay one of the crispy tortillas on the plate and sprinkle with shredded cheese and 1 teaspoon savory spice blend. Cover with the second tortilla.
  • Spread the refried beans evenly over the top tortilla. Sprinkle with the remaining cup of cheese. Top with the red onion, pickled jalapeño, black olives, and remaining ½ teaspoon of savoury spice blend.
  • Return to the microwave and cook for 4-5 minutes on high power, until the cheese is melted and the pizza is warmed through.
  • Carefully remove the pizza from the microwave (the plate will be hot!) and dollop the salsa and sour cream on top. Slice and serve.
