- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10-cup Bundt pan.
- Mix white sugar, flour, 3/4 cup cinnamon, and 3 tablespoons non-dairy butter together in a stand mixer until well blended. Transfer to a bowl.
- Mix 1 cup brown sugar, 2 tablespoons cinnamon, cocoa powder, and 1/4 teaspoon salt together in a stand mixer until well blended. Transfer to a separate bowl.
- Measure 1 1/2 cups Lactaid® milk in a 2-cup measuring cup. Stir in lemon juice and cream of tartar.
- Mix cottage cheese, 1 1/2 cups white sugar, and 1/3 cup brown sugar together in a stand mixer. Whip until mixture is smooth and creamy. Add non-dairy butter or margarine and whip until smooth. Add eggs one at a time, beating well before adding the next one. Mix in vanilla and maple extracts and salt. Mix in 2 cups flour.
- Pour milk mixture into the mixer; mix well. Add remaining 2 cups flour and baking powder; blend well.
- Pour 1/3 of batter in prepared Bundt pan. Top with 1/2 of the swirl mixture.
- Pour another 1/3 of the batter over the filling. Top with remaining swirl mixture. Evenly pour in remaining batter.
- Gently swirl the batter with a knife being careful not to overdo the swirl. Top the batter with the cinnamon topping.
- Bake in preheated oven until a toothpick inserted in the center comes out clean, 60 to 90 minutes. Cool and remove from pan.

- Lightly grease 10" tube pan.
- STREUSEL: In a medium bowl, combine the brown sugar, flour, butter, and cinnamon with a fork until crumbly.
- Stir in the walnuts.
- POUNDCAKE: Using an electric mixer on high speed, cream together the butter, pancake syrup, brown sugar, vanilla, baking powder, baking soda, and salt in a large bowl until well blended (the mixture will look curdled).

- Grease an 11 by 7 by 2-inch rectangular pan with the teaspoon of butter. In a saucepan, combine the raspberries, 1/2 cup of the sugar and lemon juice. - Cream together butter and sugar till fluffy. Beat in eggs then sour cream and vanilla. In separate bowl stir together flour, baking powder and soda and salt. Stir into creamed mixture. For the topping stir all ingredients together in a small bowl and mix well. Grease an angel food pan well with butter. Pour half of batter mixture into pan and smooth out surface. Using a tablespoon drop dollops of topping mix over batter till half of topping is used. Pour remaining batter over mix and top with dollops of remaining topping. Bake in a pre-heated oven at 350F for 50 to 60 minutes, check with a toothpick.

- In a small saucepan, combine water and butter for the dough. Heat until very warm (and butter is melted), to about 120-130 degree F. In a large mixing bowl, add 1 cup of the flour, yeast, sugar, and salt. Add water mixture and blend together. Add in the cinnamon, nutmeg, maple and egg. Mix until well combined.
- Add remaining 1 cup of flour and beat for about 2 minutes, scraping sides of bowl as needed. Pour dough into a greased 8x8-inch baking pan. Cover with a clean, dry towel and let rise in a warm place until doubled in size (about 45 minutes). While dough is rising, combine streusel ingredients with a pastry blender or your hands, until very crumbly. Set aside.
- When dough is ready, sprinkle streusel evenly over the top. Bake in a preheated 350 degree F oven for about 35 minutes, until golden brown. Cool slightly on wire rack. While cooling, prepare glaze. - For the cake, beat butter with sugar for 3 minutes. Add eggs and vanilla, beat until combined. Add bananas and beat until mashed (I toss mine in whole, but you can mash them first if you prefer). Add flour, baking soda, baking powder and salt until combined. Beat in nuts and skim milk. Pour batter into two 9inch round cake pans that have been greased generously. In a small bowl, mix streusel topping ingredients together. I use my hands to break up the butter and mix it with the other ingredients. Mix until it forms crumbs. Divide topping evenly between the two cakes, sprinkling on the top. Bake in a 350 degree oven for 25 minutes. Remove and cool on a wire rack for 10 minutes. Remove from pans and cool on rack completely before adding glaze. For the glaze, beat powdered sugar with maple syrup until desired consistency. Drizzle over cakes. Store in airtight container.
MAPLE NUT COFFEE CAKE
My mother always told me imitation was a fine form of flattery. And now I've figured out an even finer form - when someone bakes your recipes and then feels comfortable enough with them to change up the ingredients to suit their own tastes. That's what Betty Minton of Princeton, WV, did after she baked one of my favorite coffee cakes - Kathy's Cinnamon Breakfast Cake. Betty was thinking maple, and there is maple flavoring in both the cake and the glaze, turning this decidedly wonderful cake into something extraordinary. It's that cake to take to brunch, to the office, the potluck, the bake sale. It's good after dinner or before lunch, with a cup of coffee or a cold glass of milk. - Prep: 20 minutes Bake: 45-50 minutes
- Preheat the oven to 350 degrees F.
- For the filling, place the brown sugar, cinnamon, and chopped nuts in a small bowl and stir combine. Set the mixture aside.
- Mist a Bundt pan with vegetable oil spray and dust with flour.
- Place the cake mix, pudding mix, oil, water, eggs, and maple flavoring in a large mixing bowl. Blend with an electric mixer on low speed until the ingredients are just combined. Stop the machine and scrape the sides of the bowl. Increase the mixer to medium speed and beat for 1½ minutes or until the batter is smooth. Spoon a third of the batter into the prepared pan. Sprinkle with half of the filling. Pour over another third of the batter, and sprinkle with the remaining filling. Pour over the remaining batter, and smooth the top. Place the pan in the oven.
- Bake the cake until it springs back when lightly pressed in the center, 45 to 50 minutes. Remove the pan to a wire rack to cool 10 minutes.
- While the cake cools, prepare the glaze. Place the confectioners' sugar in a small bowl and stir in the milk and maple flavoring. Set the glaze aside.
- Invert the cake onto a rack to completely cool, 30 to 40 minutes. Spoon the glaze over the cooled cake, and press nuts into the top of the cake, if desired.
