MAPLE-GLAZED CHICKEN WINGS
Some wonderful maple syrup I brought back from my last trip to Vermont inspired my recipe. These wings have been a hit with family and friends. They're very versatile-use them for TV snacks, hors d'oeuvres for parties or showers, or appetizers-or double or triple the recipe and make the wings a main dish you can serve with a salad or corn on the cob on the side. -Janice Henck, Clarkston, Georgia

- Cut chicken wings into three sections; discard wing tip section. In a large resealable plastic bag, combine remaining ingredients. Set aside 1 cup for basting and refrigerate. Add chicken to remaining marinade. Seal bag and turn to coat; refrigerate for 4 hours, turning occasionally., Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill chicken, covered, over medium heat or broil 4 in. from the heat for 12-16 minutes, turning occasionally. Brush with reserved marinade. Grill or broil, uncovered, for 8-10 minutes or until juices run clear, basting and turning several times.

- Preheat oven to 350 degrees F.
- Cut off chicken wing tips and snip the skin between the joints. Place in disposable large baking pan. Add the maple syrup, soy sauce, teriyaki sauce, garlic, garlic powder, onion powder, and black pepper, toss to coat.
- Place pan on baking sheet and bake for approximately 1 hours, tossing every 15 to 20 minutes. The liquid will gradually evaporate the longer you cook it.
- After 1 hour, increase the oven temperature to 425 degrees F. Turn wings to coat evenly and cook an additional 45 minutes.

- Preheat oven to 425°. Line two 15x10x1-in. baking pans with foil and coat with cooking spray; set aside. , Using a sharp knife, cut through the 2 wing joints; discard wing tips. I found this recipe on Food Network. I have not made it yet but wanted to post it so I would have the recipe readily available when the time is right. It sounds like it would be very good. EDITED 2/7/10: I was trying different wing recipes to serve for the Super Bowl this year and realized I had never made this one so I whipped up a batch. It is a "WINNER"! I'm making a triple batch to serve on Super Bowl Sunday.

- Heat a saucepan over medium heat and cook the bacon until nearly crisp. Add the garlic and cook until the garlic is lightly browned, 1 to 2 minutes. Whisk in the ketchup, maple syrup, applesauce, soy sauce, apple cider vinegar and brown sugar. Reduce heat to low and simmer the sauce for about 1 to 2 minutes or until thickened. Set aside. Rinse the chicken wings and pat them dry. Generously season the chicken with salt and black pepper. Dredge the wings in flour, shaking off any excess flour, and set aside. In a large saucepan or deep fryer, heat the oil to about 375°. Fry the chicken wings in small batches until golden brown, 8 to 10 minutes. Shake off any excess oil and place on paper towels to drain. Continue frying the chicken in batches until all of the wings are cooked. Toss chicken wings with maple-bacon sauce and serve warm.
